Óleo de Abacate

Sobre Óleos Botânicos

O uso de óleos botânicos pode ser rastreado há milhares de anos, com raízes em culturas tão diversas quanto os antigos sumérios, chineses e o Império Romano.[1] Óleos botânicos são preparados a partir da planta inteira, preservando seu aroma, principais ingredientes ativos e a essência da planta. Óleos botânicos feitos de várias plantas foram usados ao longo da história para honrar deuses,[2] preparar corpos para funerais,[3] preservar a beleza, ajudar na higiene e tratar uma ampla variedade de condições médicas. Instruções para a preparação e uso de plantas como remédio estão catalogadas nas obras de Dioscórides, De materia medica[4], lá no primeiro século.

A tecnologia moderna permitiu identificar e estudar as partes ativas das plantas por seu papel na saúde e sua utilidade contra várias condições médicas. O valor dos óleos botânicos resistiu ao teste do tempo.

As Propriedades do Abacate

História

O abacate foi cultivado pela primeira vez no sul do México, apreciado pelos nativos americanos e cultivado pelos astecas. Sementes de abacate, determinadas como tendo 10.000 anos, foram encontradas em cavernas ao sul da Cidade do México. Ao longo do século XVI, exploradores espanhóis na América do Sul e Central fizeram referência a essas estranhas “peras” cuja parte comestível é “uma pasta semelhante à manteiga” e notaram a compatibilidade do abacate com queijo.[5]

O abacate, cujo nome botânico é Persea Americana, é membro da família Lauraceae ou família do louro, junto com canela e folhas de louro. Todos os membros dessa família possuem uma parte lenhosa, facilmente notada na semente dura no centro do abacate. Embora estejamos mais familiarizados com o Abacate Hass, existem pelo menos 80 variedades de abacate. Plantas de abacate foram plantadas na Flórida e na Califórnia em 1850[6]. Hoje, aproximadamente 90 por cento do mercado de abacate dos EUA e 10 por cento do mercado mundial de abacate são produzidos na Califórnia.[7]

A Semente

O caroço duro no centro do abacate não é amplamente considerado comestível, mas é rico em antioxidantes e potássio. A casca e a semente geralmente são descartadas quando os óleos ou a fruta são preparados comercialmente. Em um esforço para minimizar o desperdício, são feitos extratos da casca e das sementes ricas em polifenóis. Esses extratos são adicionados a óleos e à carne de hambúrguer para prevenir a oxidação, prolongando sua vida útil.[8]

Comer sementes de abacate não é prejudicial aos humanos, exceto pela dificuldade mecânica de mastigar uma semente tão lenhosa. Existem entusiastas do abacate que defendem triturar a semente e adicioná-la a smoothies, mingaus ou outros alimentos.[9] A suposição de que a presença de polifenóis na semente significa que eles saem simplesmente ao bater é enganosa. Os antioxidantes presentes no material denso da casca e da semente do abacate são obtidos por meio de um processo de extração que está além da capacidade de um liquidificador.

Nutrientes

O abacate é extremamente denso em nutrientes, e pessoas que o consomem têm menos probabilidade de apresentar deficiências nutricionais comuns do que a maioria dos americanos. Uma porção típica é metade de um abacate, e ela fornece uma rica variedade de nutrientes. Cada metade de um abacate contém 4,6g de fibra, muito pouco açúcar (0,2g) e muita água, tornando-o um lanche ideal para diabéticos. Junto com seu rico conteúdo de ácidos graxos, o alto teor de fibras e água cria um alimento que satisfaz a fome por mais tempo.[10] e melhora a perda de peso.[11]

O abacate é rico em ácidos graxos monoinsaturados benéficos (MUFAs, 71%), alguns ácidos graxos poli-insaturados (PUFAs, 13%) e gorduras saturadas (16%). Não contém colesterol. A pequena quantidade de gordura saturada no abacate na verdade diminui à medida que amadurece, convertendo-se em mais ácido oleico, o principal MUFA nos abacates.[12] Os ácidos graxos monoinsaturados são líquidos à temperatura ambiente, então você pode notar esse processo por si mesmo à medida que o fruto se torna mais maleável com o tempo.

Além dos ácidos graxos, os abacates contêm o dobro de potássio encontrado nas bananas, muito pouco sódio, lecitina e grandes quantidades de várias outras vitaminas e minerais, incluindo magnésio, vitaminas A, C, E e K1, vitaminas do complexo B folato, B2, B3, B5 e B6, colina, antioxidantes como luteína/zeaxantina e criptoxantina e fitoesteróis. É o único alimento vegetal que é rico tanto em vitamina C (um antioxidante solúvel em água) quanto em vitamina E (um antioxidante solúvel em gordura).[13]

Além do benefício nutricional que o próprio abacate traz à dieta, o uso de abacates ou óleo de abacate em uma salada realmente aumenta a absorção de outros antioxidantes, especialmente o caroteno.[14] Adicione abacate às refeições com cenouras, salsa, espinafre e outros alimentos ricos em caroteno para obter o máximo benefício.

Aumente o conteúdo de fitonutrientes do seu lanche de abacate comendo a camada verde escura encontrada ao longo da casca e da semente ricas em nutrientes. Use o método “corte e descasque” sugerido pela California Avocado Association:

1) Corte o abacate ao meio no sentido do comprimento, até a semente.

2) Corte o abacate ao meio no sentido do comprimento novamente, criando 4 quartos longos.

3) Gire o abacate nas mãos para separar os quartos.

4) Retire a semente delicadamente com os dedos.

5) Descasque o fruto delicadamente deslizando o polegar sob a casca para começar, e depois puxando a casca para fora do fruto.[15]

Preparação do Óleo de Abacate

O óleo de abacate é feito a partir do fruto do abacate maduro. Mais óleo é extraído do fruto que está além do ponto máximo de maturação, mas se estiver podre quando processado, o óleo coletado terá um cheiro desagradável.[16] A casca e a semente são removidas antes do processamento.[17] Existem muitas sugestões de como fazer óleo de abacate em casa,[18] mas eles frequentemente usam creme de coco como parte do processo. Embora seja removido por coagem no final, não é óleo puro de abacate.

Extração Mecânica

A fruta do abacate, uma vez separada da casca e da semente, é prensada mecanicamente ou moída até virar polpa. Depois é “malaxada” ou deixada em repouso para permitir que o óleo forme grandes gotas, por 40 a 60 minutos. A polpa é então removida por centrifugação, deixando um óleo verde brilhante. A cor verde vem do alto teor de clorofila.[19] A água sai da polpa junto com o óleo, então o óleo, que flutua na água, é permitido fluir por buracos no tambor de coleta. O óleo bruto resultante é um pouco espesso. Se processado adicionalmente, o óleo refinado resultante será mais suave e de cor mais clara.[20]

Extração por Destilação

A extração por destilação significa expor a planta à água ou vapor para quebrar o material vegetal e liberar o óleo essencial. Os óleos são resfriados e condensados para coleta.[21]

A destilação a vapor é usada para extrair os constituintes ativos da casca e da semente do abacate. Os óleos, que são valiosos por suas propriedades antimicrobianas e capacidade antioxidante,[22] são efetivamente removidos simplesmente usando destilação a vapor. Esses óleos, que são pouco solúveis em água, têm afinidade pelo etanol e um rendimento maior desses óleos é possível se for usado etanol anidro.[23]

Usos Medicinais do Óleo de Abacate

Óleos botânicos são base para muitos cosméticos e medicamentos tópicos. A melhor absorção ocorre quando as plantas têm muito ácido oleico, um ácido graxo monoinsaturado presente em abundância no abacate, e gorduras saturadas com longas cadeias de carbono, como o ácido esteárico presente no abacate.[24]

Usos na Medicina Ayurvédica e Chinesa

Na medicina ayurvédica, o sistema tradicional de medicina da Índia, os ricos óleos do abacate são valorizados como aterradores e nutritivos. É um alimento recomendado na medicina ayurvédica para uso nas estações secas do outono e inverno, e para apoiar a má digestão, saúde das articulações, vitalidade essencial e condições da pele.[25]

Na medicina tradicional chinesa, o abacate é usado para tratar o trato gastrointestinal e os pulmões. Ele lubrifica o cólon para tratar constipação e úlceras estomacais. O abacate também umedece os pulmões para tratar tosses crônicas. Os óleos são considerados nutritivos para o Yin e, portanto, protetores do corpo envelhecido.[26]

Queimaduras e Cicatrizes

O ácido esteárico, a gordura saturada do óleo de abacate, é antiviral e anti-inflamatório. Foi demonstrado que é eficaz no tratamento de queimaduras químicas, diminuindo a vermelhidão e a irritação da queimadura.[27] Não há estudos que demonstrem esse efeito em humanos, mas há evidências de testes feitos em ratos de que componentes do abacate,[28] combinado com componentes semelhantes da soja, melhorou a cicatrização de feridas.[29] O componente é chamado de insaponificável, o que significa óleos que mantêm suas propriedades e não se misturam para formar sabão.[30]

Osteoartrite

A parte insaponificável do abacate é a fração que não pode ser transformada em sabão. Ela contém muitas vitaminas lipossolúveis e fitosteróis. Os insaponificáveis do abacate, quando combinados com os insaponificáveis da soja (juntos abreviados como ASU), são muito eficazes no tratamento da osteoartrite, uma condição dolorosa das articulações. Foi demonstrado que o ASU reduz a dor e a inflamação nas articulações, diminuindo a necessidade de medicamentos, que carregam o risco de efeitos colaterais graves. Mais impressionante, esses componentes vegetais previnem a progressão da osteoartrite, algo que apenas a medicação para dor não consegue fazer.[31]

Anti-Envelhecimento

O óleo de abacate é verde e bastante espesso, tornando-o menos desejável como óleo de massagem. No entanto, sua capacidade de penetrar profundamente na pele, combinada com o rico perfil nutricional do óleo de abacate, faz dele uma escolha popular para anti-envelhecimento. As vitaminas A, D e E, todas abundantes no óleo de abacate, hidratam a pele seca. Seu rico perfil antioxidante combinado com o alto teor de gordura trabalha para restaurar o colágeno e a elasticidade da pele.[32]

Os efeitos anti-envelhecimento também foram encontrados ao consumir abacates. O rico conteúdo antioxidante dos abacates ajuda a reparar o DNA, revertendo os efeitos da radiação ionizante e retardando o processo de envelhecimento.[33]

Infecções

Os caroços foram estudados por sua atividade antimicrobiana. À medida que mais organismos mostram resistência aos antimicrobianos farmacêuticos, o interesse por materiais vegetais está aumentando. Foi demonstrado que as sementes de abacate são eficazes contra várias cepas de Candida, E. Coli, Staph aureus e Staphylococcus aureus resistente à meticilina (MRSA).[34]

Saúde Cardiovascular

Embora seja muito rico em gordura, o óleo de abacate é rico em ácido oleico monoinsaturado, junto com beta-sitosterol, e não contém açúcar. O baixo teor de açúcar do abacate ajuda a estabilizar o açúcar no sangue em pacientes com diabetes mellitus não dependente de insulina.[35]

Os esteróis vegetais são usados para ajudar a reduzir o colesterol. São necessários estudos clínicos melhores para determinar se os abacates previnem mortes por doenças cardíacas, mas foi demonstrado que uma dieta rica em abacate melhora os fatores de risco para doenças cardíacas. Foi comprovado que os abacates reduzem o colesterol total enquanto preservam[36] ou aumentando o HDL e diminuindo o LDL, o “colesterol ruim.”[37]

A principal gordura saturada no abacate é o ácido esteárico, uma gordura de 16 carbonos. O ácido esteárico, quando ingerido, é a gordura comum menos absorvida, então a maior parte dele passa pelo trato gastrointestinal. Quando encontrado na corrente sanguínea, ele não se converte em triglicerídeos, que são bem reconhecidos como contribuintes para doenças cardíacas. O fígado rapidamente converte o ácido esteárico na corrente sanguínea em ácido oleico, uma gordura insaturada.[38]

Prevenção do Câncer

Além de ser reconhecido como um alimento superbamente denso em nutrientes, o abacate[39] está sendo estudado para possível eficácia contra o câncer. Vários fitoquímicos bioativos extraídos do abacate mostraram promessa no combate a cânceres que vão desde cânceres de cabeça e pescoço até câncer de próstata.[40] Persina, um agente antifúngico presente em pequenas doses na casca e na semente do abacate, pode ser eficaz no tratamento do câncer de mama.[41]

Psoríase

Quando combinado com vitamina B12 em um creme tópico, o óleo de abacate mostrou ser eficaz no manejo da psoríase em placas crônica. Foi consistentemente eficaz no controle dos sintomas sem efeitos colaterais e sem perda de eficácia durante um teste de 12 semanas.[42]

Usos Tradicionais

Exploradores espanhóis observaram o cultivo do abacate pelos astecas e notaram a semelhança do abacate com um testículo. A palavra espanhola para abacate é ahuacate, que era a palavra asteca para testículo.[43] Na época, acreditava-se que plantas que se assemelhavam a partes do corpo melhorariam a função daquela parte, então acreditavam que o abacate serviria como afrodisíaco e aumentaria a virilidade masculina.[44]

O óleo de abacate também é popular para preparações com óleos essenciais. O óleo tem um cheiro suave,[45] para que não sobreponha os óleos essenciais que podem ser adicionados a ele.

Perguntas sobre óleo de abacate

O que devo procurar em um óleo de abacate?

O óleo de amêndoas prensado a frio e não refinado terá o melhor perfil de nutrientes e gorduras. O óleo de abacate é verde quando extraído, mas rapidamente fica marrom claro. Se um óleo de abacate estiver verde brilhante, provavelmente foi alterado ou tingido com corantes.

Se eu sou alérgico ao látex, posso usar óleo de abacate?

Se você tem alergia ao látex, ou se não tem certeza se tem alergia ao látex, o óleo de abacate deve ser evitado, mesmo como agente tópico. A reação IgE que ocorre quando alguém tem alergia ao látex parece causar uma reação cruzada com certos alimentos, incluindo abacates, assim como bananas e kiwi.[46]

É seguro usar óleo de abacate com crianças?

Se seu filho tem alergia ao látex ou se você não tem certeza se ele tem alergia ao látex, o óleo de abacate deve ser evitado, mesmo como agente tópico. O sabor do óleo em si pode não agradar às crianças, mas as gorduras contidas no abacate são um excelente suporte para o sistema nervoso em desenvolvimento delas. Abacates inteiros são frequentemente amassados como o primeiro alimento sólido do bebê ou adicionados a smoothies para dar uma consistência cremosa, carregada de nutrientes.

Posso cozinhar com óleo de abacate?

O óleo de abacate é uma joia pouco valorizada para cozinhar. Rico em nutrientes e estável em altas temperaturas (mais do que o azeite de oliva),[47] é uma forma de proteger seu coração ao fritar e uma ótima opção para refogar também.[48] Ele tem um sabor amargo quando aquecido,[49] portanto, ajustes na receita podem ser necessários para melhorar a palatabilidade.

Qual é o prazo de validade do óleo de abacate?

Mantido sob condições adequadas de armazenamento, o óleo de abacate dura cerca de 1 ano. Vitamina E pode ser adicionada em concentração de 1 por cento para ajudar a prolongar a vida útil.[50]

O óleo de abacate é um bom protetor solar?

Muitos sites afirmam que o óleo de abacate é eficaz como protetor solar, porém não há evidências que sustentem essa afirmação. Embora o óleo de abacate penetre na pele e contenha muitos antioxidantes, o único estudo que o examinou como protetor solar usou o óleo de abacate como base para octil metoxicinato e dióxido de titânio.[51] Sempre use um protetor solar com FPS garantido.

Vou ganhar peso pelas calorias do óleo de abacate?

A maioria dos estudos mostra que a perda de peso é resultado do abacate na dieta. Como um alimento denso em nutrientes, ele pode ajudar você a se sentir satisfeito mais rápido, substituindo alimentos com maior teor de carboidratos que são, no geral, menos nutritivos.[52][53]

Cuidados e Considerações

A reação alérgica IgE que ocorre em pessoas com alergia a látex parece causar uma reação cruzada com certos alimentos, incluindo abacates, assim como bananas e kiwi.[54] Evite abacates se você tem alergia a látex até conversar com seu médico.

Persina é o componente tóxico da casca e das sementes do abacate. Parece ser geralmente seguro para cães comerem, mas outros animais domésticos ou de fazenda, incluindo gado, cabras, cavalos, camundongos, coelhos, porquinhos-da-índia, ratos, ovelhas, periquitos, canários, calopsitas, avestruzes, galinhas, perus e peixes, podem desenvolver complicações sérias ao comer abacates.[55]
