Aceite de aguacate

Acerca de los Aceites Botánicos

El uso de aceites botánicos se remonta a miles de años, con raíces en culturas tan diversas como los antiguos sumerios, chinos y el Imperio Romano.[1] Los aceites botánicos se preparan a partir de la planta entera, preservando su aroma, ingredientes activos principales y la esencia de la planta. Los aceites botánicos hechos de varias plantas se han usado a lo largo de la historia para honrar a los dioses,[2] preparar cuerpos para funerales,[3] preservar la belleza, ayudar con la higiene y tratar una amplia variedad de condiciones médicas. Las instrucciones para la preparación y uso de plantas como medicina están catalogadas en las obras de Dioscórides, De materia medica[4], ya en el primer siglo.

La tecnología moderna ha permitido identificar y estudiar las partes activas de las plantas por su papel en la salud y su utilidad contra diversas condiciones médicas. El valor de los aceites botánicos ha resistido la prueba del tiempo.

Las Propiedades Del Aguacate

Historia

El aguacate se cultivó por primera vez en el sur de México, disfrutado por los nativos americanos y cultivado por los aztecas. Se han encontrado semillas de aguacate, determinadas con una antigüedad de 10,000 años, en cuevas al sur de la Ciudad de México. A lo largo del siglo XVI, los exploradores españoles en América del Sur y Central hicieron referencia a estas extrañas “peras” cuya parte comestible es “una pasta similar a la mantequilla” y notaron la compatibilidad del aguacate con el queso.[5]

El aguacate, cuyo nombre botánico es Persea Americana, es miembro de la familia Lauraceae o laurel, junto con la canela y las hojas de laurel. Todos los miembros de esta familia tienen una parte leñosa, fácilmente reconocible en la dura semilla en el centro del aguacate. Aunque estamos más familiarizados con el Aguacate Hass, existen al menos 80 variedades de aguacate. Las plantas de aguacate se plantaron en Florida y California en 1850[6]. Hoy en día, aproximadamente el 90 por ciento del mercado de aguacate de EE. UU. y el 10 por ciento del mercado mundial de aguacate se produce en California.[7]

La Semilla

El hueso duro en el centro del aguacate no se considera ampliamente comestible, pero es rico en antioxidantes y potasio. La piel y la semilla suelen desecharse cuando se preparan aceites o la fruta comercialmente. En un esfuerzo por minimizar el desperdicio, se elaboran extractos a partir de la piel y las semillas ricas en polifenoles. Estos extractos se añaden a los aceites y a la carne de hamburguesa para prevenir la oxidación, prolongando su vida útil.[8]

Comer semillas de aguacate no es perjudicial para los humanos, excepto por la dificultad mecánica de masticar una semilla tan leñosa. Hay entusiastas del aguacate que recomiendan triturar la semilla y añadirla a batidos, avena u otros alimentos.[9] La suposición de que la presencia de polifenoles en la semilla significa que se liberan simplemente al licuar es engañosa. Los antioxidantes presentes en el material denso de la piel y la semilla del aguacate se obtienen mediante un proceso de extracción que está más allá de la capacidad de una licuadora.

Nutrientes

El aguacate es extremadamente denso en nutrientes, y las personas que lo consumen tienen menos probabilidades de tener deficiencias nutricionales comunes que la mayoría de los estadounidenses. Una porción típica es la mitad de un aguacate, y proporciona una rica variedad de nutrientes. Cada mitad de aguacate contiene 4.6g de fibra, muy poca azúcar (0.2g) y mucha agua, lo que lo convierte en un snack ideal para diabéticos. Junto con su rico contenido de ácidos grasos, el alto contenido de fibra y agua crea un alimento que satisface el hambre por más tiempo.[10] y mejora la pérdida de peso.[11]

El aguacate es rico en ácidos grasos monoinsaturados beneficiosos (MUFAs, 71 por ciento), algunos ácidos grasos poliinsaturados (PUFAs, 13 por ciento) y grasas saturadas (16 por ciento). No contiene colesterol. La pequeña cantidad de grasa saturada en el aguacate en realidad disminuye a medida que madura, convirtiéndose en más ácido oleico, el MUFA principal en los aguacates.[12] Los ácidos grasos monoinsaturados son líquidos a temperatura ambiente, por lo que puedes notar este proceso tú mismo a medida que la fruta se vuelve más flexible con el tiempo.

Además de ácidos grasos, los aguacates contienen el doble de potasio que los plátanos, muy poca sodio, lecitina y altas cantidades de varias otras vitaminas y minerales, incluyendo magnesio, vitaminas A, C, E y K1, vitaminas B folato, B2, B3, B5 y B6, colina, antioxidantes como luteína/zeaxantina y criptoxantina y fitoesteroles. Es el único alimento vegetal que es alto tanto en vitamina C (un antioxidante soluble en agua) como en vitamina E (un antioxidante soluble en grasa).[13]

Más allá del beneficio nutricional que el aguacate aporta a la dieta, el uso de aguacates o aceite de aguacate en una ensalada realmente aumenta la absorción de otros antioxidantes, especialmente el caroteno.[14] Agrega un aguacate a comidas con zanahorias, salsa, espinacas y otros alimentos ricos en caroteno para obtener el máximo beneficio.

Mejora el contenido de fitonutrientes de tu snack de aguacate comiendo la capa verde oscura que se encuentra junto a la piel y la semilla, ricas en nutrientes. Usa el método de “hacer un corte y pelar” sugerido por la Asociación de Aguacates de California:

1) Corta el aguacate por la mitad a lo largo, hasta la semilla.

2) Corta el aguacate por la mitad a lo largo nuevamente, creando 4 cuartos largos.

3) Gira el aguacate en tus manos para separar los cuartos.

4) Saca la semilla con cuidado con los dedos.

5) Pela la fruta suavemente deslizando el pulgar por debajo de la piel para comenzar, y luego tira de la piel para retirarla del fruto.[15]

Preparación del aceite de aguacate

El aceite de aguacate se obtiene del fruto del aguacate maduro. Se extrae más aceite de la fruta que ha pasado su punto máximo de madurez, pero si está podrida al procesarla, el aceite recogido tiene un olor desagradable.[16] La piel y la semilla se retiran antes de procesar.[17] Hay muchas sugerencias sobre cómo hacer aceite de aguacate en casa,[18] pero a menudo usan crema de coco como parte del proceso. Aunque se elimina mediante colado al final, no es aceite puro de aguacate.

Extracción Mecánica

La fruta del aguacate, una vez separada de su piel y semilla, se prensa mecánicamente o se muele hasta obtener una pulpa. Luego se “malaxea” o se deja reposar para permitir que el aceite forme grandes gotas, durante 40 a 60 minutos. La pulpa se elimina con una centrífuga, dejando un aceite verde brillante. El color verde proviene del alto contenido de clorofila.[19] El agua se separa de la pulpa junto con el aceite, por lo que el aceite, que flota sobre el agua, se deja salir por agujeros en el tambor de recolección. El aceite sin refinar resultante es algo espeso. Si se procesa más, el aceite refinado resultante será más suave y de color más claro.[20]

Extracción por Destilación

La extracción por destilación consiste en exponer una planta al agua o vapor para descomponer el material vegetal y liberar el aceite esencial. Los aceites se enfrían y condensan para su recolección.[21]

La destilación por vapor se usa para extraer los constituyentes activos de la cáscara y la semilla del aguacate. Los aceites, que son valiosos por sus propiedades antimicrobianas y capacidad antioxidante,[22] se eliminan eficazmente simplemente usando destilación por vapor. Estos aceites, que son poco solubles en agua, sí tienen afinidad por el etanol y es posible obtener un mayor rendimiento de estos aceites si se usa etanol anhidro.[23]

Usos Medicinales del Aceite de Aguacate

Los aceites botánicos son la base de muchos cosméticos y productos farmacéuticos tópicos. La mejor absorción ocurre cuando las plantas tienen mucho ácido oleico, un ácido graso monoinsaturado que está presente en abundancia en los aguacates, y grasas saturadas con largas cadenas de carbono, como el ácido esteárico presente en los aguacates.[24]

Usos en la Medicina Ayurvédica y China

En la medicina ayurvédica, el sistema tradicional de medicina de la India, los ricos aceites del aguacate son valorados por ser equilibrantes y nutritivos. Es un alimento recomendado en la medicina ayurvédica para usar en las estaciones secas de otoño e invierno, y para apoyar la mala digestión, la salud articular, la vitalidad esencial y las condiciones de la piel.[25]

En la medicina tradicional china, el aguacate se usa para tratar el tracto gastrointestinal y los pulmones. Lubrica el colon para tratar el estreñimiento y las úlceras estomacales. El aguacate también humedece los pulmones para tratar la tos crónica. Los aceites se consideran nutritivos para el Yin y, por lo tanto, protectores de un cuerpo envejecido.[26]

Quemaduras y Cicatrices

El ácido esteárico, la grasa saturada del aceite de aguacate, es antiviral y antiinflamatorio. Se ha demostrado que es eficaz para tratar quemaduras químicas, disminuyendo el enrojecimiento e irritación de la quemadura.[27] No hay ensayos que demuestren ese efecto en humanos, pero hay evidencia de ensayos realizados en ratas que muestran que componentes del aguacate,[28] combinado con componentes similares de la soja, mejoró la cicatrización de heridas.[29] El componente se llama insaponificable, lo que significa que son aceites que conservan sus propiedades y no se mezclan para crear jabón.[30]

Osteoartritis

La parte insaponificable de un aguacate es la fracción que no puede convertirse en jabón. Contiene muchas vitaminas liposolubles y fitoesteroles. Los insaponificables de aguacate, cuando se combinan con los insaponificables de soja (juntos abreviados como ASU), son muy efectivos para tratar la osteoartritis, una condición dolorosa de las articulaciones. Se ha demostrado que ASU reduce el dolor e inflamación articular, disminuyendo la necesidad de medicamentos, que conllevan el riesgo de efectos secundarios graves. Más impresionante aún, estos componentes vegetales previenen la progresión de la osteoartritis, algo que el medicamento para el dolor por sí solo no puede hacer.[31]

Antienvejecimiento

El aceite de aguacate es verde y bastante espeso, lo que lo hace menos deseable como aceite de masaje. Sin embargo, su capacidad para penetrar profundamente en la piel, junto con el rico perfil nutricional del aceite de aguacate, lo convierte en una opción popular para el antienvejecimiento. Las vitaminas A, D y E, todas abundantes en el aceite de aguacate, hidratan la piel seca. Su rico perfil antioxidante combinado con el alto contenido de grasa trabajan para restaurar el colágeno y la elasticidad de la piel.[32]

También se han encontrado efectos antienvejecimiento al consumir aguacates. El rico contenido antioxidante de los aguacates ayuda a reparar el ADN, revirtiendo los efectos de la radiación ionizante y ralentizando el proceso de envejecimiento.[33]

Infecciones

Se ha estudiado la actividad antimicrobiana de los huesos. A medida que más organismos muestran resistencia a los antimicrobianos farmacéuticos, el interés en el material vegetal está en expansión. Se ha demostrado que las semillas de aguacate son efectivas contra varias cepas de Candida, E. Coli, Staph aureus y Staphylococcus aureus resistente a meticilina (MRSA).[34]

Salud cardiovascular

Aunque es muy alto en grasa, el aceite de aguacate es rico en ácido oleico monoinsaturado, junto con beta-sitosterol, y no contiene azúcar. El bajo contenido de azúcar del aguacate ayuda a estabilizar el azúcar en sangre en pacientes con diabetes mellitus no dependiente de insulina.[35]

Los esteroles vegetales se usan para ayudar a reducir el colesterol. Se necesitan mejores estudios clínicos para determinar si los aguacates previenen muertes por enfermedades cardíacas, pero se ha demostrado que una dieta rica en aguacate mejora los factores de riesgo para enfermedades cardíacas. Se ha demostrado que los aguacates reducen el colesterol total mientras preservan[36] o aumentar el HDL y reducir el LDL, el “colesterol malo.”[37]

La principal grasa saturada en los aguacates es el ácido esteárico, una grasa de 16 carbonos. El ácido esteárico, cuando se consume, es la grasa común que se absorbe peor, por lo que la mayor parte pasa a través del tracto gastrointestinal. Cuando se encuentra en el torrente sanguíneo, no se convierte en triglicéridos, que son bien reconocidos como un factor que contribuye a las enfermedades cardíacas. El hígado convierte rápidamente el esteárico en el torrente sanguíneo en el ácido graso insaturado ácido oleico.[38]

Prevención del cáncer

Además de ser reconocido como un alimento denso en nutrientes, el aguacate[39] se está estudiando por su posible eficacia contra el cáncer. Varios fitoquímicos bioactivos extraídos del aguacate han mostrado promesas en la lucha contra cánceres que van desde los de cabeza y cuello hasta el cáncer de próstata.[40] La persina, un agente antifúngico presente en pequeñas dosis en la piel y semilla del aguacate, puede ser efectiva para tratar el cáncer de mama.[41]

Psoriasis

Cuando se combina con vitamina B12 en una crema tópica, se ha demostrado que el aceite de aguacate es efectivo para manejar la psoriasis en placas crónica. Fue consistentemente efectivo para controlar los síntomas sin efectos secundarios y sin perder eficacia durante un ensayo de 12 semanas.[42]

Usos tradicionales

Los exploradores españoles observaron el cultivo de aguacate por los aztecas y notaron el parecido del aguacate con un testículo. La palabra española para aguacate es ahuacate, que era la palabra azteca para testículo.[43] En ese momento se creía que las plantas que se parecían a partes del cuerpo mejorarían la función de esa parte, por lo que se pensaba que el aguacate serviría como afrodisíaco y aumentaría la virilidad masculina.[44]

El aceite de aguacate también es popular para preparaciones con aceites esenciales. El aceite tiene un aroma suave,[45] para que no domine los aceites esenciales que se le puedan añadir.

Preguntas sobre el aceite de aguacate

¿Qué debo buscar en un aceite de aguacate?

El aceite de almendra sin refinar y prensado en frío contendrá el mejor perfil de nutrientes y grasas. El aceite de aguacate es verde cuando se extrae, pero rápidamente se vuelve marrón pálido. Si un aceite de aguacate es de un verde brillante, probablemente ha sido alterado o teñido con colorantes.

Si soy alérgico al látex, ¿puedo usar aceite de aguacate?

Si tienes alergia al látex, o si no estás seguro de tenerla, se debe evitar el aceite de aguacate, incluso como agente tópico. La reacción IgE que ocurre en personas con alergia al látex parece causar una reacción cruzada con ciertos alimentos, incluidos los aguacates, así como los plátanos y el kiwi.[46]

¿Es seguro usar aceite de aguacate con niños?

Si tu hijo tiene alergia al látex o si no estás seguro de que la tenga, se debe evitar el aceite de aguacate, incluso como agente tópico. El sabor del aceite puede no ser del agrado de los niños, pero las grasas contenidas en el aguacate son un gran apoyo para su sistema nervioso en desarrollo. Los aguacates enteros a menudo se hacen puré como el primer alimento sólido de un bebé o se agregan a batidos para darles una consistencia cremosa, cargada de nutrientes.

¿Puedo cocinar con aceite de aguacate?

El aceite de aguacate es una joya poco valorada para cocinar. Rico en nutrientes y estable a altas temperaturas (más que el aceite de oliva),[47] es una forma de proteger tu corazón al freír y también una excelente opción para saltear.[48] Tiene un sabor amargo cuando se calienta,[49] por lo que pueden ser necesarios ajustes en la receta para mejorar la palatabilidad.

¿Cuál es la vida útil del aceite de aguacate?

Guardado bajo condiciones adecuadas, el aceite de aguacate dura aproximadamente 1 año. Se puede añadir vitamina E a una concentración del 1 por ciento para ayudar a extender su vida útil.[50]

¿Es el aceite de aguacate un buen protector solar?

Muchos sitios afirman que el aceite de aguacate es efectivo como protector solar, sin embargo no hay evidencia que respalde esa afirmación. Aunque el aceite de aguacate penetra la piel y contiene muchos antioxidantes, el único estudio que lo examinó como protector solar usó el aceite de aguacate como base para octil metoxicinamato y dióxido de titanio.[51] Siempre use un protector solar con un FPS garantizado.

¿Voy a aumentar de peso por las calorías del aceite de aguacate?

La mayoría de los estudios muestran que la pérdida de peso es el resultado del aguacate en la dieta. Como alimento denso en nutrientes, puede ayudarle a sentirse lleno más rápido, reemplazando alimentos con mayor contenido de carbohidratos que son en general más bajos en nutrientes.[52][53]

Precauciones y consideraciones

La reacción alérgica IgE que ocurre cuando alguien tiene alergia al látex parece causar una reacción cruzada con ciertos alimentos, incluyendo aguacates, así como plátanos y kiwi.[54] Evite los aguacates si tiene alergia al látex hasta que lo consulte con su médico.

La persina es el componente tóxico de la piel y semillas del aguacate. Parece ser mayormente seguro para que los perros la coman, pero otros animales domésticos o de granja, incluyendo ganado, cabras, caballos, ratones, conejos, cobayas, ratas, ovejas, periquitos, canarios, ninfas, avestruces, pollos, pavos y peces, pueden desarrollar complicaciones graves al comer aguacates.[55]
