Aceite de semilla de albaricoque

Acerca de los Aceites Botánicos

El uso de aceites botánicos se remonta a miles de años, con raíces en culturas tan diversas como los antiguos sumerios, chinos y el Imperio Romano.[1]

Los aceites botánicos se preparan a partir de la planta entera, preservando su aroma, ingredientes activos principales y la esencia de la planta. Los aceites botánicos hechos de diversas plantas se han usado a lo largo de la historia para honrar a los dioses,[2] preparar cuerpos para funerales,[3] preservar la belleza, ayudar con la higiene y tratar una amplia variedad de condiciones médicas. Las instrucciones para la preparación y uso de plantas como medicina están catalogadas en las obras de Dioscórides, De materia medica[4], en el primer siglo. La tecnología moderna ha permitido identificar y estudiar las partes activas de las plantas por su papel en la salud y su utilidad contra diversas condiciones médicas. El valor de los aceites botánicos ha resistido la prueba del tiempo.  

Las Propiedades de los Albaricoques

Aunque el albaricoque es originario del norte de China, su nombre botánico, Prunus armeniaca, le fue dado por los griegos, quienes creían que se cultivaba por primera vez en Armenia. Los romanos llamaron a esta fruta praecocium, que significa “precóz”, porque florecía temprano en la temporada y de este nombre evolucionó “apricot”.[5]

El aceite del hueso de albaricoque es muy similar al de su valioso primo, la almendra. El aceite de albaricoque se usa frecuentemente en lugar del aceite de almendra amarga o se añade al aceite de almendra para moderar el costo de producción, aunque esto puede no estar indicado en la etiqueta.[6]  

 Tipos de Albaricoques

Generalmente, hay albaricoques dulces y albaricoques amargos. Muchas variedades de albaricoques se cultivan por diferentes razones, incluyendo la época del año en que maduran y diferentes propiedades del fruto, como el sabor y la textura.[7]
Albaricoques Dulces y Albaricoques Silvestres
Las variedades cultivadas - principalmente albaricoques dulces y albaricoques silvestres - son generalmente amargas. Tradicionalmente, el sabor de las hojas y semillas se usaba como guía, aunque se ha analizado el contenido de las semillas y se ha encontrado que varía en contenido de grasa y nutrientes entre cultivares.[8]
El aceite de hueso de albaricoque dulce se usa tópicamente como aceite de masaje y como aditivo en jabones y productos para el cuidado de la piel. El aceite de hueso de albaricoque dulce tiene un sabor profundo y a nuez, y el extracto a menudo se añade a las recetas.[9]
El hueso del albaricoque silvestre es amargo y contiene cantidades variables de amigdalina, dependiendo de la variedad,[10] al igual que las semillas de otros miembros de la familia Prunus, incluyendo almendras, cerezas y ciruelas. Cuando la amigdalina se digiere, la interacción con el agua y las bacterias del intestino produce cianuro. Debido a que estos componentes son tóxicos o letales en dosis muy pequeñas, no se deben comer los huesos de albaricoque a menos que hayan sido tostados.[11]  
Nutrientes
El albaricoque se cultiva en todo el mundo por su sabor, valor medicinal y propiedades nutricionales. La fruta contiene carbohidratos, vitaminas A, B1 (tiamina), B3 (niacina), C, E y K, potasio, beta-caroteno y folato.[12][13]
Los huesos, que generalmente no se comen enteros, sino que se usan por sus valiosos aceites, contienen hasta un 22% de proteína dietética. Los huesos se secan y se convierten en harina, que es rica en aminoácidos esenciales y fibra.[14]
Las variedades dulces de albaricoque contienen entre 40 y 50% de aceite, más que el hueso de las variedades amargas de albaricoque. Las grasas que se encuentran en el hueso del albaricoque son principalmente las grasas insaturadas ácido linoleico y ácido oleico, que es un aceite emoliente y emulsionante común en muchos productos cosméticos.[15].[16]
El ácido linoleico, un valioso ácido graso insaturado omega-6, es una parte importante de una dieta saludable rica en plantas.[17] El hueso de albaricoque tiene similitudes con las almendras, incluyendo el contenido beneficioso de grasa, fibra y proteína. Un estudio en Turquía examinó el uso de harina de albaricoque para reemplazar la manteca en recetas de galletas para mejorar la calidad de las grasas y aumentar el contenido de fibra de las galletas. La harina de hueso de albaricoque produjo una galleta más dura que tenía cierta dificultad para mantener su forma, pero los participantes encontraron las galletas aceptables cuando se reemplazó del 10 al 20% de la manteca por harina de hueso de albaricoque.[18]
La harina se usa en un pastel tradicional servido en ceremonias de boda en la India.[19] El contenido de amigdalina de los albaricoques y su sabor fuerte los hace una opción menos viable para los consumidores en los EE. UU.[20] y su consumo está desaconsejado en Canadá.[21] 
Preparación del Aceite de Albaricoque

El albaricoque es un drupa, como otros miembros del género prunus, como el durazno, la ciruela y la almendra. La capa externa aterciopelada se llama exocarpio, y la fruta carnosa es el mesocarpio. Estas capas rodean un endocarpio duro y leñoso.[22] Dentro del endocarpio se encuentra la semilla, o hueso de albaricoque. El aceite de hueso de albaricoque se extrae de esta semilla madura.

 

 

Prensado por Expeller y Prensado en Frío

El prensado por expeller se refiere al proceso de descomponer lentamente los huesos de albaricoque bajo presión mecánica, como dos placas metálicas giratorias, para liberar las grasas.[23]

Prensado en frío significa que el aceite fue prensado por expeller a baja temperatura. La baja temperatura evita que el aceite se estropee. El aceite de hueso de albaricoque producido por un proceso de prensado en frío tiene un color amarillo medio. Se producirá un aceite de color más claro si ha sido refinado.[24] Se han explorado una variedad de métodos para mejorar la extracción de aceite del valioso hueso de albaricoque.[25] 

En la India, el antiguo método de recolección del aceite es un proceso laborioso realizado a mano. Se han implementado técnicas modernizadas que producen más aceite, cuestan menos y son menos exigentes para los trabajadores que producen el aceite.[26] Sin embargo, esta modernización está aumentando en realidad la demanda de aceite exprimido a mano porque el aroma distintivo del aceite de albaricoque es mucho más fuerte cuando se recoge usando el método antiguo, y se cree que esto representa un aceite más seguro y potente.[27]

Extracción por destilación

La extracción por destilación significa exponer una planta al agua o al vapor para descomponer el material vegetal y liberar el aceite volátil o esencial. Los aceites se enfrían y condensan para su recolección.[28] La extracción por destilación se usa para extraer aceites volátiles, incluida la amigdalina de los huesos de albaricoque. La amigdalina se destila del residuo de los huesos que queda después de la extracción del aceite. Los residuos se calientan para liberar el aceite, luego se enfrían y se añaden semillas frescas para proporcionar suficiente enzima emulsina para hidrolizar la amigdalina. Si la temperatura es demasiado alta cuando ocurre esta reacción, la emulsina se descompone y la amigdalina no puede liberarse.[29]

Las fuentes comerciales de extracto de almendra pueden estar hechas de albaricoques, ya que el contenido de amigdalina de los albaricoques es menor y son más baratos y más disponibles en EE. UU. que las almendras amargas. Debido a que producen menos amigdalina, el sabor es menos fuerte que cuando la amigdalina se extrae de almendras amargas.[30] 

Usos medicinales del aceite de hueso de albaricoque

Usos del aceite de albaricoque en la medicina ayurvédica y china. El aceite de hueso de albaricoque se toma internamente y se aplica tópicamente. En la antigua medicina china y la medicina ayurvédica (el sistema tradicional de medicina de la India) se cree que el aceite de hueso de albaricoque combate el cáncer y ayuda con condiciones de piel seca, incluyendo eczema, psoriasis y caspa.

Tanto la medicina china como la ayurvédica consideran que el aceite de semilla de albaricoque es efectivo para limpiar condiciones de los pulmones, como la congestión.

El aceite puede tomarse internamente o usarse en masaje para estimular la limpieza de los pulmones.[31] El aceite de hueso de albaricoque en la medicina ayurvédica se cree que ayuda a eliminar toxinas, sal y ácido úrico del cuerpo, ayudando en condiciones inflamatorias como la artritis, dolores de espalda[32] y retención de líquidos. En la medicina china, el aceite de hueso de albaricoque se usa para el estreñimiento.  

Cosméticos El aceite de los huesos de albaricoque se absorbe bien en la piel y la suaviza, lo que lo convierte en una opción principal para cosméticos y perfumes. Las mismas cualidades lo hacen popular para la administración de productos farmacéuticos.[33]  

Masaje Usado tópicamente, el aceite de hueso de albaricoque es ligeramente oleoso, lo que ayuda a que la mano del terapeuta de masaje se deslice sobre la piel, pero se absorbe bien. El costo es más alto que el del aceite de almendra, pero se usa frecuentemente como sustituto en clientes de masaje que son alérgicos a los frutos secos.[34]

Piel La toxicidad de la amigdalina en las semillas de albaricoque amargas puede ayudar a combatir condiciones donde las células crecen en exceso, como las placas que se forman en la psoriasis. Hay algunas investigaciones que apoyan la capacidad del aceite de semilla de albaricoque amargo para causar apoptosis, o muerte celular, en las células que causan la psoriasis.[35]

La facilidad con la que los aceites de las semillas de albaricoque se absorben en la piel también se ha utilizado para administrar medicamentos analgésicos.[36] No existen ensayos en humanos que respalden el uso tradicional del aceite de semilla de albaricoque para el eczema.  

Antimicrobiano A medida que los antimicrobianos farmacéuticos enfrentan cada vez más cepas resistentes de bacterias y hongos, el interés en los antimicrobianos vegetales está en expansión. El extracto de la semilla de albaricoque amargo inhibe eficazmente el crecimiento de Candida albicans y C. glabrata, así como de Staph aureus y E. coli. La semilla dulce también es efectiva contra estos, aunque con menor potencia. Una extracción con metanol de una variedad japonesa de albaricoque mostró buenos resultados en la lucha contra Helicobacter pylori.[37]  

Salud gastrointestinal El aceite de semilla de albaricoque ha sido estudiado en la medicina occidental por su efecto antiinflamatorio en la enfermedad inflamatoria intestinal, específicamente en la colitis ulcerosa. En un estudio con ratas, el aceite de semilla de albaricoque amargo mostró la capacidad de reducir la inflamación y mejorar las úlceras en la colitis ulcerosa. Parece que la amigdalina en la semilla de albaricoque actuó suprimiendo las células que impulsan el proceso inflamatorio.[38]  

¿Luchador contra el cáncer? La laetrile, una forma semisintética de amigdalina, también llamada vitamina B17, ha sido objeto de una gran controversia[39] por su potencial para combatir el cáncer. Tanto la laetrile como la amigdalina contienen mandelonitrilo, que contiene cianuro. Se supone que es el cianuro el que puede matar las células cancerosas. Al igual que con la amigdalina, cuando se digiere la laetrile, especialmente en presencia de grandes cantidades de vitamina C, se crea cianuro.[40] Por eso se desaconseja el consumo de semillas crudas de albaricoque. Aunque la laetrile todavía se usa como terapia contra el cáncer en México, donde la laetrile no es semisintética, sino amigdalina derivada completamente de las semillas de albaricoques amargos, está prohibida en EE. UU. por preocupaciones de seguridad[41].

Una revisión exhaustiva de la investigación mostró que la laetrile no es efectiva contra el cáncer.[42] No obstante, la investigación sobre su potencial continúa, incluyendo un estudio reciente que sugiere que la amigdalina podría detener la metástasis de células de cáncer renal.[43]  

¿Sabías que? En el campo en expansión de fuentes alternativas de combustible, el albaricoque es una estrella en ascenso. Los ésteres metílicos de los aceites de hueso de albaricoque pueden añadirse al combustible diésel para mejorar el rendimiento del motor y crear emisiones más limpias.[44]  

Preguntas sobre el aceite de albaricoque

¿Qué debo buscar en un aceite de albaricoque? El aceite de albaricoque sin refinar y prensado en frío contendrá el mejor perfil de nutrientes y grasas. Debe ser de color amarillo medio y tener un aroma a nuez más fuerte que un aceite refinado. Un aceite refinado será más claro en color y algo más fino en textura, ya que se habrán eliminado todos los sedimentos e impurezas.  

Si soy alérgico a los albaricoques, ¿puedo usar aceite de albaricoque? El aceite de albaricoque generalmente se considera hipoalergénico y se usa en piel sensible y como alternativa al aceite de almendra para personas alérgicas a los frutos secos. Sin embargo, si tienes alergia a los albaricoques, o si no estás seguro de si tienes alergia al albaricoque, se debe evitar el aceite de albaricoque, incluso como agente tópico. Consulta a un médico sobre pruebas para alergias al albaricoque.  

¿Es seguro usar aceite de albaricoque en niños? El aceite de albaricoque es ligero, de aroma suave y no irritante, lo que lo convierte en una excelente opción para usar en niños. Si tu hijo tiene alergia al albaricoque o si no estás seguro de si tiene alergia al albaricoque, se debe evitar el aceite de albaricoque, incluso como agente tópico. Los albaricoques pertenecen tanto a la familia del polen de abedul como a la familia de las rosáceas, que tienden a ser grupos alergénicos. Consulta a un médico sobre pruebas para alergias al albaricoque.  

¿Puedo cocinar con aceite de albaricoque? Podrías cocinar con aceite de albaricoque. Los extractos del aceite de hueso de albaricoque suelen ser un ingrediente en el mazapán o se usan en lugar del aceite de almendra amarga. El aceite completo no se usa frecuentemente en la cocina porque la preparación comestible del aceite dulce de albaricoque tiene una vida útil corta. Los aceites de albaricoque preparados para uso cosmético tendrán más antioxidantes para ayudar a extender la vida útil, pero no están destinados para el consumo.  

¿Cuánto dura la vida útil del aceite de albaricoque? Guardado bajo condiciones de almacenamiento adecuadas, el aceite de albaricoque durará aproximadamente de seis meses a un año. Se añaden antioxidantes como las vitaminas C y E a los aceites de hueso de albaricoque usados en cosméticos o aceites de masaje para protegerlo del estrés oxidativo que se forma cuando el aceite comienza a enranciarse, prolongando su vida útil. El aceite de hueso de albaricoque debe mantenerse en condiciones frescas, ya que se descompone a temperaturas más altas.  

Precaución y Consideraciones Los albaricoques están en un grupo de alimentos que pueden causar un síndrome de alergia oral.[45] Los otros alimentos en este grupo de alimentos relacionados con el polen de abedul son manzanas, almendras, zanahorias, apio, cerezas, avellanas, kiwi, duraznos, peras y ciruelas.[46]

Si tienes una reacción a alguno de estos alimentos, consulta a tu médico antes de hacer del aceite de hueso de albaricoque una parte regular de tu dieta o régimen cosmético. No consumas huesos de albaricoque crudos. La cantidad de amigdalina presente en los huesos de albaricoque varía ampliamente, y la cantidad de cianuro liberada por la amigdalina puede ser fatal.
