Avocadoolie

Om botaniske olier

Brugen af botaniske olier kan spores tilbage tusinder af år med rødder i kulturer så forskellige som de gamle sumerere, kinesere og det romerske imperium.[1] Botaniske olier fremstilles af hele planten, hvilket bevarer dens duft, hovedaktive ingredienser og plantens essens. Botaniske olier lavet af forskellige planter er blevet brugt gennem historien til at ære guder,[2] forberede kroppe til begravelser,[3] bevare skønhed, hjælpe med hygiejne og behandle en bred vifte af medicinske tilstande. Instruktioner til forberedelse og brug af planter som medicin er katalogiseret i værkerne af Dioscorides, De materia medica[4], tilbage i det første århundrede.

Moderne teknologi har gjort det muligt at identificere og studere de aktive dele af planter for deres rolle i sundhed og deres anvendelighed mod forskellige medicinske tilstande. Værdien af botaniske olier har bestået tidens prøve.

Avocadoens egenskaber

Historie

Avocadoen blev først dyrket i det sydlige Mexico, nydt af oprindelige amerikanere og dyrket af aztekerne. Avocadofrø, bestemt til at være 10.000 år gamle, er blevet fundet i huler syd for Mexico City. Gennem det sekstende århundrede henviste spanske opdagelsesrejsende til Syd- og Mellemamerika til disse mærkelige "pærer", hvis spiselige del er "en pasta lignende smør" og bemærkede avocadoens kompatibilitet med ost.[5]

Avocadoen, hvis botaniske navn er Persea Americana, er medlem af Lauraceae- eller laurbærfamilien, sammen med kanel og laurbærblade. Alle medlemmer af denne familie har en træagtig del, som let kan ses i den hårde kerne i midten af avocadoen. Selvom vi er mest bekendt med Hass-avocadoen, findes der mindst 80 avocado-varianter. Avocadoplanter blev plantet i Florida og Californien i 1850[6]. I dag produceres cirka 90 procent af det amerikanske avocado-marked og 10 procent af verdens avocado-marked i Californien.[7]

Frøet

Den hårde kerne i midten af avocadoen betragtes ikke bredt som spiselig, men den er rig på antioxidanter og kalium. Skindet og frøet bliver normalt kasseret, når olier eller frugten kommercielt forarbejdes. For at minimere spild fremstilles ekstrakter fra det polyfenolrige skind og frø. Disse ekstrakter tilsættes til olier og til burgerkød for at forhindre oxidation og forlænge deres holdbarhed.[8]

At spise avocadofrø er ikke skadeligt for mennesker, bortset fra den mekaniske vanskelighed ved at tygge sådan et træagtigt frø. Der er avocadoentusiaster, som anbefaler at blende frøet og tilsætte det til smoothies, havregryn eller andre fødevarer.[9] Antagelsen om, at tilstedeværelsen af polyfenoler i stenen betyder, at de blot frigives ved blendning, er misvisende. Antioxidanterne i det tætte materiale i avocadoens skind og sten opnås via en ekstraktionsproces, der ligger ud over en blenders kapacitet.

Næringsstoffer

Avocadoen er ekstremt næringstæt, og folk, der spiser dem, har mindre sandsynlighed for at have almindelige ernæringsmæssige mangler end de fleste amerikanere. En typisk portion er en halv avocado, og den giver en rig variation af næringsstoffer. Hver halvdel af en avocado indeholder 4,6 g fiber, meget lidt sukker (0,2 g) og masser af vand, hvilket gør den til en ideel snack for diabetikere. Sammen med det rige indhold af fedtsyrer skaber det høje fiber- og vandindhold en fødevare, der tilfredsstiller sulten i længere tid.[10] og forbedrer vægttab.[11]

Avocadoen er rig på gavnlige monoumættede fedtsyrer (MUFAs, 71 procent), nogle flerumættede fedtsyrer (PUFAs, 13 procent) og mættede fedtstoffer (16 procent). Den indeholder ikke kolesterol. Den lille mængde mættet fedt i avocadoen falder faktisk, efterhånden som den modnes, og omdannes til mere oliesyre, den primære MUFA i avocadoer.[12] Monoumættede fedtsyrer er flydende ved stuetemperatur, så du kan selv bemærke denne proces, efterhånden som frugten bliver mere smidig over tid.

Ud over fedtsyrer indeholder avocadoer dobbelt så meget kalium som bananer, meget lidt natrium, lecithin og store mængder af flere andre vitaminer og mineraler, herunder magnesium, vitaminerne A, C, E og K1, B-vitaminerne folat, B2, B3, B5 og B6, cholin, antioxidanter som lutein/zeaxanthin og kryptoxanthin samt phytosteroler. Det er den eneste plantefødevare, der er rig på både vitamin C (en vandopløselig antioxidant) og vitamin E (en fedtopløselig antioxidant).[13]

Udover den næringsmæssige fordel, som avocadoen i sig selv bringer til kosten, øger brugen af avocadoer eller avocadoolie i en salat faktisk optagelsen af andre antioxidanter, især karoten.[14] Tilføj en avocado til måltider med gulerødder, salsa og spinat og andre karotenrige fødevarer for at få maksimal effekt.

Vidste du det?

Forøg indholdet af fytonæringsstoffer i din avocado-snack ved at spise det mørkegrønne lag, der findes langs det næringsrige skind og stenen. Brug “nick and peel”-metoden foreslået af California Avocado Association:

1) Skær avocadoen i halve på langs, helt ned til stenen.

2) Skær avocadoen i halve på langs igen, så du får 4 lange kvarterer.

3) Drej avocadoen i hænderne for at adskille kvarterne.

4) Træk stenen forsigtigt ud med fingrene.

5) Skræl forsigtigt frugten ved at glide din tommelfinger under skindet for at starte, og træk derefter skindet af frugten.[15]

Fremstilling af avocadoolie

Avocadoolie fremstilles af frugten fra den modne avocado. Der udvindes mere olie fra frugter, der er overmodne, men hvis de er rådne, når de forarbejdes, får den indsamlede olie en dårlig lugt.[16] Skindet og stenen fjernes før forarbejdning.[17] Der findes mange forslag til, hvordan man laver avocadoolie derhjemme,[18] men de bruger ofte kokoscreme som en del af processen. Selvom den fjernes ved sigtning til sidst, er det ikke ren avocadoolie.

Mekanisk ekstraktion

Avocadofrugten, når den er adskilt fra sin skal og kerne, presses mekanisk eller males til en pulp. Den bliver derefter "malaxeret" eller efterladt for at lade olien danne store dråber i 40 til 60 minutter. Pulpen fjernes derefter ved centrifugering, hvilket efterlader en lys grøn olie. Den grønne farve kommer fra det høje indhold af klorofyl.[19] Vandet følger med frugtkødet sammen med olien, så olien, som flyder på vandet, får lov til at løbe ud gennem huller i opsamlingsbeholderen. Den resulterende urensede olie er noget tyk. Hvis den viderebehandles, bliver den raffinerede olie glattere og lysere i farven.[20]

Destillationsekstraktion

Destillationsekstraktion betyder at udsætte en plante for vand eller damp for at nedbryde plantematerialet og frigive æterisk olie. Olierne køles og kondenseres til opsamling.[21]

Dampdestillation bruges til at udtrække aktive bestanddele fra avocadoens skal og kerne. Olierne, som er værdifulde for deres antimikrobielle egenskaber og antioxidante kapacitet,[22] fjernes effektivt blot ved hjælp af dampdestillation. Disse olier, som er dårligt opløselige i vand, har en affinitet for ethanol, og et højere udbytte af disse olier er muligt, hvis anhydrous ethanol anvendes.[23]

Medicinske anvendelser af avocadoolie

Botaniske olier er basis for mange kosmetik- og topikale lægemidler. Den bedste absorption sker, når planter har meget oliesyre, en enkeltumættet fedtsyre, der findes i rigelige mængder i avocadoer, og mættede fedtstoffer med lange kulstofkæder, som stearinsyren i avocadoer.[24]

Anvendelser i ayurvedisk og kinesisk medicin

I ayurvedisk medicin, Indiens traditionelle medicinsystem, værdsættes avocadoens rige olier som jordforbindende og nærende. Det er en fødevare, der anbefales i ayurvedisk medicin til brug i de tørre sæsoner om efteråret og vinteren samt til at støtte dårlig fordøjelse, ledsundhed, essentiel vitalitet og hudtilstande.[25]

I traditionel kinesisk medicin bruges avocado til at behandle mave-tarmkanalen og lungerne. Den smører tyktarmen for at behandle forstoppelse og mavesår. Avocado fugter også lungerne for at behandle kronisk hoste. Olierne anses for at være nærende for Yin og dermed beskyttende for en aldrende krop.[26]

Forbrændinger og ar

Stearinsyre, det mættede fedt i avocadoolie, er antiviral og antiinflammatorisk. Det er blevet påvist effektivt til behandling af kemiske forbrændinger, hvor det mindsker rødme og irritation af forbrændingen.[27] Der findes ingen forsøg, der demonstrerer den effekt på mennesker, men der er beviser fra forsøg udført på rotter, at komponenter i avocado,[28] kombineret med lignende komponenter fra sojabønnen, forbedrede sårheling.[29] Komponenten kaldes en ikke-sæbefremkaldende, hvilket betyder olier, der bevarer deres egenskaber og ikke blander sig for at danne sæbe.[30]

Slidgigt

Den ikke-sæbefremkaldende del af en avocado er den fraktion, der ikke kan omdannes til sæbe. Den indeholder mange fedtopløselige vitaminer og phytosteroler. Avocado ikke-sæbefremkaldende stoffer, når de kombineres med soja ikke-sæbefremkaldende stoffer (sammen forkortet ASU), er meget effektive til behandling af slidgigt, en smertefuld ledsygdom. ASU har vist sig at reducere ledsmerter og inflammation, hvilket mindsker behovet for medicin, som kan have alvorlige bivirkninger. Endnu mere imponerende forhindrer disse plantekomponenter progressionen af slidgigt, hvilket smertestillende medicin alene ikke kan gøre.[31]

Anti-aldring

Avocadoolie er grøn og ret tyk, hvilket gør den mindre ønskværdig som massageolie. Dog gør dens evne til at trænge dybt ind i huden, sammen med avocadooliens rige næringsprofil, den til et populært valg til anti-aldring. Vitaminerne A, D og E, som alle er rigelige i avocadoolie, fugter tør hud. Dens rige antioxidantprofil kombineret med det høje fedtindhold arbejder på at genoprette kollagen og hudens elasticitet.[32]

De anti-aldringseffekter er også fundet ved at spise avocadoer. Det rige indhold af antioxidanter i avocadoer hjælper med at reparere DNA, vende virkningerne af ioniserende stråling og bremse aldringsprocessen.[33]

Infektioner

Kernene er blevet undersøgt for deres antimikrobielle aktivitet. Efterhånden som flere organismer viser resistens over for farmaceutiske antimikrobielle midler, vokser interessen for plantemateriale. Avocadokerner har vist sig at være effektive mod flere stammer af Candida, E. Coli, Staph aureus og methicillin-resistent staph aureus (MRSA).[34]

Kardiovaskulær sundhed

Selvom den er meget fedtholdig, er avocadoolie rig på enkeltumættet oliesyre sammen med beta-sitosterol og indeholder ikke sukker. Det lave sukkerindhold i avocado hjælper med at stabilisere blodsukkeret hos patienter med ikke-insulin-afhængig diabetes mellitus.[35]

Plante-steroler bruges til at hjælpe med at sænke kolesterol. Bedre kliniske studier er nødvendige for at afgøre, om avocadoer forhindrer dødsfald fra hjertesygdomme, men det er vist, at en avocado-rig kost forbedrer risikofaktorerne for hjertesygdomme. Avocadoer har vist sig at sænke det samlede kolesterol, samtidig med at[36] eller øge HDL og sænke LDL, det "dårlige kolesterol."[37]

Den primære mættede fedt i avocadoer er det 16-kulstof fedt stearinsyre. Stearinsyre er den dårligst absorberede af de almindelige fedtsyrer, når den spises, så det meste passerer gennem fordøjelsessystemet. Når den findes i blodbanen, omdannes den ikke til triglycerider, som er kendt for at bidrage til hjertesygdomme. Leveren omdanner hurtigt stearinsyre i blodbanen til den umættede fedtsyre oliesyre.[38]

Kræftforebyggelse

Udover at blive anerkendt som en fremragende næringstæt fødevare,[39] bliver undersøgt for mulig effekt mod kræft. Flere bioaktive phytokemikalier fra avocado har vist lovende resultater i kampen mod kræft, fra kræft i hoved og hals til prostatakræft.[40] Persin, et svampedræbende middel, der findes i små doser i avocadoens skal og kerne, kan være effektivt til behandling af brystkræft.[41]

Psoriasis

Når den kombineres med vitamin B12 i en topisk creme, har avocadoolie vist sig effektiv til behandling af kronisk plaque-psoriasis. Den var konsekvent effektiv til at håndtere symptomer uden bivirkninger og uden fald i effekt over en 12-ugers prøveperiode.[42]

Traditionelle anvendelser

Spanske opdagelsesrejsende observerede aztekernes dyrkning af avocado og bemærkede ligheden mellem avocadoen og en testikel. Det spanske ord for avocado er ahuacate, som var aztekernes ord for testikel.[43] På det tidspunkt troede man, at planter, der lignede kropsdele, ville forbedre funktionen af den kropsdel, så man mente, at avocado ville fungere som et afrodisiakum og øge mandlig virilitet.[44]

Avocadoolie er også populær til æteriske olieblandinger. Olien har en neutral duft,[45] så den ikke overdøver de æteriske olier, der kan være tilsat.

Spørgsmål om avocadoolie

Hvad skal jeg kigge efter i en avocadoolie?

Uraffineret, koldpresset mandelolie vil indeholde det bedste nærings- og fedtprofil. Avocadoolie er grøn, når den udvindes, men bliver hurtigt blegbrun. Hvis en avocadoolie er klar grøn, er den sandsynligvis blevet ændret eller farvet med farvestoffer.

Hvis jeg er allergisk over for latex, kan jeg så bruge avocadoolie?

Hvis du har latexallergi, eller hvis du ikke er sikker på, om du har latexallergi, bør avocadoolie undgås, selv som et topisk middel. IgE-reaktionen, der opstår ved latexallergi, ser ud til at forårsage en krydsreaktion med visse fødevarer, herunder avocado, samt bananer og kiwi.[46]

Er det sikkert at bruge avocadoolie til børn?

Hvis dit barn har latexallergi, eller hvis du ikke er sikker på, om dit barn har latexallergi, bør avocadoolie undgås, selv som et topisk middel. Selve oliens smag kan ikke falde i børns smag, men fedtene i avocado er en fantastisk støtte for deres udviklende nervesystem. Hele avocadoer bliver ofte pureret som babys første faste føde eller tilsat smoothies for at give dem en cremet konsistens, fyldt med næringsstoffer.

Kan jeg lave mad med avocadoolie?

Avocadoolie er en overset perle til madlavning. Næringsrig og stabil ved høj varme (højere end olivenolie),[47] det er en måde at beskytte dit hjerte på under stegning og et godt valg til sautering også.[48] Den har en bitter smag, når den opvarmes,[49] så justeringer af opskriften kan være nødvendige for at forbedre smagsoplevelsen.

Hvor lang er holdbarheden for avocadoolie?

Opbevaret under de rette forhold vil avocadoolie holde i cirka 1 år. Vitamin E kan tilsættes i en koncentration på 1 procent for at hjælpe med at forlænge holdbarheden.[50]

Er avocadoolie en god solcreme?

Mange steder hævder, at avocadoolie er effektiv som solcreme, men der er ingen beviser, der understøtter denne påstand. Selvom avocadoolie trænger ind i huden og indeholder mange antioxidanter, var det eneste studie, der undersøgte det som solcreme, et studie, hvor avocadoolien blev brugt som base for octyl methoxycin og titaniumdioxid.[51] Brug altid en solcreme med garanteret SPF.

Vil jeg tage på af kalorierne i avocadoolie?

De fleste studier viser, at vægttab er resultatet af avocado i kosten. Som en næringstæt fødevare kan den hjælpe dig med at føle dig mæt hurtigere og erstatte fødevarer med højere kulhydratindhold, som generelt er lavere i næringsstoffer.[52][53]

Forsigtighed og overvejelser

IgE-allergireaktionen, der opstår, når nogen har latexallergi, ser ud til at forårsage en krydsreaktion med visse fødevarer, herunder avocadoer samt bananer og kiwi.[54] Undgå avocadoer, hvis du har latexallergi, indtil du har talt med din læge.

Persin er det giftige stof i skindet og frøene fra avocadoer. Det synes at være stort set sikkert for hunde at spise, men andre husdyr eller gårddyr, herunder kvæg, geder, heste, mus, kaniner, marsvin, rotter, får, undulater, kanariefugle, nymfeparakitter, strudse, høns, kalkuner og fisk, kan udvikle alvorlige komplikationer ved at spise avocadoer.[55]
