Mandelolie

Om botaniske olier

Brugen af botaniske olier kan spores tilbage tusinder af år med rødder i kulturer så forskellige som de gamle sumerere, kinesere og det romerske imperium.[1] Botaniske olier fremstilles af hele planten, hvilket bevarer dens duft, hovedaktive ingredienser og plantens essens. Botaniske olier lavet af forskellige planter er blevet brugt gennem historien til at ære guder,[2] forberede kroppe til begravelser,[3] bevare skønhed, hjælpe med hygiejne og behandle en bred vifte af medicinske tilstande. Instruktioner til forberedelse og brug af planter som medicin er katalogiseret i værkerne af Dioscorides, De materia medica[4], tilbage i det første århundrede. Moderne teknologi har gjort det muligt at identificere og studere de aktive dele af planter for deres rolle i sundhed og deres anvendelighed mod forskellige medicinske tilstande.  

Egenskaber ved mandler

Det gamle mandeltræ har haft en æret plads i mange kulturer. Mandeltræer nævnes flere gange i Bibelen. Som en tidlig forårsblomstrer betyder dets hebraiske navn "flittig" eller "vågen", og det blev betragtet som et tegn på Guds pludselige og hurtige straf i det gamle Israel. Kineserne ser mandlen som et symbol på vedvarende sorg og kvindelig skønhed[5].  

Typer af mandler

Den rigelige olie fra mandlen har en behageligt mild duft, er lys i farven og har ikke en stærk smag[6]. Der findes to hovedtyper af mandler, søde (Prunus dulcis) og bitre (Prunus amara eller amygdalus). Den søde mandeltype bruges mere bredt, fordi den producerer mere af de værdifulde olier, som mandler er kendt for, og den udgør mindre risiko for toksicitet. Den bitre mandeltype indeholder amygdalin, ligesom frøene fra andre medlemmer af Prunus-familien, herunder kirsebær, abrikoser og blommer. Når amygdalin fordøjes, producerer interaktionen med vand og tarmbakterier store mængder prussisk syre,[7] eller cyanid. Den bitre mandel indeholder også benzaldehyd, dens æteriske olie, som er giftig[8]. Fordi disse bestanddele er giftige, eller endda dødelige i meget små doser, bør den bitre mandel ikke spises og sælges ikke i USA.  

 

Næringsstoffer

Mandel er en ernæringsmæssig kraftkarl. Mandler består af cirka 21 procent protein, 50 procent fedt, 22 procent kulhydrater, hvoraf over halvdelen er fiber, og fem procent vand, hvilket gør mandelmel til et populært valg for diabetikere.[9] Mandelens fedtsyrer er hovedsageligt umættede fedtstoffer, med nogle mættede fedtstoffer og intet kolesterol. Specifikt indeholder mandelolie 4 til 9 procent palmitinsyre, 0,9 til 3 procent stearinsyre, 50 til 86 procent oliesyre og 20 til 30 procent linolsyre.[10][11] syre.[12] Af disse er palmitinsyre og stearinsyre mættede fedtsyrer, men udgør samlet set mindre end 12 procent af de samlede fedtsyrer. Linolsyre, som er rigelig i mandlen, er en omega-6 fedtsyre. Mens omega-3 fedtsyrer er bedre kendt for deres sundhedsmæssige fordele, kræver kosten og sundheden for hud og hår en balance mellem omega-6 og omega-3 fedtsyrer. Den amerikanske kost har en tendens til at indeholde en stor mængde omega-6, som kan omdannes til den inflammatoriske arakidonsyre, især når kilden er kød. Plantekilder til omega-6 fedtsyrer omdannes til gamma-linolensyre, som er antiinflammatorisk, før de bliver til arakidonsyre. Den middelhavsinspirerede kost, som er anerkendt som en effektiv måde at bekæmpe hjertesygdomme på, er rig på plantekilder til omega-6, herunder mandler.[13]
Ud over fedtsyrer indeholder mandler de fedtopløselige næringsstoffer vitamin E, hovedsageligt som den potente antioxidant alfa-tocopherol, og vitamin A. B-vitaminer, der findes i mandler, inkluderer B1 (thiamin), B2 (riboflavin), B3 (niacin), B6 og folat. Mandler er en rig kilde til kalium. Flere andre mineraler findes også i mandler, herunder calcium, jern, magnesium, fosfor, zink og en lille mængde natrium.[14]

Selvom alle disse næringsstoffer vil være til stede i enhver mandelolie, kan mængden af hvert næringsstof i en given mængde olie variere. Planter tilpasser sig deres miljø, så en plante, der dyrkes med mere eller mindre sol eller nedbør[18] kan tilpasse sig disse forhold og producere lidt forskellige næringsprofiler.  

Fremstilling af mandelolie

Mandel er teknisk set hverken en nød eller en frugt! Det er en stenfrugt, hvilket henviser til dens flere lag. Den ydre skal på en mandeltræs frugt er en tyk, grøn belægning. Inden i skallen er endokarpen, som er hård og træagtig, ligesom ydersiden af stenen i dens fætter, fersknen. Inde i endokarpen ligger frøet, eller mandlen.[19] Mandelolie udvindes fra dette modne frø.  

Ekspellerpresset og koldpresset

Ekspellerpresning refererer til processen med langsomt at nedbryde mandler under mekanisk pres, såsom to roterende metalplader, for at frigive fedtet fra mandlen.[20] Koldpresset betyder, at olien blev presset ved lav temperatur.[21] Den lave temperatur forhindrer olien i at blive fordærvet. Mandelolie produceret ved en koldpresset proces er mørkere i farven end en raffineret proces, men menes at være højere i de egenskaber, der gør den oprindelige plante værdifuld, herunder dens enkeltumættede fedtstoffer og antimikrobielle aktivitet.[22] Destillationsudtrækning for de essentielle olier fra søde mandler er normalt ikke nødvendig, fordi olierne er så rigelige i frøene. Selv en hjemmeproces er nok til at frigive olien.[23]

Destillationsudtrækning

Destillationsudtrækning betyder at udsætte en plante for vand eller damp for at nedbryde plantematerialet og frigive den essentielle olie. Olierne køles og kondenseres til opsamling.[24] Destillationsudtrækning bruges til at udtrække amygdalin fra bitre mandler. Amygdalin er ikke til stede i den rå olie, så ekspellerudtrækning ville ikke virke. Amygdalinen dannes ved virkningen af emulsin, en komponent i den bitre mandel, der aktiveres, når vand er til stede. Hvis temperaturen er for høj, når denne reaktion sker, nedbrydes emulsinen, og amygdalinen kan ikke frigives.

Når amygdalin produceres, frigiver den bitre mandel også den essentielle olie benzaldehyd og en lille mængde hydrogencyanid, også kaldet prussisk syre. Denne prussiske syre, eller cyanid, er ekstremt giftig, men kan fjernes med en ekstra destillation, hvilket efterlader olie af bitter mandel fri for prussisk syre, også kaldet olie af bitter mandel, FFPA. Dette er den smagsgiver, der er populær i madlavning.

Selv når den er cyanidfri, er benzaldehyd og amygdalin også giftige, så den bitre olie bruges i dråbedoser.[25][26] Bitter mandelolieekstrakt har en stærk mandelsmag og bruges i madlavning. Rå bitre mandler sælges ikke i USA. Kommercielle kilder til mandel-ekstrakt kan være lavet af amygdalin-producerende frugter fra samme familie som mandlen, herunder ferskner eller abrikoser. Disse frugter producerer dog mindre amygdalin, så smagen er mindre kraftig end når amygdalin tages fra bitre mandler.[27]  

 

Medicinske anvendelser af mandelolie

Anvendelser i ayurvedisk og kinesisk medicin
Mandelolie tages internt og påføres topisk. I gammel kinesisk medicin og ayurvedisk medicin (Indiens traditionelle medicinsystem) bruges mandelolie til tørre hudtilstande, herunder eksem og psoriasis.
Mandel i ayurvedisk medicin betragtes som den bedste af alle nødder; i stand til at forbedre kroppens essens, som understøtter intellekt, spiritualitet og reproduktionsevne. Både kinesisk og ayurvedisk medicin anser mandler for at være effektive til at rense tilstande i lungerne, såsom bronkial overbelastning. Olien kan tages internt eller bruges i massage for at stimulere rensning af lungerne.[28]  
Kosmetik
Mandelolie er en populær basisolie i kosmetiske produkter på grund af dens behagelige, milde egenskaber. Den optages godt i huden og blødgør den, hvilket gør den til et foretrukket valg til sæbefremstilling, læbepomader og badeolier.[29]  
Massage
Mandelolie er en bæreolie for medicin og bruges bredt som bærer for andre æteriske olier.[30] fordi dens milde aroma ikke overdøver andre dufte. Det er en favorit blandt massageterapeuter. Mandelolie er let fedtet, hvilket hjælper massageterapeutens hånd med at glide på huden, men den optages godt.[31] De gavnlige fedtstoffer og næringsstoffer i mandelolie kan optages gennem huden. Brug af mandelolie til massage af for tidligt fødte spædbørn forbedrede deres neurologiske score og øgede deres vægtøgning.[32] sammenlignet med placebo.  
Ar og strækmærker
Mandelolie optages godt og er rig på fedtopløselige vitaminer E og A. Disse næringsstoffer bidrager sandsynligvis til den observerede fordel, mandelolie har ved at reducere ardannelse efter operation og glatte og forynge huden.[33] Der er nogle beviser for effektiviteten af massage med mandelolie til at reducere strækmærker under graviditet.[34]  
Hjerte-kar-sundhed
Indtages det internt, er mandelolie en rig kilde til omega-6 fedtsyrer og flere andre næringsstoffer. Mange studier er udført på hele mandlen, som har vist gavn for hjerte-kar-sygdomme, herunder forhøjelse af HDL,[35] det “gode kolesterol,” reduktion af mavefedt og sænkning af LDL, det “dårlige kolesterol,” ved at erstatte snacks med højt kulhydratindhold,[36] sænkning af glukoseniveauer,[37] forebyggelse af leverskader og forbedring af blodkarrenes funktion.[38]  
Tarmens sundhed
En voksende mængde forskning understøtter vigtigheden af tarmens mikrobiom for sundheden. En undersøgelse sammenlignede effekten af friskmalede mandler med mandler, der var affedtet, på tarmens mikroorganismer. Undersøgelsen fandt, at mandler, der var friskmalede med fedtet intakt, understøttede en bedre mikroorganismeprofil end de affedtede nødder.[39] Mandelolie understøtter en sund tarmtransittid, hvilket gør den nyttig til behandling af irritabel tyktarm (IBS).  
Traditionelle anvendelser Mandelolie anses for at være gavnlig for en lang række tilstande baseret på traditionel brug, selvom der ikke er konsekvent forskning for eller imod effektiviteten af disse anvendelser. Mandelolie anses for at være antiinflammatorisk, immunstyrkende, anti-hepatotoksisk og kan også reducere forekomsten af tyktarmskræft.[40]  
Brug af bitter mandelolie Bitter mandelolie er giftig at indtage, men er historisk blevet brugt til at håndtere feber, muligvis fordi den kan dræbe bakterier, vira og svampe. Den er blevet brugt som ormemiddel til at dræbe orme i mave-tarmkanalen.[41] Bitter mandelolie fremkalder sved og øget urinproduktion. Selvom der ikke findes studier på mennesker, er brugen af bitter mandelolie til kramper, smerte, hoste og kløe anerkendt.[42]  

Spørgsmål om mandelolie

Hvad skal jeg kigge efter i en mandelolie? Uraffineret, koldpresset mandelolie vil indeholde det bedste nærings- og fedtstofprofil. Den kan være mørkere i farven og have en stærkere duft end en raffineret olie, men den samlede duft og smag bør stadig være forholdsvis mild.  

Hvis jeg er allergisk over for mandler, kan jeg så bruge mandelolie? Hvis du har nøddeallergi, eller hvis du er usikker på, om du har nøddeallergi, bør mandelolie undgås, selv som et topisk middel.  

Er det sikkert at bruge mandelolie på børn? Hvis dit barn har nøddeallergi, eller hvis du er usikker på, om dit barn har nøddeallergi, bør mandelolie undgås, selv som et topisk middel. Der har været tilfælde, hvor børn har udviklet allergi over for mandler baseret på kun topisk eksponering.[43] Spørg en læge om test for mandelallergi.  

Kan jeg lave mad med mandelolie? Du kan godt lave mad med mandelolie; olien – eller en mandelextrakt – kan være en ingrediens i bageopskrifter. Mandelolie er ikke stabil ved høje temperaturer, så det er ikke det bedste valg til madlavning ved høj varme.  

Hvor lang er holdbarheden på mandelolie? Opbevaret under de rette forhold vil mandelolie holde sig i cirka 2 år. Det høje indhold af vitamin E i mandelolie beskytter faktisk olien mod oxidativt stress, som opstår, når olien begynder at blive harsk, og forlænger dermed holdbarheden. Mandelolie har et lavt fugtindhold, kun omkring 5 procent vand, så længe fugt holdes ude, nedbrydes den ikke let. Mandelolie bør opbevares køligt, da den nedbrydes ved højere temperaturer.[44]  

Vil mandelolie ikke tilstoppe mine porer? Mandelolie er en god blødgører, hvilket betyder, at den er god til at nedbryde og blødgøre huden. Alligevel kan ansigtets porer være mere følsomme over for tilstopning af tykke olier. Hvis du har tendens til at have fedtet hud, kan mandelolie være bedre at bruge på andre dele af kroppen.  

Vil jeg tage på af kalorierne i mandelolie? De fleste undersøgelser viser, at vægttab er resultatet af flere mandler i kosten. Som en næringstæt fødevare kan det hjælpe dig med at føle dig mæt hurtigere og erstatte fødevarer med højere kulhydratindhold, som generelt er lavere i næringsstoffer.  

Forsigtighed og overvejelser Mandelolie er lavet af mandler. Brug ikke topisk eller indtag, hvis du er allergisk over for mandler eller alle træ-nødder. Mandel er i en gruppe af fødevarer, der kan forårsage oral allergisyndrom.[45] De andre fødevarer i denne gruppe af birkepollen-fødevarer er æbler, mandler, gulerødder, selleri, kirsebær, hasselnødder, kiwi, ferskner, pærer og blommer. Hvis du reagerer på nogen af disse fødevarer, spørg din læge, før du gør mandelolie til en fast del af din kost eller kosmetiske rutine.
