Aprikoskärnolja

Om botaniska oljor

Användningen av botaniska oljor kan spåras tillbaka tusentals år, med rötter i kulturer så olika som de gamla sumererna, kineserna och Romarriket.[1]

Botaniska oljor framställs från hela växten, vilket bevarar dess doft, huvudsakliga aktiva ingredienser och växtens essens. Botaniska oljor gjorda av olika växter har använts genom historien för att hedra gudar,[2] förbereda kroppar för begravningar,[3] bevara skönhet, hjälpa till med hygien och behandla en mängd olika medicinska tillstånd. Instruktioner för beredning och användning av växter som medicin finns katalogiserade i Dioscorides verk, De materia medica[4], redan på första århundradet. Modern teknik har gjort det möjligt att identifiera och studera växternas aktiva delar för deras roll i hälsa och deras användbarhet mot olika medicinska tillstånd. Värdet av botaniska oljor har stått sig genom tiderna.  

Aprikosens egenskaper

Även om aprikosen är infödd i norra Kina, gav grekerna den dess botaniska namn, Prunus armeniaca, eftersom de trodde att den först odlades i Armenien. Romarna kallade denna frukt praecocium, vilket betyder "för tidig", eftersom den blommade tidigt på säsongen och från detta namn utvecklades "aprikos".[5]

Oljan från aprikoskärnan är mycket lik den från dess värdefulla kusin, mandeln. Aprikosolja används ofta istället för bittermandelolja eller tillsätts i mandelolja för att sänka produktionskostnaden, även om detta kanske inte anges på etiketten.[6]  

 Typer av aprikoser

Generellt finns det söta aprikoser och bittra aprikoser. Många aprikossorter odlas av olika anledningar, inklusive tidpunkten på året då de mognar och olika egenskaper hos frukten, såsom smak och textur.[7]
Söta aprikoser och vilda aprikoser
De odlade sorterna - främst söta aprikoser och vilda aprikoser - är generellt bittra. Smaken av bladen och fröna användes traditionellt som vägledning, även om fröinnehållet har analyserats och visat sig variera i fett- och näringsinnehåll mellan olika kultivarer.[8]
Söt aprikoskärnolja används topiskt som massageolja och som tillsats i tvålar och hudvårdsprodukter. Söt aprikoskärnolja har en djup, nötig smak och extraktet tillsätts ofta i recept.[9]
Kärnan i den vilda aprikosen är bitter och innehåller varierande mängder amygdalin, beroende på sort,[10] liksom fröna från andra medlemmar i Prunus-familjen, inklusive mandlar, körsbär och plommon. När amygdalin bryts ner i kroppen, producerar dess interaktion med vatten och tarmbakterier cyanid. Eftersom dessa ämnen är giftiga eller dödliga i mycket små doser bör aprikoskärnor inte ätas om de inte har rostats.[11]  
Näringsämnen
Aprikosen odlas över hela världen för sin smak, medicinska värde och näringsegenskaper. Frukten innehåller kolhydrater, vitaminerna A, B1 (tiamin), B3 (niacin), C, E och K, kalium, betakaroten och folat.[12][13]
Kärnorna, som vanligtvis inte äts hela utan används för sina värdefulla oljor, innehåller upp till 22 % kostprotein. Kärnorna torkas och mals till mjöl, som är rikt på essentiella aminosyror och fiber.[14]
De söta aprikossorterna innehåller 40 till 50 % olja, mer än kärnan hos de bittra aprikossorterna. Fetter i aprikoskärnan är främst de omättade fetterna linolsyra och oljesyra, som är en mjukgörande och emulgerande olja vanlig i många kosmetiska produkter.[15].[16]
Linolsyra, en värdefull omättad omega-6-fettsyra, är en viktig del av en växtbaserad, hälsosam kost.[17] Aprikoskärnan liknar mandlar, inklusive det gynnsamma innehållet av fett, fiber och protein. En studie i Turkiet undersökte användningen av aprikosmjöl som ersättning för fett i kakrecept för att förbättra fettkvaliteten och öka fiberinnehållet i kakorna. Aprikosmjöl gav en hårdare kaka som hade viss svårighet att behålla formen, men deltagarna tyckte att kakorna var goda när 10 till 20 % av fettet ersattes med aprikosmjöl.[18]
Mjölet används i en traditionell kaka som serveras vid bröllopsceremonier i Indien.[19] Amygdalininnehållet i aprikoser och deras starka smak gör dem till ett mindre attraktivt alternativ för konsumenter i USA.[20] och deras konsumtion avråds i Kanada.[21] 
Förberedelse av aprikosolja

Aprikosen är en stenfrukt, likt andra medlemmar i prunussläktet som persika, plommon och mandel. Det duniga yttre lagret kallas exokarp, och det köttiga fruktköttet är mesokarp. Dessa lager omger en hård och träig endokarp.[22] Inuti endokarpen ligger fröet, eller aprikoskärnan. Aprikoskärnolja utvinns från detta mogna frö.

 

 

Expellerpressad och kallpressad

Expellerpressning avser processen där aprikoskärnor långsamt bryts ner under mekaniskt tryck, som två roterande metallplattor, för att frigöra fetterna.[23]

Kallpressad betyder att oljan pressats ut vid låg temperatur. Den låga temperaturen förhindrar att oljan förstörs. Aprikoskärnolja som produceras genom kallpressning har en mellan-gul färg. En ljusare olja framställs om den har raffinerats.[24] En rad metoder för att förbättra oljeutvinningen från den värdefulla aprikoskärnan har undersökts.[25] 

I Indien är den gamla metoden för att samla in oljan en besvärlig process som görs för hand. Moderniserade tekniker har införts som ger mer olja, kostar mindre och är mindre krävande för arbetarna som producerar oljan.[26] Denna modernisering ökar dock faktiskt efterfrågan på handpressad olja eftersom den karakteristiska doften av apriksolja är mycket starkare när den samlas in med den gamla metoden, och det tros att detta representerar en säkrare, mer potent olja.[27]

Destillationsextraktion

Destillationsextraktion innebär att en växt utsätts för vatten eller ånga för att bryta ner växtmaterialet och frigöra den flyktiga eller eteriska oljan. Oljorna kyls ner och kondenseras för insamling.[28] Destillationsextraktion används för att utvinna flyktiga oljor, inklusive amygdalin från aprikoskärnor. Amygdalinet destilleras från kakan av kärnor som blir kvar efter oljeutvinning. Kakorna värms upp för att frigöra oljan, kyls sedan ner och färska frön tillsätts för att ge tillräckligt med enzymet emulsin för att hydrolysera amygdalinet. Om temperaturen är för hög när denna reaktion sker bryts emulsinet ner och amygdalinet kan inte frigöras.[29]

Kommersiella källor till mandelextrakt kan tillverkas av aprikoser, eftersom amygdalininnehållet i aprikoser är lägre och de är billigare och mer tillgängliga i USA än bittra mandlar. Eftersom de producerar mindre amygdalin är smaken mindre stark än när amygdalinet tas från bittra mandlar.[30] 

Medicinska användningar för aprikoskärnolja

Användningsområden för apriksolja inom ayurvedisk och kinesisk medicin. Aprikoskärnolja tas internt och appliceras topiskt. Inom den gamla kinesiska medicinen och ayurvedisk medicin (Indiens traditionella medicinsystem) tros aprikoskärnolja bekämpa cancer och hjälpa vid torra hudtillstånd, inklusive eksem, psoriasis och mjäll.

Både kinesisk och ayurvedisk medicin anser att aprikoskärnolja är effektiv för att rensa lungsjukdomar, såsom trängsel.

Oljan kan tas internt eller användas i massage för att stimulera rensning av lungorna.[31] Aprikoskärnolja i ayurvedisk medicin tros hjälpa till att föra ut toxiner, salt och urinsyra ur kroppen, vilket hjälper inflammatoriska tillstånd inklusive artrit, ryggont[32] och vätskeretention. Inom kinesisk medicin används aprikoskärnolja mot förstoppning.  

Kosmetika Olja från aprikoskärnor absorberas väl av huden och mjukar upp den, vilket gör den till ett förstahandsval för kosmetika och parfymer. Samma egenskaper gör den populär för leverans av läkemedel.[33]  

Massage Används topiskt, är aprikoskärnolja något oljig, vilket hjälper massageterapeutens hand att glida över huden, men den absorberas ändå väl. Kostnaden är högre än för mandelolja, men den används ofta som ersättning på massagekunder som är allergiska mot nötter.[34]

Hud Toxiciteten hos amygdalinet i bittra aprikoskärnor kan hjälpa till att bekämpa tillstånd där celler växer överdrivet, såsom plack som bildas vid psoriasis. Det finns viss forskning som stöder att olja från bittra aprikoskärnor kan orsaka apoptos, eller celldöd, i celler som orsakar psoriasis.[35]

Den lätthet med vilken oljor från aprikoskärnor absorberas av huden har också använts för att leverera smärtstillande mediciner.[36] Det finns inga studier på människor som stöder den traditionella användningen av aprikoskärnolja för eksem.  

Antimikrobiell Eftersom farmaceutiska antimikrobiella medel alltmer kämpar med resistenta bakterie- och svampstammar, ökar intresset för växtbaserade antimikrobiella medel. Extrakt från bittra aprikoskärnor hämmar effektivt tillväxten av Candida albicans och C. glabrata, samt Staph aureus och E. coli. Den söta kärnan är också effektiv mot dessa, men mindre potent. En metanolextraktion av en japansk aprikossort visade goda resultat i kampen mot Helicobacter Pylori.[37]  

Mag-tarmhälsa Aprikoskärnolja har studerats inom västerländsk medicin för dess antiinflammatoriska effekt på inflammatorisk tarmsjukdom, specifikt ulcerös kolit. I en råttstudie visade oljan från bittra aprikoskärnor förmåga att minska inflammation och förbättra sår vid ulcerös kolit. Det verkar som att amygdalinet i aprikoskärnan arbetade för att undertrycka de celler som driver inflammationsprocessen.[38]  

Cancerbekämpare? Laetrile, en semisyntetisk form av amygdalin, även kallad vitamin B17, har varit föremål för stor kontrovers[39] för sin potential att bekämpa cancer. Både laetrile och amygdalin innehåller mandelonitril, som innehåller cyanid. Det är cyaniden som sägs kunna döda cancerceller. Precis som med amygdalin, när laetrile bryts ner, särskilt i närvaro av mycket vitamin C, bildas cyanid.[40] Det är därför konsumtion av råa aprikoskärnor avråds från. Medan laetrile fortfarande används som cancerterapi i Mexiko, där laetrile inte är semisyntetiskt utan verkligen amygdalin helt utvunnet från kärnorna av bittra aprikoser, är det förbjudet i USA på grund av säkerhetsbekymmer[41].

En grundlig översikt av forskningen visade att laetrile inte är effektivt mot cancer.[42] Forskningen om dess potential fortsätter dock, inklusive en nyligen studie som antyder att amygdalin kan stoppa metastas av njurcancerceller.[43]  

Visste du att? Inom det växande området för alternativa bränslekällor är aprikosen en stigande stjärna. Metylestrar av aprikoskärnolja kan tillsättas till dieselbränsle för att förbättra motorprestanda och skapa renare utsläpp.[44]  

Frågor om aprikoskärnolja

Vad ska jag leta efter i en aprikoskärnolja? Orraffinerad, kallpressad aprikoskärnolja innehåller den bästa profilen av näringsämnen och fetter. Den bör vara mellangul i färgen och ha en starkare nötaktig doft än en raffinerad olja. En raffinerad olja är ljusare i färgen och något tunnare i konsistensen eftersom alla sediment och föroreningar har tagits bort.  

Om jag är allergisk mot aprikoser, kan jag använda aprikoskärnolja? Aprikoskärnolja anses generellt vara hypoallergen och används på känslig hud samt som ett alternativ till mandelolja för personer som är allergiska mot nötter. Men om du är allergisk mot aprikoser, eller om du är osäker på om du har en aprikosallergi, bör aprikoskärnolja undvikas, även som en topikal produkt. Fråga en läkare om testning för aprikosallergier.  

Är det säkert att använda aprikoskärnolja på barn? Aprikoskärnolja är lätt, mild i doften och icke-irriterande, vilket gör den till ett utmärkt val för användning på barn. Om ditt barn är allergiskt mot aprikoser eller om du är osäker på om ditt barn har en aprikosallergi bör aprikoskärnolja undvikas, även som en topikal produkt. Aprikoser tillhör både björkpollensläktet och rosväxtfamiljen, som ofta är allergiframkallande grupper. Fråga en läkare om testning för aprikosallergier.  

Kan jag laga mat med aprikoskärnolja? Du kan laga mat med aprikoskärnolja. Extrakt av aprikoskärnolja är ofta en ingrediens i marsipan eller används istället för bittermandelolja. Den hela oljan används inte ofta i matlagning eftersom den ätbara varianten av söt aprikoskärnolja har kort hållbarhet. Aprikoskärnolja som är beredd för kosmetiskt bruk innehåller fler antioxidanter för att förlänga hållbarheten, men den är inte avsedd för konsumtion.  

Hur lång är hållbarheten för aprikoskärnolja? Om den förvaras under rätt förhållanden håller aprikoskärnolja i ungefär sex månader till ett år. Antioxidanter som vitaminerna C och E tillsätts i aprikoskärnolja som används i kosmetika eller massageolja för att skydda den mot oxidativ stress som uppstår när oljan börjar bli härsken, vilket förlänger dess hållbarhet. Aprikoskärnolja bör förvaras svalt eftersom den bryts ner vid högre temperaturer.  

Varning och överväganden Aprikoser tillhör en grupp livsmedel som kan orsaka oral allergisyndrom.[45] De andra livsmedlen i denna grupp av björkpollenlivsmedel är äpplen, mandlar, morötter, selleri, körsbär, hasselnötter, kiwi, persikor, päron och plommon.[46]

Om du får en reaktion på någon av dessa livsmedel, rådfråga din läkare innan du gör aprikoskärnolja till en regelbunden del av din kost eller kosmetiska rutin. Konsumera inte råa aprikoskärnor. Mängden amygdalin i aprikoskärnor varierar kraftigt, och mängden cyanid som frigörs från amygdalin kan vara dödlig.
