Acerca de los aceites botánicos

El uso de aceites botánicos se remonta a miles de años, con raíces en culturas tan diversas como los antiguos sumerios, chinos y el Imperio Romano.[1] Los aceites botánicos se preparan a partir de la planta entera, preservando su aroma, ingredientes activos principales y la esencia de la planta. Los aceites botánicos hechos de diversas plantas se han usado a lo largo de la historia para honrar a los dioses,[2] preparar cuerpos para funerales,[3] preservar la belleza, ayudar con la higiene y tratar una amplia variedad de condiciones médicas. Las instrucciones para la preparación y uso de plantas como medicina están catalogadas en las obras de Dioscórides, De materia medica[4], ya en el primer siglo. La tecnología moderna ha permitido identificar y estudiar las partes activas de las plantas por su papel en la salud y su utilidad contra diversas condiciones médicas. El valor de los aceites botánicos ha resistido la prueba del tiempo.  

Las propiedades del aceite de oliva

De todos los aceites botánicos, el aceite de oliva es el más omnipresente en la dieta y la literatura sobre salud. Sus usos medicinales comenzaron con Hipócrates, quien usaba aceite de oliva para afecciones de la piel y como base para ungüentos de todo tipo.[5]

El olivo ocupa un lugar profundamente venerado en la historia. En la mitología griega, Zeus prometió Ática al dios o diosa que trajera al pueblo griego el invento más útil.[6]

El regalo de Poseidón, descrito alternativamente como el caballo[7] o agua salada, fue rechazada en favor del regalo de Atenea del olivo. La ciudad fue renombrada Atenas y el olivo asumió un lugar destacado en la alimentación, la medicina y la producción material de la ciudad.[8]

El premio por ganar las primeras competiciones olímpicas, que se celebraron en Atenas, no era una medalla, sino una rama de olivo trenzada en una corona.[9]

El olivo y el aceite de oliva se mencionan a lo largo de la Biblia. En la historia de Noé y el gran diluvio, la paloma regresa al Arca llevando una rama de olivo, y los aceites usados para ungir y sanar a las personas en la Biblia están hechos de aceitunas.[10]

Fueron los misioneros franciscanos quienes trajeron el olivo a California. Los robustos olivares sobrevivieron donde la Misión San Fernando cayó en ruinas. Permanecen en gran medida en el norte de California, donde el costo de la tierra es menor y no son desplazados por cultivos de uva más rentables o por la construcción de viviendas.[11]

Tipos de aceitunas

La aceituna, al igual que el durazno y la almendra, es un drupa: una fruta envuelta en una piel que contiene una semilla dura.[12] La popularidad de la aceituna, cuyo nombre botánico es Olea Europa, ha inspirado cientos de variedades. Se cruzan diferentes tipos para adaptarse a la temporada de crecimiento y al clima, como ocurre con la mayoría de las frutas, pero las aceitunas inspiran refinamiento como una delicadeza, al igual que las uvas se cultivan para variedades de vino.

Las plantas se seleccionan por el contenido de polifenoles y compuestos aromáticos. Estas características, junto con el grado de madurez en que se recogen las aceitunas, son los principales determinantes del sabor, la estabilidad y el rendimiento del aceite.[13]  

Nutrientes

El aceite de oliva es la base de la bien investigada dieta mediterránea. Todas sus calorías provienen de sus grasas beneficiosas, incluidos los omega 9, omega 3 y principalmente, omega 6. Las grasas monoinsaturadas son las más beneficiosas para la salud, y del aceite dietético, el aceite de oliva es la fuente más rica. Específicamente, el aceite de oliva tiene hasta un 77% de ácidos grasos monoinsaturados oleico y palmitoleico, 14% de ácidos saturados palmítico y esteárico y 9%[14] linoleico y linolénico poliinsaturados[15] ácidos grasos.[16]

El ácido linoleico, abundante en el aceite de oliva, es un ácido graso omega-6. Aunque los ácidos grasos omega-3, como el ácido linolénico, son más conocidos por sus beneficios para la salud, la dieta y la salud de la piel y el cabello requieren un equilibrio de ácidos grasos omega-6 y omega-3.

La dieta americana tiende a contener una gran cantidad de omega-6, que pueden convertirse en ácido araquidónico inflamatorio, especialmente cuando su fuente es la carne. Las fuentes vegetales de ácidos grasos omega-6 se convierten en ácido gamma-linolénico, que es antiinflamatorio, antes de convertirse en ácido araquidónico.

La dieta mediterránea, que es bien reconocida como un medio efectivo para combatir las enfermedades cardíacas, es rica en fuentes vegetales de omega-6, incluido el aceite de oliva.[17] Además de los ácidos grasos, el aceite de oliva contiene nutrientes liposolubles como la vitamina E, principalmente en forma del potente antioxidante alfa-tocoferol, y la vitamina K. También se encuentran varios minerales en el aceite de oliva, incluyendo calcio, hierro, potasio y sodio, todos en cantidades bastante pequeñas.[18] El aceite de oliva no solo no contiene colesterol, sino que es una buena fuente de esteroles vegetales, que se ha demostrado que disminuyen el colesterol.[19]

Se necesitan mejores estudios clínicos para determinar si el cambio en el colesterol que proviene del consumo de alimentos ricos en esteroles vegetales previene muertes por enfermedades cardíacas, pero se ha demostrado que una dieta rica en fitoesteroles mejora el LDL, el tipo de colesterol identificado como factor de riesgo para enfermedades cardíacas.[20] 

Preparación del aceite de oliva

Las aceitunas se han recogido tradicionalmente a mano, que es la forma más segura de proteger tanto la aceituna como el árbol en sí. Las técnicas modernas que utilizan palos o máquinas para sacudir las aceitunas de los árboles pueden ser más rápidas y rentables, pero a menudo magullan la fruta, comprometiendo el sabor. La recolección de aceitunas puede ocurrir más temprano en la temporada cuando la aceituna está pasando de su color verde a un tono púrpura, o más tarde en la temporada, una vez que la aceituna se ha vuelto púrpura, o al final de la temporada, cuando la aceituna se ha vuelto completamente negra.[21]

El fruto de la aceituna es muy alto en oleuropeína, un compuesto intensamente amargo, y mucho menos azucarado que otras drupas. Aunque la oleuropeína es segura, es totalmente desagradable al paladar. Las aceitunas deben curarse antes de poder comerse enteras. Esto se logra remojando o empacando las aceitunas en sal, agua salada, agua o lejía. El proceso de curado elimina la amargura del fruto y deja un fruto firme y carnoso.[22]  

Prensado en frío

El abundante aceite presente en la aceituna no proviene de la semilla, sino del fruto mismo. Solo alrededor del 1% del aceite proviene del hueso.[23] Para extraer el aceite, las aceitunas se lavan y luego se prensan bajo presión mecánica hasta obtener una pasta. Esto rompe la pulpa del fruto, liberando los aceites. Luego, la pasta se revuelve o malaxea para permitir que las pequeñas gotas de aceite formen gotas más grandes, y luego se centrifuga para separar el aceite. Esta separación solía realizarse con prensas, comunes en la producción de otros aceites, pero muy pocos aceites de oliva todavía se recolectan de esta manera.  

Recolección moderna del aceite

La mayoría de los procesos modernos para recolectar aceite de oliva usan centrifugadoras. La primera centrifugación elimina el aceite de la pasta húmeda de aceitunas malaxadas. La segunda centrifugación se realiza a mayor velocidad y elimina el agua y otros sólidos del aceite. Luego, el aceite se deja reposar para que la gravedad elimine las impurezas restantes.

Se puede usar un paso final de filtración para crear el aceite terminado.[24] Los aceites que se filtran generalmente lo hacen a través de papel fino o tierra de diatomeas.[25] La filtración elimina más del sedimento que podría acumularse en la botella, pero también elimina algunos compuestos fenólicos beneficiosos y acorta la vida útil del aceite.[26]  

Variedades de aceite de oliva

Son estas diferencias en la preparación las que crean las variedades de aceite de oliva en el estante. El aceite de oliva extra virgen, referido como EVOO, se extrae mediante un ciclo de prensado en frío. El verdadero aceite de oliva extra virgen será etiquetado por la North American Olive Oil Association (NAOOA), un grupo independiente que prueba la calidad de los aceites de oliva.[27] El aceite de oliva virgen también proviene de una primera prensada, pero tiene una acidez más alta. Un EVOO tiene alrededor del 1% de acidez, pero un aceite de oliva virgen puede tener hasta un 2%.[28]

Otras mezclas pueden incluir Fino, que combina extra virgen con algo de aceite virgen, Light, que ha sido filtrado para eliminar la mayor parte del sedimento potencial, y Puro, que es una combinación que favorece el virgen mezclado con algunos aceites extra vírgenes.[29]  

Usos medicinales del aceite de oliva

El aceite de oliva es el único aceite vegetal que puede usarse y consumirse crudo y sin tratar.[30] Su uso como medicina fue señalado por primera vez por Hipócrates y todavía se explora vigorosamente en la ciencia moderna.  

Usos en la medicina ayurvédica y china

El aceite de oliva se toma internamente y se aplica tópicamente. Siendo una hierba occidental, no tiene una larga historia de uso tradicional en la medicina ayurvédica o tradicional china. El aceite de oliva puede usarse en masajes ayurvédicos, donde se considera un aceite calentador que fomentará el dosha Kapha, una constitución que es oleosa, fría, pesada, lenta y suave.[31]

En la medicina tradicional china, la aceituna se considera un alimento neutro y puede usarse para curar dolores de garganta, tratar laringitis o combatir la disentería.[32]  

Salud cardiovascular

El aceite de oliva es un componente importante de la dieta mediterránea, ampliamente estudiada por su capacidad para reducir eventos cardíacos[33] y la mortalidad por esos eventos cardíacos.[34] Se ha demostrado que el aceite de oliva reduce los infartos de miocardio[35], accidentes cerebrovasculares[36], hipertensión arterial[37] y fibrilación auricular.[38] Mejora el HDL - el “colesterol bueno” - mientras disminuye el LDL - el “colesterol malo” - reduciendo el riesgo de aterosclerosis.[39]

Se ha demostrado que el aceite de oliva reduce el riesgo de diabetes en personas mayores con alto riesgo de enfermedad cardiovascular y mejora la sensibilidad a la insulina en personas de mediana edad.[40] También es útil para prevenir el síndrome metabólico y la obesidad.[41]

Mientras que la dieta mediterránea en sí, rica en frutas y verduras, baja en consumo de carne y alta en cereales integrales, es beneficiosa para estas condiciones, es específicamente la suplementación con aceite de oliva virgen extra rico en polifenoles la que confiere estos beneficios.  

Salud gastrointestinal

El aceite de oliva se ha usado para el estreñimiento. Un estudio mostró que el aceite de oliva es un reemplazo efectivo del aceite mineral en el tratamiento del estreñimiento en pacientes sometidos a hemodiálisis.[42] A medida que crece el interés y la investigación sobre el microbioma y el sistema inmunológico del tracto gastrointestinal, se estudia el papel del aceite de oliva en la protección del tracto gastrointestinal. Se ha encontrado que estimula el sistema inmunológico local del intestino [43] y favorece un cambio beneficioso hacia gérmenes saludables en el intestino.[44]

Cáncer

El aceite de oliva, cuando se usa en dosis altas para complementar la dieta mediterránea, ha demostrado prevenir el cáncer de mama. Esto probablemente se deba a su contenido de vitamina E y polifenoles.[45]  

Usos tradicionales

El aceite de oliva se usa para estimular la liberación de bilis de la vesícula biliar en el protocolo popular llamado “Limpieza de la vesícula biliar”. Este protocolo no se recomienda a menos que se haya descartado la presencia de cálculos biliares, ya que podrían alojarse en el conducto biliar, causando un ataque doloroso y el riesgo de necesitar un procedimiento de emergencia.

El aceite de oliva también se ha usado como analgésico,[46] y como agente tópico para tratar el cerumen, tinnitus, heridas, psoriasis, quemaduras y estrías.[47] La hoja de olivo es un popular antiviral herbal.

Preguntas sobre el aceite de oliva

¿Qué debo buscar en un aceite de oliva? El aceite de oliva virgen extra sin refinar contendrá el mejor perfil de nutrientes y grasas. Puede ser más oscuro en color y tener un aroma más fuerte que un aceite refinado, pero el aroma y sabor general deberían ser bastante suaves. Puede formarse sedimento en la botella.  

Si soy alérgico a las aceitunas, ¿puedo usar aceite de oliva? Las alergias a las aceitunas no son comunes, pero si eres alérgico a las aceitunas, no uses aceite de oliva tópica ni internamente. El aceite de oliva se hace a partir de aceitunas enteras.  

¿Es seguro dar aceite de oliva a los niños? El aceite de oliva no suele ser alergénico y puede añadirse de forma segura a la dieta de los niños o usarse tópicamente. Si tu hijo tiene alergia a las aceitunas, no uses aceite de oliva con él. Consulta a tu médico sobre pruebas para alergias a las aceitunas.  

¿Puedo cocinar con aceite de oliva? Absolutamente, y muchas personas lo hacen. Los aceites de oliva extra virgen humean a temperaturas bastante bajas, por lo que son mejores para platos fríos o recetas preparadas con poco calor. El aceite de oliva virgen es bueno para cocinar a temperaturas bajas, pero es más estable al calor que un EVOO. Los fenoles saludables del aceite de oliva se descomponen con el calor, por lo que para beneficios de salud es mejor usarlos en aderezos para ensaladas o recetas que no se preparen con calor.  

¿Cuál es la vida útil del aceite de oliva? Guardado bajo condiciones adecuadas, el aceite de oliva dura hasta dos años. El alto contenido de vitamina E del aceite de oliva en realidad ayuda a protegerlo del estrés oxidativo que se forma cuando el aceite comienza a enranciarse, extendiendo su vida útil. El aceite de oliva debe mantenerse en condiciones frescas, ya que se descompone a temperaturas altas. Se ha sugerido que los aceites que se solidifican al dejarlos en el refrigerador son de buena calidad. Esta prueba realmente mide el contenido de grasa saturada en el aceite, ya que todas las grasas saturadas se solidifican al enfriarse. La cantidad de grasa saturada depende del tipo de oliva usada, no de la frescura del aceite.  

¿Voy a aumentar de peso por las calorías del aceite de oliva? La mayoría de los estudios muestran que la pérdida de peso es el resultado de un mayor consumo de aceitunas y aceites de oliva en la dieta. Como alimento denso en nutrientes, puede ayudarte a sentirte lleno más rápido, reemplazando alimentos con más carbohidratos que en general tienen menos nutrientes. 

Precauciones y consideraciones

El aceite de oliva extra virgen frecuentemente se encuentra preparado fraudulentamente. Puede estar adulterado con aceites más baratos y más alergénicos, como aceites de soja, maíz o frutos secos. Si tienes alergias alimentarias a alguno de estos aditivos comunes, compra aceite de oliva localmente de una fuente confiable que pueda identificar al productor y garantizar la pureza.
