Sobre Óleos Botânicos

O uso de óleos botânicos pode ser rastreado há milhares de anos, com raízes em culturas tão diversas quanto os antigos sumérios, chineses e o Império Romano.[1] Óleos botânicos são preparados a partir da planta inteira, preservando seu aroma, principais ingredientes ativos e a essência da planta. Óleos botânicos feitos de várias plantas foram usados ao longo da história para honrar deuses,[2] preparar corpos para funerais,[3] preservar a beleza, auxiliar na higiene e tratar uma ampla variedade de condições médicas. Instruções para a preparação e uso de plantas como remédio estão catalogadas nas obras de Dioscórides, De materia medica[4], lá no primeiro século. A tecnologia moderna permitiu que as partes ativas das plantas fossem identificadas e estudadas por seu papel na saúde e sua utilidade contra várias condições médicas. O valor dos óleos botânicos resistiu ao teste do tempo.  

As Propriedades do Azeite de Oliva

De todos os óleos botânicos, o azeite de oliva é o mais onipresente na dieta e na literatura de saúde. Seus usos medicinais começaram com Hipócrates, que usava azeite de oliva para condições de pele e como base para pomadas de todos os tipos.[5]

A oliveira ocupa um lugar profundamente reverenciado na história. Na mitologia grega, Zeus prometeu a Ática ao deus ou deusa que trouxesse ao povo grego a invenção mais útil.[6]

O presente de Poseidon, alternadamente descrito como o cavalo[7] ou água salgada, foi rejeitada em favor do presente de Atena, a oliveira. A cidade foi renomeada Atenas e a oliveira assumiu um lugar de destaque na alimentação, medicina e produção material da cidade.[8]

O prêmio por vencer as primeiras competições olímpicas, que foram realizadas em Atenas, não era uma medalha, mas um ramo de oliveira torcido em uma coroa.[9]

A oliveira e o óleo de azeitonas são mencionados em toda a Bíblia. Na história de Noé e o grande dilúvio, a pomba retorna à Arca carregando um ramo de oliveira, e os óleos usados para ungir e curar indivíduos ao longo da Bíblia são feitos de azeitonas.[10]

Foram os missionários franciscanos que trouxeram a oliveira para a Califórnia. Os robustos olivais sobreviveram onde a Missão San Fernando caiu em ruínas. Eles permanecem em grande parte no Norte da Califórnia, onde o custo da terra é menor e não são expulsos pelas culturas de uva mais lucrativas ou pela habitação.[11]

Tipos de Azeitonas

A azeitona, assim como o pêssego e a amêndoa, é uma drupa - uma fruta envolta em uma casca e contendo uma semente dura.[12] A popularidade da azeitona, cujo nome botânico é Olea Europa, inspirou centenas de variedades. Vários tipos são cruzados para se adaptar à estação de crescimento e ao clima, como ocorre com a maioria das frutas, mas as azeitonas inspiram refinamento como uma iguaria, assim como as uvas são cultivadas para variedades de vinho.

As plantas são selecionadas pelo conteúdo de polifenóis e compostos aromáticos. Essas características, junto com o grau de maturação em que as azeitonas são colhidas, são os principais determinantes do sabor, estabilidade e rendimento do óleo.[13]  

Nutrientes

O azeite é a base da bem pesquisada dieta mediterrânea. Todas as suas calorias vêm de suas gorduras benéficas, incluindo ômega 9, ômega 3 e principalmente ômega 6. As gorduras monoinsaturadas são as mais benéficas para a saúde, e entre os óleos alimentares, o azeite é a fonte mais rica. Especificamente, o azeite possui até 77% de ácidos graxos monoinsaturados oleico e palmitoleico, 14% de ácidos saturados palmítico e esteárico e 9%[14] linoleico e linolênico poli-insaturados[15] ácidos graxos.[16]

O ácido linoleico, abundante no azeite, é um ácido graxo ômega-6. Embora os ácidos graxos ômega-3, como o ácido linolênico, sejam mais conhecidos por seus benefícios à saúde, a dieta e a saúde da pele e do cabelo requerem um equilíbrio entre os ácidos graxos ômega-6 e ômega-3.

A dieta americana tende a conter uma grande quantidade de ômega-6, que pode se converter em ácido araquidônico inflamatório, especialmente quando a fonte é carne. Fontes vegetais de ácidos graxos ômega-6 se convertem em ácido gama-linolênico, que é anti-inflamatório, antes de se tornarem ácido araquidônico.

A dieta mediterrânea, amplamente reconhecida como um meio eficaz de combater doenças cardíacas, é rica em fontes vegetais de ômega-6, incluindo o azeite.[17] Além dos ácidos graxos, o azeite contém nutrientes lipossolúveis como a vitamina E, principalmente na forma do potente antioxidante alfa-tocoferol, e a vitamina K. Vários minerais também são encontrados no azeite, incluindo cálcio, ferro, potássio e sódio, todos em quantidades relativamente pequenas.[18] O azeite não contém colesterol e é uma boa fonte de esteróis vegetais, que têm demonstrado diminuir o colesterol.[19]

São necessários melhores estudos clínicos para determinar se a mudança no colesterol causada pelo consumo de alimentos ricos em esteróis vegetais previne mortes por doenças cardíacas, mas foi demonstrado que uma dieta rica em fitosteróis melhora o LDL, o tipo de colesterol identificado como fator de risco para doenças cardíacas.[20] 

Preparação do Azeite

Azeitonas tradicionalmente são colhidas à mão, que é a maneira mais segura de proteger tanto a azeitona quanto a própria árvore. Técnicas modernas que usam varas ou máquinas para sacudir as azeitonas das árvores podem ser mais rápidas e lucrativas, mas frequentemente machucam a fruta, comprometendo o sabor. A colheita das azeitonas pode acontecer mais cedo na temporada, quando a azeitona está mudando de sua cor verde para um tom roxo, ou mais tarde na temporada, quando a azeitona já está roxa, ou no final da temporada, quando a azeitona está completamente preta.[21]

O fruto da azeitona é muito rico em oleuropeína, um composto intensamente amargo, e muito menos açucarado que outras drupas. Embora a oleuropeína seja segura, é totalmente intragável. As azeitonas devem ser curadas antes de serem consumidas inteiras. Isso é feito mergulhando ou armazenando as azeitonas em sal, água salgada, água ou lixívia. O processo de cura remove o amargor do fruto e deixa a fruta carnuda e firme.[22]  

Prensagem a Frio

O óleo abundante presente na azeitona não vem da semente, mas do próprio fruto. Apenas cerca de 1% do óleo vem do caroço.[23] Para extrair o óleo, as azeitonas são lavadas e depois prensadas sob pressão mecânica até formar uma pasta. Isso quebra a polpa da fruta, liberando os óleos. A pasta é então mexida, ou malaxada, para permitir que as pequenas gotas de óleo formem gotas maiores, e depois centrifugada para separar o óleo. Essa separação costumava ser feita com prensas, comuns na produção de outros óleos, mas muito poucos azeites ainda são coletados dessa forma.  

Coleta Moderna do Óleo

A maioria dos processos modernos para coleta do azeite usa centrífugas. A primeira rotação na centrífuga remove o óleo da pasta úmida das azeitonas malaxadas. A segunda centrifugação é feita em velocidade maior e remove a água e outros sólidos do óleo. O óleo é então deixado para repousar, permitindo que a gravidade remova as impurezas restantes.

Uma etapa final de filtração pode ser usada na criação do óleo acabado.[24] Os óleos filtrados geralmente passam por filtros de papel fino ou terra diatomácea.[25] A filtração remove mais dos sedimentos que podem se acumular na garrafa, mas também elimina alguns compostos fenólicos benéficos e reduz a vida útil do óleo.[26]  

Variedades de Azeite de Oliva

São essas nuances de preparação que criam as variedades de azeite de oliva nas prateleiras. O azeite extra virgem, referido como EVOO, é extraído por meio de um ciclo de prensagem a frio. O verdadeiro azeite extra virgem será rotulado pela North American Olive Oil Association (NAOOA), um grupo independente que testa a qualidade dos azeites.[27] O azeite virgem também é da primeira prensagem, mas possui uma acidez maior. Um EVOO tem cerca de 1% de acidez, mas um azeite virgem pode ter até 2%.[28]

Outras misturas podem incluir Fino, que combina extra-virgem com um pouco de óleo virgem, Light, que foi filtrado para remover a maior parte dos sedimentos potenciais, e Puro, que é uma combinação que favorece o óleo virgem misturado com um pouco de extra-virgem.[29]  

Usos Medicinais do Azeite de Oliva

O azeite de oliva é o único óleo vegetal que pode ser usado e consumido cru e não tratado.[30] Seu uso como medicamento foi inicialmente registrado por Hipócrates e ainda é amplamente estudado na ciência moderna.  

Usos na Medicina Ayurvédica e Chinesa

O azeite de oliva é consumido internamente e aplicado topicamente. Sendo uma erva ocidental, não possui uma longa história de uso tradicional na medicina ayurvédica ou na medicina tradicional chinesa. O azeite de oliva pode ser usado na massagem ayurvédica, onde é considerado um óleo aquecedor que estimula o dosha Kapha, uma constituição oleosa, fria, pesada, lenta e suave.[31]

Na medicina tradicional chinesa, a azeitona é considerada um alimento neutro e pode ser usada para curar dores de garganta, tratar laringite ou combater disenteria.[32]  

Saúde Cardiovascular

O azeite de oliva é um componente importante da dieta mediterrânea, amplamente estudada por sua capacidade de reduzir eventos cardíacos[33] e a mortalidade decorrente desses eventos cardíacos.[34] O azeite de oliva demonstrou reduzir infartos do miocárdio[35], acidentes vasculares cerebrais[36], hipertensão arterial[37] e fibrilação atrial.[38] Ele melhora o HDL - o “colesterol bom” - enquanto diminui o LDL - o “colesterol ruim” - reduzindo o risco de aterosclerose.[39]

O azeite de oliva demonstrou reduzir o risco de diabetes em idosos com alto risco de doença cardiovascular e melhorar a sensibilidade à insulina em pessoas de meia-idade.[40] Também é útil para prevenir a síndrome metabólica e a obesidade.[41]

Embora a própria dieta mediterrânea, rica em frutas e vegetais, baixa em consumo de carne e alta em grãos integrais, seja benéfica para essas condições, é especificamente a suplementação com azeite de oliva extra virgem rico em polifenóis que confere esses benefícios.  

Saúde Gastrointestinal

O azeite de oliva tem sido usado para constipação. Um estudo mostrou que o azeite de oliva é um substituto eficaz para o óleo mineral no tratamento da constipação em pacientes submetidos à hemodiálise.[42] À medida que o interesse e a pesquisa sobre o microbioma e o sistema imunológico do trato gastrointestinal se expandem, o azeite de oliva está sendo estudado por seu papel na proteção do trato gastrointestinal. Foi constatado que ele estimula o sistema imunológico local do intestino [43] e apoia uma mudança benéfica em direção a germes saudáveis no intestino.[44]

Câncer

O azeite de oliva, quando usado em doses elevadas para complementar a dieta mediterrânea, demonstrou prevenir o câncer de mama. Isso provavelmente se deve ao seu conteúdo de vitamina E e polifenóis.[45]  

Usos Tradicionais

O azeite de oliva é usado para estimular a liberação de bile da vesícula biliar no protocolo popular chamado “Limpeza da Vesícula Biliar”. Este protocolo não é recomendado a menos que a presença de cálculos biliares tenha sido descartada, pois eles podem ficar presos no ducto biliar, causando uma crise dolorosa e risco de necessidade de procedimento de emergência.

O azeite de oliva também tem sido usado como analgésico,[46] e como agente tópico para tratar cera de ouvido, zumbido, feridas, psoríase, queimaduras e estrias.[47] A folha de oliveira é uma erva antiviral popular.

Perguntas sobre azeite de oliva

O que devo procurar em um azeite? O azeite de oliva extra virgem não refinado conterá o melhor perfil de nutrientes e gorduras. Pode ser mais escuro e ter um aroma mais forte do que um óleo refinado, mas o aroma e o sabor geral ainda devem ser relativamente suaves. Pode haver sedimentos que se formam na garrafa.  

Se eu for alérgico a azeitonas, posso usar azeite de oliva? Alergias a azeitonas não são comuns, mas se você for alérgico a azeitonas, não use azeite de oliva topicamente ou internamente. O azeite de oliva é feito de azeitonas inteiras.  

É seguro dar azeite de oliva para crianças? O azeite de oliva geralmente não é alergênico e pode ser adicionado com segurança à dieta das crianças ou usado topicamente. Se seu filho tiver alergia a azeitonas, não use azeite de oliva com ele. Pergunte ao seu médico sobre testes para alergia a azeitonas.  

Posso cozinhar com azeite de oliva? Absolutamente, e muitas pessoas o fazem. Os azeites extra-virgens fumegam em temperaturas relativamente baixas, por isso são melhores para pratos frios ou receitas preparadas com pouco calor. O azeite virgem é bom para cozimento em temperaturas mais baixas, mas é mais estável ao calor do que o EVOO. Os fenóis saudáveis do azeite se degradam com o calor, então para benefícios à saúde eles são melhores em molhos para salada ou receitas que não envolvam calor.  

Qual é a validade do azeite de oliva? Mantido sob condições adequadas de armazenamento, o azeite de oliva dura até dois anos. O alto teor de vitamina E do azeite de oliva na verdade ajuda a protegê-lo do estresse oxidativo que ocorre quando o óleo começa a ficar rançoso, prolongando sua validade. O azeite deve ser mantido em local fresco, pois se deteriora em temperaturas elevadas. Sugere-se que óleos que solidificam quando deixados na geladeira são de boa qualidade. Esse teste mede realmente o teor de gordura saturada no óleo, já que todas as gorduras saturadas solidificam ao esfriar. A quantidade de gordura saturada depende do tipo de oliva usada, não da frescura do óleo.  

Vou ganhar peso com as calorias do azeite de oliva? A maioria dos estudos mostra que a perda de peso é resultado de mais azeite e óleos de oliva na dieta. Como um alimento denso em nutrientes, ele pode ajudar você a se sentir satisfeito mais rápido, substituindo alimentos com mais carboidratos que são, no geral, menos nutritivos. 

Cuidados e Considerações

O azeite de oliva extra-virgem frequentemente é encontrado sendo preparado de forma fraudulenta. Pode ser adulterado com óleos mais baratos e mais alergênicos, como óleo de soja, milho ou de nozes. Se você tem alergia alimentar a algum desses aditivos comuns, compre azeite de oliva localmente de uma fonte confiável que possa identificar o produtor e garantir a pureza.
