Informazioni sugli Oli Botanici

L'uso degli oli botanici può essere fatto risalire a migliaia di anni fa, con radici in culture diverse come gli antichi Sumeri, i Cinesi e l'Impero Romano.[1] Gli oli botanici sono preparati dalla pianta intera, preservandone il profumo, i principali ingredienti attivi e l'essenza della pianta. Gli oli botanici ricavati da varie piante sono stati usati nel corso della storia per onorare gli dei,[2] preparare i corpi per i funerali,[3] preservare la bellezza, aiutare l'igiene e trattare una vasta gamma di condizioni mediche. Le istruzioni per la preparazione e l'uso delle piante come medicina sono catalogate nelle opere di Dioscoride, De materia medica[4], già nel primo secolo. La tecnologia moderna ha permesso di identificare e studiare le parti attive delle piante per il loro ruolo nella salute e la loro utilità contro varie condizioni mediche. Il valore degli oli botanici ha superato la prova del tempo.  

Le Proprietà dell'Olio d'Oliva

Di tutti gli oli botanici, l'olio d'oliva è il più diffuso nella dieta e nella letteratura sulla salute. I suoi usi medicinali iniziarono con Ippocrate, che usava l'olio d'oliva per le condizioni della pelle e come base per unguenti di ogni tipo.[5]

L'albero d'ulivo occupa un posto profondamente venerato nella storia. Nella mitologia greca, Zeus promise l'Attica al dio o alla dea che avesse portato al popolo greco l'invenzione più utile.[6]

Il dono di Poseidone, descritto alternativamente come il cavallo[7] o acqua salata, fu rifiutata a favore del dono di Atena dell'albero d'ulivo. La città fu rinominata Atene e l'ulivo assunse un posto di rilievo nell'alimentazione, nella medicina e nella produzione materiale della città.[8]

Il premio per la vittoria nelle prime competizioni olimpiche, che si tenevano ad Atene, non era una medaglia, ma un ramo d'ulivo intrecciato in una corona.[9]

L'olivo e l'olio di oliva sono menzionati in tutta la Bibbia. Nella storia di Noè e del grande diluvio, la colomba torna all'Arca portando un ramo d'ulivo, e gli oli usati per ungere e guarire le persone in tutta la Bibbia sono fatti di olive.[10]

Furono i missionari francescani a portare l'olivo in California. I robusti uliveti sopravvissero dove la Missione San Fernando cadde in rovina. Rimangono principalmente nel Nord della California, dove il costo della terra è più basso e non vengono sostituiti dalle colture di uva più redditizie o dalle abitazioni.[11]

Tipi di Olive

L'oliva, come la pesca e la mandorla, è una drupa - un frutto avvolto da una buccia e contenente un seme duro.[12] La popolarità dell'oliva, il cui nome botanico è Olea Europa, ha ispirato centinaia di varietà. Vari tipi sono incrociati per adattarsi alla stagione di crescita e al clima, come avviene per la maggior parte dei frutti, ma le olive ispirano raffinatezza come una prelibatezza, proprio come l'uva viene coltivata per le varietà di vino.

Le piante sono selezionate in base al contenuto di polifenoli e composti aromatici. Queste caratteristiche, insieme al grado di maturazione con cui le olive vengono raccolte, sono i principali fattori determinanti del sapore, della stabilità e della resa dell'olio.[13]  

Nutrienti

L'olio d'oliva è la base della ben studiata dieta mediterranea. Tutte le sue calorie provengono dai suoi grassi benefici, inclusi omega 9, omega 3 e principalmente omega 6. I grassi monoinsaturi sono i più benefici per la salute e, tra gli oli alimentari, l'olio d'oliva è la fonte più ricca. In particolare, l'olio d'oliva contiene fino al 77% di acidi grassi monoinsaturi oleico e palmitoleico, il 14% di acidi saturi palmitico e stearico e il 9%[14] linoleico e linolenico polinsaturi[15] acidi grassi.[16]

L'acido linoleico, abbondante nell'olio d'oliva, è un acido grasso omega-6. Mentre gli acidi grassi omega-3, come l'acido linolenico, sono più noti per i loro benefici per la salute, la dieta e la salute di pelle e capelli richiedono un equilibrio tra acidi grassi omega-6 e omega-3.

La dieta americana tende a contenere una grande quantità di omega-6, che possono convertirsi in acido arachidonico infiammatorio, specialmente quando la loro fonte è la carne. Le fonti vegetali di acidi grassi omega-6 si convertono in acido gamma-linolenico, che è antinfiammatorio, prima di diventare acido arachidonico.

La dieta mediterranea, ampiamente riconosciuta come un mezzo efficace per combattere le malattie cardiache, è ricca di fonti vegetali di omega-6, incluso l'olio d'oliva.[17] Oltre agli acidi grassi, l'olio d'oliva contiene nutrienti liposolubili come la vitamina E, principalmente sotto forma del potente antiossidante alfa-tocoferolo, e la vitamina K. Nell'olio d'oliva si trovano anche diversi minerali, tra cui calcio, ferro, potassio e sodio, tutti in quantità piuttosto piccole.[18] L'olio d'oliva non solo non contiene colesterolo, ma è anche una buona fonte di steroli vegetali, che hanno dimostrato di ridurre il colesterolo.[19]

Sono necessari studi clinici migliori per determinare se la variazione del colesterolo derivante dal consumo di alimenti ricchi di steroli vegetali prevenga le morti per malattie cardiache, ma è stato dimostrato che una dieta ricca di fitosteroli migliora l'LDL, il tipo di colesterolo identificato come fattore di rischio per le malattie cardiache.[20] 

Preparazione dell'olio d'oliva

Le olive sono state tradizionalmente raccolte a mano, il modo più sicuro per proteggere sia l'oliva che l'albero stesso. Le tecniche moderne che utilizzano bastoni o macchine per scuotere le olive dagli alberi possono essere più veloci e redditizie, ma spesso danneggiano il frutto, compromettendo il sapore. La raccolta delle olive può avvenire prima nella stagione, quando l'oliva sta passando dal verde a una tonalità viola, o più tardi nella stagione, una volta che l'oliva è diventata viola, o alla fine della stagione, quando l'oliva è diventata completamente nera.[21]

Il frutto dell'oliva è molto ricco di oleuropeina, un composto intensamente amaro, e molto meno zuccherino rispetto ad altre drupe. Sebbene l'oleuropeina sia sicura, è assolutamente immangiabile. Le olive devono essere trattate prima di poter essere consumate intere. Questo si ottiene immergendo o conservando le olive in sale, acqua salata, acqua o liscivia. Il processo di trattamento elimina l'amarezza dal frutto e lascia un frutto sodo e carnoso.[22]  

Spremuto a freddo

L'olio abbondante presente nell'oliva non proviene dal seme, ma dal frutto stesso. Solo circa l'1% dell'olio proviene dal nocciolo.[23] Per estrarre l'olio, le olive vengono lavate e poi pressate sotto pressione meccanica in una pasta. Questo rompe la polpa del frutto, liberando gli oli. La pasta viene quindi mescolata, o malassata, per permettere alle piccole gocce di olio di formare gocce più grandi, e poi centrifugata per separare l'olio. Questa separazione veniva un tempo effettuata con presse, comuni nella produzione di altri oli, ma pochissimi oli d'oliva vengono ancora raccolti in questo modo.  

Raccolta moderna dell'olio

La maggior parte dei processi moderni per la raccolta dell'olio d'oliva utilizza centrifughe. La prima centrifugazione rimuove l'olio dalla pasta umida di olive malassate. La seconda centrifugazione avviene a velocità più elevata e rimuove acqua e altri solidi dall'olio. L'olio viene quindi lasciato riposare per permettere alla gravità di rimuovere le impurità residue.

Un passaggio finale di filtrazione può essere utilizzato nella creazione dell'olio finito.[24] Gli oli filtrati vengono solitamente filtrati tramite carta fine o terra di diatomee.[25] La filtrazione rimuove più sedimenti che potrebbero accumularsi nella bottiglia, ma elimina anche alcuni composti fenolici benefici e accorcia la durata di conservazione dell'olio.[26]  

Varietà di olio d'oliva

Sono queste sfumature di preparazione che creano le varietà di olio d'oliva sugli scaffali. L'olio extra vergine di oliva, chiamato EVOO, è estratto tramite un ciclo di spremitura a freddo. Il vero olio extra vergine di oliva sarà etichettato dalla North American Olive Oil Association (NAOOA), un gruppo indipendente che testa la qualità degli oli d'oliva.[27] L'olio d'oliva vergine proviene anche da una prima spremitura, ma ha un'acidità più alta. Un EVOO ha circa l'1% di acidità, ma un olio d'oliva vergine può arrivare fino al 2%.[28]

Altre miscele possono includere Fino, che combina extra vergine con un po' di olio vergine, Light, che è stato filtrato per rimuovere la maggior parte dei sedimenti potenziali, e Pure, che è una combinazione che favorisce l'olio vergine mescolato con un po' di olio extra vergine.[29]  

Usi medicinali dell'olio d'oliva

L'olio d'oliva è l'unico olio vegetale che può essere usato e consumato crudo e non trattato.[30] Il suo uso come medicinale è stato notato per la prima volta da Ippocrate ed è ancora vigorosamente esplorato nella scienza moderna.  

Usi nella medicina ayurvedica e cinese

L'olio d'oliva viene assunto internamente e applicato topicamente. Essendo un'erba occidentale, non ha una lunga storia di uso tradizionale nella medicina ayurvedica o nella medicina tradizionale cinese. L'olio d'oliva può essere utilizzato nel massaggio ayurvedico, dove è considerato un olio riscaldante che favorisce il dosha Kapha, una costituzione oleosa, fresca, pesante, lenta e liscia.[31]

Nella medicina tradizionale cinese, l'oliva è considerata un alimento neutro e può essere usata per curare il mal di gola, trattare la laringite o combattere la disenteria.[32]  

Salute cardiovascolare

L'olio d'oliva è un componente importante della dieta mediterranea, ampiamente studiata per la sua capacità di ridurre gli eventi cardiaci[33] e la mortalità da quegli eventi cardiaci.[34] L'olio d'oliva ha dimostrato di ridurre gli infarti miocardici[35], ictus[36], ipertensione[37] e fibrillazione atriale.[38] Migliora l'HDL - il “colesterolo buono” - mentre diminuisce l'LDL - il “colesterolo cattivo” - riducendo il rischio di aterosclerosi.[39]

L'olio d'oliva ha dimostrato di ridurre il rischio di diabete nelle persone anziane ad alto rischio di malattie cardiovascolari e di migliorare la sensibilità all'insulina nelle persone di mezza età.[40] È anche utile per prevenire la sindrome metabolica e l'obesità.[41]

Mentre la dieta mediterranea stessa, ricca di frutta e verdura, povera di carne e ricca di cereali integrali, è benefica per queste condizioni, è specificamente l'integrazione con olio extra vergine di oliva ricco di polifenoli che conferisce questi benefici.  

Salute gastrointestinale

L'olio d'oliva è stato usato per la stitichezza. Uno studio ha dimostrato che l'olio d'oliva è un efficace sostituto dell'olio minerale nel trattamento della stitichezza in pazienti sottoposti a emodialisi.[42] Con l'aumento dell'interesse e della ricerca sul microbioma e sul sistema immunitario del tratto gastrointestinale, l'olio d'oliva viene studiato per il suo ruolo nella protezione del tratto gastrointestinale. È stato riscontrato che stimola il sistema immunitario locale dell'intestino [43] e favorisce uno spostamento benefico verso germi sani nell'intestino.[44]

Cancro

L'olio d'oliva, quando usato in dosi elevate per integrare la dieta mediterranea, ha dimostrato di prevenire il cancro al seno. Ciò è probabilmente dovuto al suo contenuto di vitamina E e polifenoli.[45]  

Usi tradizionali

L'olio d'oliva viene utilizzato per stimolare il rilascio della bile dalla cistifellea nel protocollo popolare chiamato “Gall Bladder Flush”. Questo protocollo non è raccomandato a meno che la presenza di calcoli biliari non sia stata esclusa, poiché potrebbero incastrarsi nel dotto biliare, causando un attacco doloroso e rischiando la necessità di un intervento d'emergenza.

L'olio d'oliva è stato anche usato come analgesico,[46] e come agente topico per trattare il cerume, l'acufene, le ferite, la psoriasi, le ustioni e le smagliature.[47] La foglia di ulivo è un popolare antivirale a base di erbe.

Domande sull'olio d'oliva

Cosa dovrei cercare in un olio d'oliva? L'olio d'oliva extra vergine non raffinato contiene il miglior profilo di nutrienti e grassi. Può essere di colore più scuro e avere un aroma più intenso rispetto a un olio raffinato, ma l'aroma e il sapore complessivi dovrebbero comunque essere abbastanza delicati. Potrebbe formarsi del sedimento nella bottiglia.  

Se sono allergico alle olive posso usare l'olio d'oliva? Le allergie alle olive non sono comuni, ma se sei allergico alle olive, non usare olio d'oliva né topicamente né internamente. L'olio d'oliva è fatto con olive intere.  

È sicuro dare olio d'oliva ai bambini? L'olio d'oliva tende a non essere allergenico e può essere aggiunto in sicurezza alla dieta dei bambini o usato topicamente. Se tuo figlio ha un'allergia alle olive, non usare olio d'oliva con lui. Chiedi al medico di fare test per allergie alle olive.  

Posso cucinare con l'olio d'oliva? Assolutamente sì, e molte persone lo fanno. Gli oli extra vergini di oliva fumano a temperature relativamente basse, quindi sono migliori per piatti freddi o ricette preparate con poco calore. L'olio di oliva vergine è adatto per cotture a temperature più basse, ma è più stabile al calore rispetto a un EVOO. I fenoli salutari dell'olio d'oliva si degradano con il calore, quindi per benefici salutari è meglio usarli in condimenti per insalate o ricette non cotte.  

Quanto dura l'olio d'oliva? Conservato in condizioni adeguate, l'olio d'oliva dura fino a due anni. L'alto contenuto di vitamina E dell'olio d'oliva protegge effettivamente dall'ossidazione che si forma quando l'olio inizia a irrancidire, prolungandone la durata. L'olio d'oliva dovrebbe essere conservato in ambienti freschi, poiché si degrada a temperature elevate. È stato suggerito che gli oli che si solidificano se lasciati in frigorifero sono di buona qualità. Questo test misura in realtà il contenuto di grassi saturi nell'olio, poiché tutti i grassi saturi si solidificano al raffreddamento. La quantità di grassi saturi dipende dal tipo di oliva usata, non dalla freschezza dell'olio.  

Ingrasserei per le calorie dell'olio d'oliva? La maggior parte degli studi mostra che la perdita di peso è il risultato di un maggior consumo di olive e oli d'oliva nella dieta. Essendo un alimento denso di nutrienti, può aiutarti a sentirti sazio prima, sostituendo alimenti ad alto contenuto di carboidrati che sono complessivamente meno nutrienti. 

Precauzioni e considerazioni

L'olio extra vergine di oliva è spesso trovato ad essere preparato in modo fraudolento. Può essere adulterato con oli meno costosi e più allergenici, come oli di soia, mais o frutta a guscio. Se hai allergie alimentari a uno di questi comuni additivi, acquista olio d'oliva localmente da una fonte affidabile che possa identificare il coltivatore e garantire la purezza.
