Olio di nocciolo di albicocca

Informazioni sugli oli botanici

L'uso degli oli botanici può essere fatto risalire a migliaia di anni fa, con radici in culture tanto diverse quanto gli antichi Sumeri, i Cinesi e l'Impero Romano.[1]

Gli oli botanici sono preparati dall'intera pianta, preservandone il profumo, i principali ingredienti attivi e l'essenza della pianta. Gli oli botanici ricavati da varie piante sono stati usati nel corso della storia per onorare gli dei,[2] preparare i corpi per i funerali,[3] preservare la bellezza, aiutare con l'igiene e trattare una vasta gamma di condizioni mediche. Le istruzioni per la preparazione e l'uso delle piante come medicina sono catalogate nelle opere di Dioscoride, De materia medica[4], già nel primo secolo. La tecnologia moderna ha permesso di identificare e studiare le parti attive delle piante per il loro ruolo nella salute e la loro utilità contro varie condizioni mediche. Il valore degli oli botanici ha superato la prova del tempo.  

Le proprietà delle albicocche

Sebbene l'albicocca sia originaria della Cina settentrionale, il suo nome botanico, Prunus armeniaca, le è stato dato dai Greci, che credevano fosse stata coltivata per la prima volta in Armenia. I Romani chiamarono questo frutto praecocium, che significa “precocissimo”, perché fioriva presto nella stagione e da questo nome si è evoluto “apricot”.[5]

L'olio del nocciolo di albicocca è molto simile a quello del suo prezioso cugino, la mandorla. L'olio di albicocca è frequentemente usato al posto dell'olio di mandorla amara o aggiunto all'olio di mandorla per moderare il costo di produzione, anche se questo potrebbe non essere indicato sull'etichetta.[6]  

 Tipi di albicocche

Generalmente, ci sono albicocche dolci e albicocche amare. Molte varietà di albicocche sono coltivate per diversi motivi, inclusi il periodo dell'anno in cui maturano e le diverse proprietà del frutto, come il sapore e la consistenza.[7]
Albicocche dolci e albicocche selvatiche
Le varietà coltivate - principalmente albicocche dolci e albicocche selvatiche - sono generalmente amare. Il gusto delle foglie e dei semi veniva tradizionalmente usato come guida, anche se il contenuto dei semi è stato analizzato e si è scoperto variare in grassi e nutrienti tra le cultivar.[8]
L'olio di nocciolo di albicocca dolce è usato topicamente come olio da massaggio e come additivo per saponi e prodotti per la cura della pelle. L'olio di nocciolo di albicocca dolce ha un sapore profondo e nocciolato e l'estratto viene spesso aggiunto alle ricette.[9]
Il nocciolo dell'albicocca selvatica è amaro e contiene quantità variabili di amigdalina, a seconda della varietà,[10] così come i semi di altri membri della famiglia delle Prunus, inclusi mandorle, ciliegie e prugne. Quando l'amigdalina viene digerita, l'interazione con l'acqua e i batteri dell'intestino produce cianuro. Poiché questi componenti sono tossici o letali in dosi molto piccole, i noccioli di albicocca non dovrebbero essere mangiati a meno che non siano stati tostati.[11]  
Nutrienti
L'albicocca è coltivata in tutto il mondo per il suo sapore, valore medicinale e proprietà nutrizionali. Il frutto contiene carboidrati, vitamine A, B1 (tiamina), B3 (niacina), C, E e K, potassio, beta-carotene e folati.[12][13]
I noccioli, che generalmente non vengono mangiati interi ma usati per i loro preziosi oli, contengono fino al 22% di proteine alimentari. I noccioli vengono essiccati e trasformati in farina, ricca di aminoacidi essenziali e fibre.[14]
Le varietà dolci di albicocca contengono dal 40 al 50% di olio, più del nocciolo delle varietà amare. I grassi presenti nel nocciolo di albicocca sono principalmente i grassi insaturi acido linoleico e acido oleico, che è un olio emolliente ed emulsionante comune in molti prodotti cosmetici.[15].[16]
L'acido linoleico, un prezioso acido grasso insaturo omega-6, è una parte importante di una dieta sana ricca di piante.[17] Il nocciolo di albicocca ha somiglianze con le mandorle, inclusi i benefici contenuti di grassi, fibre e proteine. Uno studio in Turchia ha esaminato l'uso della farina di albicocca per sostituire il grasso nelle ricette di biscotti per migliorare la qualità dei grassi e aumentare il contenuto di fibre dei biscotti. La farina di nocciolo di albicocca ha prodotto un biscotto più duro che aveva qualche difficoltà a mantenere la forma, ma i partecipanti hanno trovato i biscotti gradevoli quando il 10-20% del grasso è stato sostituito dalla farina di nocciolo di albicocca.[18]
La farina è usata in una torta tradizionale servita alle cerimonie di matrimonio in India.[19] Il contenuto di amygdalina delle albicocche e il loro sapore forte le rendono un'opzione meno valida per i consumatori negli Stati Uniti.[20] e il loro consumo è sconsigliato in Canada.[21] 
Preparazione dell'olio di albicocca

L'albicocca è una drupa, come altri membri del genere prunus come la pesca, la prugna e la mandorla. Lo strato esterno lanuginoso si chiama esocarpo, e il frutto carnoso è il mesocarpo. Questi strati circondano un endocarpo duro e legnoso.[22] All'interno dell'endocarpo si trova il seme, o nocciolo di albicocca. L'olio di nocciolo di albicocca viene estratto da questo seme maturo.

 

 

Expeller Pressed e Cold Pressed

Expeller pressing si riferisce al processo di lenta frantumazione dei noccioli di albicocca sotto pressione meccanica, come due piastre metalliche rotanti, per rilasciare i grassi.[23]

Cold pressed significa che l'olio è stato spremuto a freddo a bassa temperatura. La bassa temperatura previene il deterioramento dell'olio. L'olio di nocciolo di albicocca prodotto con il processo a freddo ha un colore giallo medio. Un olio di colore più chiaro sarà prodotto se è stato raffinato.[24] Sono stati esplorati diversi metodi per migliorare l'estrazione dell'olio dal prezioso nocciolo di albicocca.[25] 

In India, l'antico metodo di raccolta dell'olio è un processo laborioso eseguito a mano. Sono state implementate tecniche modernizzate che producono più olio, costano meno e richiedono meno sforzo ai lavoratori che producono l'olio.[26] Tuttavia, questa modernizzazione sta effettivamente aumentando la domanda di olio spremuto a mano perché il profumo distintivo dell'olio di albicocca è molto più forte quando raccolto con il metodo antico, e si ritiene che questo rappresenti un olio più sicuro e più potente.[27]

Estrazione per distillazione

L'estrazione per distillazione significa esporre una pianta ad acqua o vapore per rompere il materiale vegetale e rilasciare l'olio volatile o essenziale. Gli oli vengono raffreddati e condensati per la raccolta.[28] L'estrazione per distillazione viene usata per estrarre oli volatili, inclusa l'amygdalina dai noccioli di albicocca. L'amygdalina viene distillata dalla torta di noccioli rimasta dopo l'estrazione dell'olio. Le torte vengono riscaldate per rilasciare l'olio, poi raffreddate e vengono aggiunti semi freschi per fornire abbastanza dell'enzima emulsina per idrolizzare l'amygdalina. Se la temperatura è troppo alta durante questa reazione, l'emulsina si degrada e l'amygdalina non può essere rilasciata.[29]

Le fonti commerciali di estratto di mandorla possono essere fatte da albicocche, poiché il contenuto di amygdalina delle albicocche è inferiore e sono meno costose e più disponibili negli Stati Uniti rispetto alle mandorle amare. Poiché producono meno amygdalina, il sapore è meno forte rispetto a quando l'amygdalina è estratta dalle mandorle amare.[30] 

Usi medicinali dell'olio di nocciolo di albicocca

Usi dell'olio di albicocca Nella medicina ayurvedica e cinese.  L'olio di nocciolo di albicocca viene assunto internamente e applicato topicamente. Nell'antica medicina cinese e nella medicina ayurvedica (il sistema medico tradizionale dell'India) si ritiene che l'olio di nocciolo di albicocca combatta il cancro e aiuti nelle condizioni di pelle secca, inclusi eczema, psoriasi e forfora.

Sia la medicina cinese che quella ayurvedica considerano l'olio di semi di albicocca efficace per liberare condizioni dei polmoni, come la congestione.

L'olio può essere assunto internamente o usato nel massaggio per stimolare la pulizia dei polmoni.[31] L'olio di nocciolo di albicocca nella medicina ayurvedica si ritiene aiuti a eliminare tossine, sale e acido urico dal corpo, aiutando condizioni infiammatorie tra cui artrite, mal di schiena[32] e ritenzione di liquidi. Nella medicina cinese, l'olio di nocciolo di albicocca è usato per la stitichezza.  

Cosmetici L'olio dei noccioli di albicocca si assorbe bene nella pelle e la ammorbidisce, rendendolo una scelta principale per cosmetici e profumi. Le stesse qualità lo rendono popolare per la somministrazione di farmaci.[33]  

Massaggio Usato topicamente, l'olio di nocciolo di albicocca è leggermente oleoso, aiutando la mano del massaggiatore a scivolare sulla pelle, ma si assorbe bene. Il costo è più alto rispetto a quello dell'olio di mandorle, ma viene spesso usato come sostituto nei clienti del massaggio allergici alla frutta secca.[34]

Pelle La tossicità dell'amigdalina nei noccioli di albicocca amara può aiutare a combattere condizioni in cui le cellule crescono eccessivamente, come le placche che si formano nella psoriasi. Ci sono alcune ricerche che supportano la capacità dell'olio di nocciolo di albicocca amara di indurre apoptosi, o morte cellulare, nelle cellule che causano la psoriasi.[35]

La facilità con cui gli oli dei noccioli di albicocca si assorbono nella pelle è stata utilizzata anche per somministrare farmaci analgesici.[36] Non ci sono studi sull'uomo che supportino l'uso tradizionale dell'olio di nocciolo di albicocca per l'eczema.  

Antimicrobico Poiché gli antimicrobici farmaceutici affrontano sempre più ceppi resistenti di batteri e funghi, l'interesse per gli antimicrobici vegetali è in espansione. L'estratto del nocciolo di albicocca amara inibisce efficacemente la crescita di Candida albicans e C. glabrata, così come di Staph aureus e E. coli. Anche il nocciolo dolce è efficace contro questi, sebbene con minore potenza. Un'estrazione al metanolo di una varietà di albicocca giapponese ha mostrato buoni risultati nel combattere Helicobacter Pylori.[37]  

Salute gastrointestinale L'olio di nocciolo di albicocca è stato studiato nella medicina occidentale per il suo effetto antinfiammatorio sulla Malattia Infiammatoria Intestinale, in particolare sulla Colite Ulcerosa. In uno studio su ratti, l'olio di nocciolo di albicocca amara ha mostrato la capacità di ridurre l'infiammazione e migliorare le ulcere nella Colite Ulcerosa. Sembra che l'amigdalina nel nocciolo di albicocca abbia agito sopprimendo le cellule che guidano il processo infiammatorio.[38]  

Combattente del cancro? Laetrile, una forma semi-sintetica di amigdalina, chiamata anche vitamina B17, è stata oggetto di grande controversia[39] per il suo potenziale nel combattere il cancro. Sia la laetrile che l'amigdalina contengono mandelonitrile, che contiene cianuro. È il cianuro che dovrebbe essere in grado di uccidere le cellule tumorali. Come con l'amigdalina, quando la laetrile viene digerita, specialmente in presenza di grandi quantità di vitamina C, crea cianuro.[40] Per questo motivo si sconsiglia il consumo di noccioli di albicocca crudi. Mentre la laetrile è ancora usata come terapia contro il cancro in Messico, dove la laetrile non è semi-sintetica, ma vera amigdalina derivata interamente dai semi di albicocche amare, è vietata negli Stati Uniti per motivi di sicurezza[41].

Una revisione approfondita della ricerca ha dimostrato che il laetrile non è efficace contro il cancro.[42] Tuttavia, la ricerca sul suo potenziale continua, inclusi studi recenti che suggeriscono che l'amigdalina potrebbe fermare la metastasi delle cellule del cancro renale.[43]  

Sapevi che? Nel campo in espansione delle fonti alternative di carburante, l'albicocca è una stella nascente. Gli esteri metilici degli oli di nocciolo di albicocca possono essere aggiunti al carburante diesel per migliorare le prestazioni del motore e creare emissioni più pulite.[44]  

Domande sull'olio di albicocca

Che cosa dovrei cercare in un olio di albicocca? L'olio di albicocca non raffinato e spremuto a freddo contiene il miglior profilo di nutrienti e grassi. Dovrebbe essere di colore giallo medio e avere un aroma più intenso di nocciola rispetto a un olio raffinato. Un olio raffinato sarà più chiaro nel colore e leggermente più fluido nella consistenza, poiché tutti i sedimenti e le impurità saranno stati rimossi.  

Se sono allergico alle albicocche, posso usare l'olio di albicocca? L'olio di albicocca è generalmente considerato ipoallergenico ed è usato su pelli sensibili e come alternativa all'olio di mandorle per chi è allergico alla frutta a guscio. Tuttavia, se sei allergico alle albicocche o se non sei sicuro di esserlo, l'olio di albicocca dovrebbe essere evitato, anche come agente topico. Consulta un medico per testare eventuali allergie alle albicocche.  

È sicuro usare l'olio di albicocca sui bambini? L'olio di albicocca è leggero, dal profumo delicato e non irritante, rendendolo una scelta eccellente per l'uso sui bambini. Se il tuo bambino è allergico alle albicocche o se non sei sicuro che lo sia, l'olio di albicocca dovrebbe essere evitato, anche come agente topico. Le albicocche appartengono sia alla famiglia del polline di betulla sia alla famiglia delle rosacee, che tendono a essere gruppi allergenici. Consulta un medico per testare eventuali allergie alle albicocche.  

Posso cucinare con l'olio di albicocca? Si può cucinare con l'olio di albicocca. Gli estratti dell'olio di nocciolo di albicocca sono spesso un ingrediente nel marzapane o usati al posto dell'olio di mandorle amare. L'olio intero non è frequentemente usato in cucina perché la preparazione commestibile dell'olio di albicocca dolce ha una breve durata. Gli oli di albicocca preparati per uso cosmetico contengono più antiossidanti per aiutare a prolungarne la durata, ma non sono destinati al consumo.  

Quanto dura la conservazione dell'olio di albicocca? Conservato in condizioni adeguate, l'olio di albicocca dura circa da sei mesi a un anno. Antiossidanti come le vitamine C ed E vengono aggiunti agli oli di nocciolo di albicocca usati nei cosmetici o negli oli da massaggio per proteggerli dallo stress ossidativo che si forma quando l'olio inizia a irrancidire, prolungandone la durata. L'olio di nocciolo di albicocca dovrebbe essere conservato in condizioni fresche, poiché si deteriora a temperature più elevate.  

Avvertenze e Considerazioni Le albicocche appartengono a un gruppo di alimenti che possono causare una sindrome da allergia orale.[45] Gli altri alimenti in questo gruppo di alimenti correlati al polline di betulla sono mele, mandorle, carote, sedano, ciliegie, nocciole, kiwi, pesche, pere e prugne.[46]

Se hai una reazione a uno di questi alimenti, consulta il tuo medico prima di includere regolarmente l’olio di nocciolo di albicocca nella tua dieta o nel tuo regime cosmetico. Non consumare noccioli di albicocca crudi. La quantità di amygdalina presente nei noccioli di albicocca varia ampiamente, e la quantità di cianuro rilasciata dall’amygdalina può essere fatale.
