Olio di mandorle

Informazioni sugli Oli Botanici

L'uso degli oli botanici può essere fatto risalire a migliaia di anni fa, con radici in culture tanto diverse quanto gli antichi Sumeri, i cinesi e l'Impero Romano.[1] Gli oli botanici sono preparati dall'intera pianta, preservandone il profumo, i principali ingredienti attivi e l'essenza della pianta. Gli oli botanici ricavati da varie piante sono stati usati nel corso della storia per onorare gli dei,[2] preparare i corpi per i funerali,[3] preservare la bellezza, aiutare con l'igiene e trattare una vasta gamma di condizioni mediche. Le istruzioni per la preparazione e l'uso delle piante come medicina sono catalogate nelle opere di Dioscoride, De materia medica[4], già nel primo secolo. La tecnologia moderna ha permesso di identificare e studiare le parti attive delle piante per il loro ruolo nella salute e la loro utilità contro varie condizioni mediche.  

Le Proprietà delle Mandorle

L'antico mandorlo ha avuto una posizione onorata in molte culture. Gli alberi di mandorlo sono menzionati più volte nella Bibbia. Fiorendo all'inizio della primavera, il suo nome ebraico significa “operoso” o “vigile” ed era considerato un segno della punizione improvvisa e rapida di Dio nell'antico Israele. I cinesi vedono la mandorla come un simbolo di tristezza duratura e bellezza femminile[5].  

Tipi di Mandorle

L'olio abbondante della mandorla ha un profumo piacevolmente delicato, un colore chiaro e non ha un sapore forte[6]. Esistono due principali varietà di mandorle, dolci (Prunus dulcis) e amare (Prunus amara o amygdalus). La varietà di mandorle dolci è più utilizzata perché produce più degli oli preziosi per cui le mandorle sono conosciute e comporta un rischio minore di tossicità. La varietà di mandorle amare contiene amigdala, come anche i semi di altri membri della famiglia Prunus, inclusi ciliegie, albicocche e prugne. Quando l'amigdala viene digerita, l'interazione con l'acqua e i germi dell'intestino produce elevate quantità di acido prussico,[7] o cianuro. La mandorla amara contiene anche benzaldeide, il suo olio essenziale, che è tossico[8]. Poiché questi componenti sono tossici, o addirittura letali in dosi molto piccole, la mandorla amara non dovrebbe essere mangiata e non è venduta negli Stati Uniti.  

 

Nutrienti

La mandorla è una potenza nutrizionale. Le mandorle sono composte da circa il 21% di proteine, il 50% di grassi, il 22% di carboidrati, di cui oltre la metà è fibra, e il 5% di acqua, rendendo la farina di mandorle una scelta popolare per i diabetici.[9] Gli acidi grassi della mandorla sono principalmente grassi insaturi, con alcuni grassi saturi e senza colesterolo. In particolare, l'olio di mandorla contiene dal 4 al 9 percento di acido palmitico, dallo 0,9 al 3 percento di acido stearico, dal 50 all'86 percento di acido oleico e dal 20 al 30 percento di linoleico[10][11] acido.[12] Tra questi, l'acido palmitico e stearico sono acidi grassi saturi, ma rappresentano meno del 12 percento del totale degli acidi grassi. L'acido linoleico, abbondante nella mandorla, è un acido grasso omega-6. Sebbene gli acidi grassi omega-3 siano più noti per i loro benefici per la salute, la dieta e la salute di pelle e capelli richiedono un equilibrio tra acidi grassi omega-6 e omega-3. La dieta americana tende a contenere una grande quantità di omega-6, che può convertirsi in acido arachidonico infiammatorio, specialmente quando la loro fonte è la carne. Le fonti vegetali di acidi grassi omega-6 si convertono in acido gamma-linolenico, che è antinfiammatorio, prima di diventare acido arachidonico. La dieta mediterranea, riconosciuta come un mezzo efficace per combattere le malattie cardiache, è ricca di fonti vegetali di omega-6, comprese le mandorle.[13]
Oltre agli acidi grassi, le mandorle contengono nutrienti liposolubili come la vitamina E, principalmente come il potente antiossidante alfa-tocoferolo, e la vitamina A. Le vitamine del gruppo B presenti nelle mandorle includono B1 (tiamina), B2 (riboflavina), B3 (niacina), B6 e folato. Le mandorle sono una ricca fonte di potassio. Sono presenti anche altri minerali nelle mandorle, tra cui calcio, ferro, magnesio, fosforo, zinco e una piccola quantità di sodio.[14]
Le proprietà di una singola pianta possono differire anche da un'altra pianta della stessa specie e genotipo,[15] a seconda di quando la pianta è considerata matura,[16] e variazioni nelle località o condizioni di coltivazione.[17]
Sebbene tutti questi nutrienti siano presenti in qualsiasi olio di mandorla, la quantità di ciascun nutriente in una certa quantità di olio può variare. Le piante si adattano al loro ambiente, quindi una pianta coltivata con più o meno sole o pioggia[18] può adattarsi a quelle condizioni, producendo profili nutrizionali leggermente diversi.  

Preparazione dell'olio di mandorla

La mandorla non è tecnicamente una noce o un frutto! È un drupa, che si riferisce ai suoi molteplici strati. L'involucro esterno del frutto dell'albero di mandorlo è un rivestimento spesso e verde. All'interno dell'involucro c'è l'endocarpo, che è duro e legnoso, simile all'esterno del nocciolo trovato nel suo cugino, la pesca. All'interno dell'endocarpo si trova il seme, o mandorla.[19] L'olio di mandorla viene estratto da questo seme maturo.  

Spremuto a pressione e spremuto a freddo

La spremitura a pressione si riferisce al processo di schiacciamento lento delle mandorle sotto pressione meccanica, come due piastre metalliche rotanti, per rilasciare i grassi dalla mandorla.[20] Spremuto a freddo significa che l'olio è stato estratto mediante spremitura a bassa temperatura.[21] La bassa temperatura previene il deterioramento dell'olio. L'olio di mandorle prodotto con un processo a freddo è di colore più scuro rispetto a un processo raffinato, ma si ritiene che contenga più proprietà che rendono preziosa la pianta originale, inclusi i suoi grassi monoinsaturi e l'attività antimicrobica.[22] L'estrazione per distillazione degli oli essenziali delle mandorle dolci di solito non è necessaria perché gli oli sono così abbondanti nei semi. Anche un processo domestico è sufficiente per rilasciare l'olio.[23]

Estrazione per distillazione

L'estrazione per distillazione significa esporre una pianta all'acqua o al vapore per rompere il materiale vegetale e rilasciare l'olio essenziale. Gli oli vengono raffreddati e condensati per la raccolta.[24] L'estrazione per distillazione viene usata per estrarre l'amigdala dalle mandorle amare. L'amigdala non è presente nell'olio grezzo, quindi l'estrazione per spremitura non funzionerebbe. L'amigdala è prodotta dall'azione dell'emulsina, un componente della mandorla amara che si attiva in presenza di acqua. Se la temperatura è troppo alta durante questa reazione, l'emulsina si degrada e l'amigdala non può essere rilasciata.

Quando viene prodotta l'amigdala, la mandorla amara rilascia anche l'olio essenziale benzaldeide e una piccola quantità di acido cianidrico, chiamato anche acido prussico. Questo acido prussico, o cianuro, è estremamente tossico ma può essere rimosso con una distillazione aggiuntiva, lasciando l'olio di mandorla amara privo di acido prussico, noto anche come olio di mandorla amara, FFPA. Questo è l'aroma popolare in cucina.

Anche quando è privo di cianuro, il benzaldeide e l'amigdala sono comunque tossici, quindi l'olio amaro viene usato a dosi goccia.[25][26] L'estratto di olio di mandorle amare ha un forte sapore di mandorla ed è usato in cucina. Le mandorle amare crude non sono vendute negli Stati Uniti. Le fonti commerciali di estratto di mandorla possono essere ottenute da frutti produttori di amigdala della stessa famiglia della mandorla, inclusi pesche o albicocche. Tuttavia, questi frutti producono meno amigdala, quindi il sapore è meno intenso rispetto a quando l'amigdala è estratta dalle mandorle amare.[27]  

 

Usi medicinali dell'olio di mandorle

Usi nella medicina ayurvedica e cinese
L'olio di mandorle viene assunto internamente e applicato localmente. Nell'antica medicina cinese e nella medicina ayurvedica (il sistema medico tradizionale dell'India), l'olio di mandorle è usato per condizioni della pelle secca, inclusi eczema e psoriasi.
La mandorla nella medicina ayurvedica è considerata la migliore di tutte le noci; capace di migliorare l'essenza del corpo che sostiene l'intelletto, la spiritualità e la capacità riproduttiva. Sia la medicina cinese che quella ayurvedica considerano le mandorle efficaci per liberare le condizioni dei polmoni, come la congestione bronchiale. L'olio può essere assunto internamente o usato nel massaggio per stimolare la pulizia dei polmoni.[28]  
Cosmetici
L'olio di mandorle è un olio base popolare nei prodotti cosmetici grazie alle sue proprietà piacevoli e delicate. Si assorbe bene nella pelle e la ammorbidisce, rendendolo una scelta principale per la produzione di saponi, balsami per labbra e oli da bagno.[29]  
Massaggio
L'olio di mandorle è un olio vettore per farmaci ed è ampiamente usato come vettore di altri oli essenziali.[30] perché il suo aroma delicato non sovrasta altri profumi. È un favorito tra i terapisti del massaggio. L'olio di mandorle è leggermente oleoso, aiutando la mano del terapista a scivolare sulla pelle, ma si assorbe bene.[31] I grassi benefici e i nutrienti presenti nell'olio di mandorle possono essere assorbiti attraverso la pelle. L'uso dell'olio di mandorle per massaggiare i neonati pretermine ha migliorato i loro punteggi neurologici e aumentato il loro aumento di peso.[32] rispetto al placebo.  
Cicatrici e Smagliature
L'olio di mandorle è ben assorbito ed è ricco di vitamine liposolubili E e A. Questi nutrienti probabilmente contribuiscono al beneficio osservato dell'olio di mandorle nel ridurre le cicatrici dopo un intervento chirurgico e nel levigare e ringiovanire la pelle.[33] Ci sono alcune evidenze sull'efficacia del massaggio con olio di mandorle per ridurre le smagliature durante la gravidanza.[34]  
Salute Cardiovascolare
Assunto internamente, l'olio di mandorle è una ricca fonte di acidi grassi omega-6 e di diversi altri nutrienti. Molti studi sono stati condotti sull'intera mandorla, trovando benefici per le malattie cardiovascolari, incluso l'aumento dell'HDL,[35] il “colesterolo buono,” ridurre il grasso addominale e abbassare l’LDL, il “colesterolo cattivo,” sostituendo gli snack ad alto contenuto di carboidrati,[36] abbassare i livelli di glucosio,[37] prevenire danni al fegato e migliorare il funzionamento dei vasi sanguigni.[38]  
Salute Gastrointestinale
Un numero crescente di ricerche supporta l'importanza del microbioma intestinale per la salute. Uno studio ha confrontato l'effetto delle mandorle appena macinate con le mandorle defatate sui germi intestinali. Lo studio ha rilevato che le mandorle appena macinate con i grassi intatti supportavano un profilo di germi migliore rispetto alle noci defatate.[39] L'olio di mandorle supporta un tempo di transito intestinale sano, rendendolo utile per il trattamento della sindrome dell'intestino irritabile (IBS).  
Usi Tradizionali L'olio di mandorle è considerato benefico per una vasta gamma di condizioni basate sull'uso tradizionale, anche se non ci sono ricerche coerenti a favore o contro l'efficacia di questi usi. L'olio di mandorle è considerato antinfiammatorio, stimolante del sistema immunitario, anti-epatotossico e può anche ridurre l'incidenza del cancro al colon.[40]  
Uso dell'olio di mandorle amare L'olio di mandorle amare è tossico se ingerito, ma storicamente è stato usato per gestire la febbre, probabilmente perché può uccidere germi, virus e funghi. È stato usato come vermifugo per eliminare i vermi nel tratto gastrointestinale.[41] L'olio di mandorle amare induce sudorazione e aumento della diuresi. Sebbene non ci siano studi sugli esseri umani, l'uso dell'olio di mandorle amare per spasmi, dolore, tosse e prurito è riconosciuto.[42]  

Domande sull'olio di mandorle

Cosa dovrei cercare in un olio di mandorle? L'olio di mandorle non raffinato, spremuto a freddo, conterrà il miglior profilo di nutrienti e grassi. Potrebbe essere più scuro e avere un odore più intenso rispetto a un olio raffinato, ma l'odore e il sapore complessivi dovrebbero comunque essere abbastanza delicati.  

Se sono allergico alle mandorle, posso usare l'olio di mandorle? Se hai un'allergia alle noci, o se non sei sicuro di averla, l'olio di mandorle dovrebbe essere evitato, anche come agente topico.  

È sicuro usare l'olio di mandorle sui bambini? Se tuo figlio ha un'allergia alle noci, o se non sei sicuro che abbia un'allergia alle noci, l'olio di mandorle dovrebbe essere evitato, anche come agente topico. Ci sono stati casi di bambini che hanno sviluppato allergie alle mandorle basate solo sull'esposizione topica.[43] Chiedi a un medico di fare un test per le allergie alle mandorle.  

Posso cucinare con l'olio di mandorle? Puoi cucinare con l'olio di mandorle; l'olio o un estratto di mandorle possono essere ingredienti nelle ricette di pasticceria. L'olio di mandorle non è stabile ad alte temperature, quindi non è la scelta migliore per l'uso con calore elevato.  

Quanto dura l'olio di mandorle? Conservato in condizioni adeguate, la durata dell'olio di mandorle è di circa 2 anni. L'alto contenuto di vitamina E dell'olio di mandorle aiuta a proteggerlo dallo stress ossidativo che si forma quando l'olio inizia a irrancidire, prolungandone la durata. L'olio di mandorle ha un basso contenuto di umidità, circa il 5 percento di acqua, quindi finché l'umidità è esclusa, non si deteriora facilmente. L'olio di mandorle dovrebbe essere conservato in condizioni fresche, poiché si deteriora a temperature elevate.[44]  

L'olio di mandorle non ostruirà i miei pori? L'olio di mandorle è un buon emolliente, il che significa che è efficace nel rompere e ammorbidire la pelle. Tuttavia, i pori del viso possono essere più sensibili all'ostruzione da oli densi. Se tendi ad avere la pelle grassa, l'olio di mandorle potrebbe essere meglio utilizzato su altre parti del corpo.  

Ingrasserei con le calorie dell'olio di mandorle? La maggior parte degli studi mostra che la perdita di peso è il risultato di un maggior consumo di mandorle nella dieta. Essendo un alimento ricco di nutrienti, può aiutarti a sentirti sazio prima, sostituendo alimenti ad alto contenuto di carboidrati che sono complessivamente meno nutrienti.  

Avvertenze e Considerazioni L'olio di mandorla è prodotto dalle mandorle. Non usare topicamente o ingerire se si è allergici alle mandorle o a tutte le noci a guscio. Le mandorle appartengono a un gruppo di alimenti che possono causare una sindrome da allergia orale.[45] Gli altri alimenti in questo gruppo di alimenti correlati al polline di betulla sono mele, mandorle, carote, sedano, ciliegie, nocciole, kiwi, pesche, pere e prugne. Se si ha una reazione a uno di questi alimenti, consultare il medico prima di includere regolarmente l'olio di mandorla nella dieta o nella routine cosmetica.
