Ólífuávöxtur olía

Um plöntuolíur

Notkun plöntuolía má rekja þúsundir ára aftur í tímann, með rótum í menningarheimum eins og fornum Súmerum, Kínverjum og Rómaveldi.[1] Plöntuolíur eru unnar úr heilli plöntu, varðveita ilm, helstu virku innihaldsefnin og kjarna plöntunnar. Plöntuolíur úr ýmsum plöntum hafa verið notaðar í gegnum söguna til að heiðra guði,[2] undirbúa lík fyrir útför,[3] viðhalda fegurð, aðstoða við hreinlæti og meðhöndla fjölbreytt læknisfræðileg vandamál. Leiðbeiningar um undirbúning og notkun plantna sem lyf eru skráðar í verkum Dioscorides, De materia medica[4], aftur á fyrsta öld. Nútímatækni hefur gert kleift að greina og rannsaka virku hlutana í plöntum fyrir hlutverk þeirra í heilsu og gagnsemi gegn ýmsum sjúkdómum. Gildi plöntuolía hefur staðist tímans tönn.  

Eiginleikar ólífuolíu

Af öllum plöntuolíum er ólífuolía algengust í mataræði og heilsubókum. Læknisfræðileg notkun hófst með Hippókratesi, sem notaði ólífuolíu við húðvandamálum og sem grunn fyrir alls konar smyrsl.[5]

Ólífutréð hefur djúpt virðulegan sess í sögu. Í grískri goðafræði lofaði Seifur Attíku til guðs eða gyðju sem færði grískum þjóðum gagnlegustu uppfinninguna.[6]

Gjaf Poseidons, sem stundum er lýst sem hesti[7] eða saltvatn, var hafnað til hliðar zug Athena gjöf ólífutrésins. Borgin var endurnefnd Aþena og ólífutréð fékk mikilvægan sess í mat, lækningum og efnisframleiðslu borgarinnar.[8]

Verðlaunin fyrir að vinna fyrstu Ólympíuleikana, sem haldnir voru í Aþenu, voru ekki medalía heldur ólífuvið sem var vafið í krúnu.[9]

Ólífutréð og ólífuolían eru nefnd víða í Biblíunni. Í sögunni af Nóa og miklu flóðinu kemur dúfan aftur til örkunnar með ólífuvið, og olíurnar sem notaðar voru til að smyrja og lækna einstaklinga í Biblíunni eru gerðar úr ólífum.[10]

Það voru fransiskanar sem fluttu ólífutréð til Kaliforníu. Þolinmóðu ólífugarðarnir lifðu af þar sem Mission San Fernando hrundi. Þeir eru að mestu í Norður-Kaliforníu þar sem landkostnaðurinn er lægri og þeir eru ekki hraktir burt af arðbærari vínberjarækt eða húsnæði.[11]

Tegundir ólífa

Ólífan, eins og ferskjan og möndlan, er steinávöxtur - ávöxtur umlukinn húð og inniheldur harðan kjarna.[12] Vinsældir ólífunnar, sem heitir Olea Europa í grasafræði, hafa innblásið hundruð af afbrigðum. Mismunandi tegundir eru krossaðar til að aðlaga vaxtartímabil og loftslag eins og með flesta ávexti, en ólífur eru ræktaðar sem lostæti, líkt og vínber eru ræktuð fyrir víntegundir.

Plöntur eru valdar eftir innihaldi fjölfenóla og ilmefna. Þessi einkenni, ásamt þroskastigi þegar ólífurnar eru tíndar, eru helstu ákvarðandi þættir bragðs, stöðugleika og afraksturs olíunnar.[13]  

Næringarefni

Ólífuolía er grunnurinn í vel rannsökuðu miðjarðarhafsdietinu. Allar kaloríur hennar koma frá gagnlegum fitum, þar á meðal omega 9, omega 3 og aðallega omega 6. Einómettaðar fitur eru heilsusamlegastar og af matarolíum er ólífuolía ríkasta uppspretta þeirra. Sérstaklega inniheldur ólífuolía allt að 77% einómettaðar óleínsýru og palmitóleínsýru, 14% mettaðar palmitínsýru og stearínsýru og 9%[14] fjölómettaðar línóleínsýra og línólenínsýra[15] fitusýrur.[16]

Línóleínsýra, sem er rík í ólífuolíu, er omega-6 fitusýra. Þó að omega-3 fitusýrur, eins og línólenínsýra, séu betur þekktar fyrir heilsufarslegan ávinning, krefst heilsa húðar og hárs jafnvægis milli omega-6 og omega-3 fitusýra.

Bandaríska mataræðið inniheldur oft mikið magn af omega-6 fitusýrum, sem geta breyst í bólguvaldandi arakídónsýru, sérstaklega þegar þær koma úr kjöti. Plöntugjafar omega-6 fitusýra breytast í gamma-línóleínsýru, sem er bólgueyðandi, áður en þær verða að arakídónsýru.

Miðjarðarhafsdietið, sem er vel þekkt sem árangursrík leið til að berjast gegn hjartasjúkdómum, er ríkt af plöntugjöfum omega-6 fitusýra, þar á meðal ólífuolíu.[17] Auk fitusýra inniheldur ólífuolía fituleysanleg næringarefni eins og vítamín E, aðallega sem öflugan andoxunarefnið alfa-tókóferól, og vítamín K. Nokkur steinefni finnast einnig í ólífuolíu, þar á meðal kalk, járn, kalíum og natríum, öll í frekar litlu magni.[18] Ólífuolía inniheldur ekki aðeins engan kólesteról heldur er hún einnig góð uppspretta plantna steróla, sem hafa sýnt sig að lækka kólesteról.[19]

Betri klínískar rannsóknir eru nauðsynlegar til að ákvarða hvort breytingin á kólesteróli sem stafar af neyslu plantna sterólríkra matvæla hindri dauðsföll af völdum hjartasjúkdóma, en sýnt hefur verið fram á að fæði ríkt af plöntufituefnum bætir LDL, þann kólesterólflokk sem er þekktur sem áhættuþáttur fyrir hjartasjúkdóma.[20] 

Undirbúningur ólífuolíu

Ólífur hafa verið tíndar með höndunum frá örófi alda, sem er öruggasti hátturinn til að vernda bæði ólífuna og tréð sjálft. Nútímalegar aðferðir sem nota stafi eða vélar til að hrista ólífur af trjánum geta verið hraðari og arðbærari, en þær valda oft áverka á ávextinum sem skerða bragðið. Ólífur eru tíndar fyrr á árinu þegar þær eru að breytast úr grænum lit í fjólublátt, eða síðar á árinu þegar þær eru orðnar fjólubláar, eða í lokin þegar þær eru orðnar fullkomlega svartar.[21]

Ólífuávöxturinn er mjög ríkur af oleuropein, mjög bitru efni, og mun minna sykraður en aðrir ávextir. Þó oleuropein sé öruggt er það ómeltanlegt. Ólífur verða að vera unnar áður en þær eru borðaðar heilar. Þetta er gert með því að liggja í salt, saltsvatni, vatni eða kaustískum lausnum. Unnar ólífur missa biturleika sinn og verða þykkar og fastar.[22]  

Köld pressun

Mikið magn olíu í ólífunni kemur ekki úr fræinu heldur ávextinum sjálfum. Um 1% af olíunni kemur úr steininum.[23] Til að vinna olíuna eru ólífur þvegnar og pressaðar undir vélrænu þrýstingi í mauk. Þetta opnar ávöxtinn og losar olíuna. Maukið er síðan hrært eða malaxað til að leyfa litlum olíudropum að sameinast í stærri dropa og síðan snúið til að aðskilja olíuna. Þessi aðskilnaður var áður gerður með pressum, algengum við framleiðslu annarra olía, en mjög fáar ólífuolíur eru enn safnaðar með þessari aðferð.  

Nútíma olíusöfnun

Flestar nútíma aðferðir við að safna ólífuolíu nota miðflóttaafl. Fyrsta snúningurinn í miðflóttaaflinum fjarlægir olíuna úr blautu mauki af malaxuðum ólífum. Annar snúningurinn er gerður á hærri hraða og fjarlægir vatn og önnur föst efni úr olíunni. Olían er síðan látin standa til að þyngdaraflið fjarlægi eftirfarandi óhreinindi.

Loka síun getur verið notuð við gerð lokaolíunnar.[24] Olíur sem eru síuð eru venjulega síuð með fíngerðu pappír eða díatómíumjölli.[25] Síun fjarlægir meira af setlagi sem gæti safnast í flöskunni, en hún fjarlægir einnig nokkur gagnleg fenól efnasambönd og styður geymsluþol olíunnar.[26]  

Tegundir ólífuolía

Það eru þessi smáatriði í framleiðslu sem skapa fjölbreytileika ólífuolía á hillunni. Extra virgin ólífuolía, kölluð EVOO, er unnin með einni köldu pressun. Sönn extra virgin ólífuolía er merkt af North American Olive Oil Association (NAOOA), sjálfstæðri stofnun sem prófar gæði ólífuolía.[27] Virgin ólífuolía er einnig fengin úr fyrstu pressun, en hún hefur hærra sýrustig. EVOO hefur um 1% sýrustig, en virgin ólífuolía getur haft allt að 2%.[28]

Aðrar blöndur geta innihaldið Fino, sem sameinar extra virgin með einhverri virgin olíu, Light, sem hefur verið síað til að fjarlægja mestan hluta setlaga, og Pure, sem er blanda sem hentar virgin með einhverri extra virgin olíu.[29]  

Lækninganotkun ólífuolíu

Ólífuolía er eina plöntuolían sem má nota og neyta hráa og ómeðhöndlaða.[30] Notkun hennar sem lækning var fyrst skráð af Hippókratesi og er enn rannsökuð af nútímavísindum.  

Notkun í ayurvedískri og kínverskri læknisfræði

Ólífuolía er tekin inn og borin á húðina. Þar sem hún er vestræn jurt hefur hún ekki langa hefð í ayurvedískri eða hefðbundinni kínverskri læknisfræði. Ólífuolía er notuð í ayurvedískum nuddmeðferðum, þar sem hún er talin vera hlýjandi olía sem hvetur til dosha Kapha, sem er líkamsgerð sem er olíukennd, köld, þung, hæg og slétt.[31]

Í hefðbundinni kínverskri læknisfræði er ólífan talin vera hlutlaus fæða og getur verið notuð til að lækna hálsbólgu, meðhöndla barkabólgu eða berjast gegn niðurgangi.[32]  

Hjarta- og æðasjúkdómar

Ólífuolía er mikilvægur hluti af Miðjarðarhafs-mataræðinu, sem hefur verið mikið rannsakað fyrir hæfileika sína til að draga úr hjartaáföllum[33] og dánartíðni af þeim hjartaáföllum.[34] Ólífuolía hefur sýnt sig að draga úr hjartaáföllum[35], heilablóðfall[36], háþrýsting[37] og gáttatif.[38] Hún eykur HDL - „góða kólesterólið“ - á meðan hún lækkar LDL - „vonda kólesterólið“ - og minnkar þannig áhættu á æðakölkun.[39]

Ólífuolía hefur sýnt sig að draga úr áhættu á sykursýki hjá öldruðum sem eru í mikilli áhættu á hjarta- og æðasjúkdómum og bæta insúlínnæmi hjá miðaldra fólki.[40] Það er einnig gagnlegt til að koma í veg fyrir efnaskiptasjúkdóm og offitu.[41]

Þó að Miðjarðarhafs-mataræðið sjálft, sem er ríkt af ávöxtum og grænmeti, lítið af kjöti og mikið af heilkornum, sé gagnlegt fyrir þessar aðstæður, er það sérstaklega viðbótin af fjölfenólríku extra virgin ólífuolíu sem veitir þessi áhrif.  

Meltingarheilsa

Ólífuolía hefur verið notuð við hægðatregðu. Rannsókn sýndi að ólífuolía er árangursrík staðgengill fyrir steinolíu í meðferð við hægðatregðu hjá sjúklingum sem gangast undir blóðskilun.[42] Með auknum áhuga og rannsóknum á örveruflóru og ónæmiskerfi meltingarvegarins er ólífuolía nú rannsökuð fyrir hlutverk sitt í að vernda meltingarveginn. Hún hefur fundist örva staðbundið ónæmiskerfi í þörmum [43] og styðja við jákvæða breytingu í átt að heilbrigðum örverum í þörmum.[44]

Krabbamein

Ólífuolía, þegar hún er notuð í miklu magni til að bæta við Miðjarðarhafs-mataræðið, hefur sýnt sig að koma í veg fyrir brjóstakrabbamein. Þetta er líklega vegna innihalds hennar af E-vítamíni og fjölfenólum.[45]  

Hefðbundnar notkunaraðferðir

Ólífuolía er notuð til að örva losun gallblöðru í vinsælu meðferðarferli sem kallast „Gallblöðruhreinsun“. Þessi meðferð er ekki mælt með nema gallsteinar hafi verið útilokaðir, þar sem þeir geta festst í gallrásinni, valdið sársaukafullum köstum og aukið hættu á neyðaraðgerð.

Ólífuolía hefur einnig verið notuð sem verkjastillandi,[46] og sem staðbundið meðferðarefni við eyrnamerg, hljóð í eyrum, sárum, psoriasis, bruna og teygjumörkum.[47] Ólífublöð eru vinsæl jurt sem berst gegn veirum.

Spurningar um ólífuolíu

Hvað ætti ég að leita að í ólífuolíu? Óunnin, extra virgin ólífuolía inniheldur besta næringarefna- og fituprófílinn. Hún getur verið dekkri á litinn og sterkari í lykt en unnin olía, en heildarlyktin og bragðið ætti samt að vera frekar mild. Það getur myndast botnfall í flöskunni.  

Ef ég er með ofnæmi fyrir ólífum, get ég notað ólífuolíu? Ofnæmi fyrir ólífum er sjaldgæft, en ef þú ert með slíkt ofnæmi skaltu ekki nota ólífuolíu hvorki á húð né innbyrðis. Ólífuolía er unnin úr heilum ólífum.  

Er öruggt að gefa börnum ólífuolíu? Ólífuolía veldur yfirleitt ekki ofnæmi og má örugglega bæta við mataræði barna eða nota á húð. Ef barnið þitt er með ofnæmi fyrir ólífum skaltu ekki nota ólífuolíu á það. Ræddu við lækninn þinn um möguleika á ofnæmisprófi fyrir ólífum.  

Get ég eldað með ólífuolíu? Alveg örugglega, og margir gera það. Extra virgin ólífuolíur reykja við frekar lágan hita, svo þær henta best í kalda rétti eða uppskriftir sem eru eldaðar við lágan hita. Virgin ólífuolía hentar vel til eldunar við lægri hita og er stöðugri við hita en EVOO. Heilbrigðu fenólarnir í ólífuolíu brotna niður við hita, svo til að njóta heilsufarslegra ávinnings er best að nota þær í salatdressingar eða uppskriftir sem eru ekki eldaðar.  

Hversu lengi geymist ólífuolía? Ef hún er geymd við réttar aðstæður getur ólífuolía geymst í allt að tvö ár. Hátt innihald af E-vítamíni í ólífuolíu verndar hana gegn oxunarálagi sem myndast þegar olían fer að verða gölluð, sem lengir geymsluþol hennar. Ólífuolía ætti að geyma á köldum stað, því hún brotnar niður við hærri hita. Það hefur verið bent á að olíur sem storkna þegar þær eru settar í ísskáp séu af góðum gæðum. Þessi próf mælir í rauninni innihald mettaðra fitusýra í olíunni, þar sem allar mettaðar fitur storkna við kólnun. Magn mettaðrar fitu ræðst af tegund ólífunnar, ekki ferskleika olíunnar.  

Mun ég þyngjast af kaloríum í ólífuolíu? Flestar rannsóknir sýna að þyngdartap er afleiðing af aukinni neyslu á ólífu og ólífuolíum í mataræði. Sem næringarríkur matur getur hún hjálpað þér að fyllast fyrr og komið í stað matvæla með hærri kolvetnainnihaldi sem eru almennt næringarsnauðari. 

Varúð og atriði til athugunar

Extra-virgin ólífuolía er oftast tilbúin með svikum. Hún getur verið blönduð með ódýrari, ofnæmisvaldandi olíum, svo sem soja-, maís- eða hnetuolíum. Ef þú ert með mataráreitranir við einhverjum af þessum algengu viðbótarefnum skaltu kaupa ólífuolíu á staðnum frá traustum aðila sem getur greint ræktandann og ábyrgst hreinleika hennar.
