Möndluolía

Um plöntuolíur

Notkun plöntuolía má rekja aftur þúsundir ára, með rótum í menningarheimum eins og fornum Súmerum, Kínverjum og Rómaveldi.[1] Plöntuolíur eru unnar úr heilli plöntu, varðveita lykt hennar, helstu virku innihaldsefnin og kjarna plöntunnar. Plöntuolíur unnar úr ýmsum plöntum hafa verið notaðar í gegnum söguna til að heiðra guði,[2] undirbúa líkama fyrir útför,[3] viðhalda fegurð, aðstoða við hreinlæti og meðhöndla fjölbreytt læknisfræðileg ástand. Leiðbeiningar um undirbúning og notkun plantna sem lyf eru skráðar í verkum Dioscorides, De materia medica.[4], aftur á fyrsta öld. Nútímatækni hefur gert kleift að greina og rannsaka virku hlutana plantna fyrir hlutverk þeirra í heilsu og gagnsemi gegn ýmsum læknisfræðilegum ástandum.  

Eiginleikar möndlu

Forni möndlutréð hefur haft virðulega stöðu í mörgum menningum. Möndlutré eru nefnd nokkrum sinnum í Biblíunni. Sem snemma vorblóm, þýðir hebreska nafnið „iðjulegur“ eða „varkár“ og það var talið merki um skyndilega og hraða refsingu Guðs í fornu Ísrael. Kínverjar líta á möndluna sem tákn um varanlega sorg og kvenlegt fegurð.[5].  

Tegundir möndlu

Ríka olían úr möndlunni er þægilega mild í lykt, ljós að lit og hefur ekki sterkan bragð[6]. Það eru tvær megintegundir af möndlum, sæt (Prunus dulcis) og bitur (Prunus amara eða amygdalus). Sæta möndluafbrigðið er notað meira vegna þess að það framleiðir meira af verðmætum olíum sem möndlur eru þekktar fyrir og ber minni hættu á eituráhrifum. Bitra möndluafbrigðið inniheldur amygdalín, eins og fræ annarra meðlima Prunus fjölskyldunnar, þar á meðal kirsuberja, apríkósa og plómur. Þegar amygdalín er melt, veldur samverkun við vatn og örverur í meltingarvegi myndun mikils magns af prússísýru,[7] eða blágrýti. Bitra möndlan inniheldur einnig benzaldehýð, aðalolíu hennar, sem er eitrað[8]. Vegna þess að þessi efni eru eitrað, eða jafnvel banvæn í mjög litlum skömmtum, ætti ekki að borða bitru möndluna og hún er ekki seld í Bandaríkjunum.  

 

Næringarefni

Möndlan er næringarrík orkugjafi. Möndlur samanstanda af um það bil 21 prósent próteini, 50 prósent fitu, 22 prósent kolvetnum, þar af er meira en helmingurinn trefjar, og fimm prósent vatni, sem gerir möndlumjöl að vinsælli vali fyrir sykursjúka.[9] Fitusýrur möndlunnar eru aðallega ómettaðar fitur, með nokkrum mettuðum fitum og engum kólesteróli. Sérstaklega inniheldur möndluolía 4 til 9 prósent palmitínsýru, 0,9 til 3 prósent stearínsýru, 50 til 86 prósent óleínsýru og 20 til 30 prósent linóleínsýru.[10][11] sýra.[12] Af þeim eru palmitínsýra og stearínsýra mettaðar fitusýrur, en þær mynda um það bil minna en 12 prósent af heildarfitusýrum. Linóleínsýra, sem er rík í möndlunni, er omega-6 fitusýra. Þó að omega-3 fitusýrur séu betur þekktar fyrir heilsufarsleg áhrif sín, krefst mataræði og heilsa húðar og hárs jafnvægis milli omega-6 og omega-3 fitusýra. Bandarískt mataræði inniheldur oft mikið magn af omega-6, sem getur breyst í bólguvaldandi arakídónsýru, sérstaklega þegar uppruni þeirra er kjöt. Plöntuuppsprettur omega-6 fitusýra breytast í gamma-linóleínsýru, sem er bólgueyðandi, áður en þær verða að arakídónsýru. Miðjarðarhafsmataræði, sem er viðurkennt sem árangursríkt til að berjast gegn hjartasjúkdómum, er ríkt af plöntuuppsprettum omega-6, þar á meðal möndlunum.[13]
Auk fitusýra innihalda möndlur fituleysanleg næringarefni eins og vítamín E, aðallega sem öflugan andoxunarefnið alfa-tókóferól, og vítamín A. B-vítamín í möndlunum eru B1 (þíamín), B2 (ríbóflavín), B3 (níasín), B6 og fólínsýra. Möndlur eru rík uppspretta kalíums. Nokkur önnur steinefni finnast einnig í möndlunum, þar á meðal kalk, járn, magnesíum, fosfór, sink og lítið magn af natríum.[14]
Eiginleikar hvers einstakrar plöntu geta einnig verið mismunandi frá annarri plöntu af sömu tegund og erfðamengi,[15] eftir því hvenær planta telst fullþroskuð,[16] og breytileika í vaxtarstöðum eða aðstæðum.[17]
Þó að öll þessi næringarefni séu til staðar í hvaða möndluolíu sem er, getur magn hvers næringarefnis í ákveðnu magni af olíu breyst. Plöntur aðlagast umhverfi sínu, svo planta sem vex með meira eða minna sólarljós eða úrkomu[18] getur aðlagast þeim aðstæðum og framleitt örlítið mismunandi næringarefnasnið.  

Undirbúningur möndluolíu

Möndlan er tæknilega séð hvorki hnetur né ávöxtur! Hún er steinávöxtur, sem vísar til margra laga hennar. Ytri skurn ávaxtar möndlutrésins er þykkt, grænt lag. Innan skurnarinnar er endokarpið, sem er hart og viðarkennt, svipað og ytri hluti steinsins í skyldri plöntu, ferskjunni. Innan endokarpsins er fræið, eða möndlan.[19] Möndluolía er unnin úr þessari fullþroskuðu fræi.  

Pressað með þrýstingi og kaldpressað

Pressun með þrýstingi vísar til ferlisins þar sem möndlur eru hægt og rólega brotnar niður undir vélrænum þrýstingi, eins og tveimur snúningsplötum úr málmi, til að losa fituna úr möndlunni.[20] Kaldpressað þýðir að olían var pressuð með þrýstingi við lágt hitastig.[21] Lágur hiti kemur í veg fyrir að olían skemmist. Möndluolía framleidd með kaldpressun er dökkari á litinn en unnin olía, en talið er að hún innihaldi meiri eiginleika sem gera upprunalegu plöntuna verðmæta, þar á meðal einómettaðar fitusýrur og sýklaeyðandi virkni.[22] Eimingarútdráttur fyrir nauðsynlegar olíur úr sætri möndlu er venjulega ekki nauðsynlegur vegna þess að olíurnar eru svo ríkulegar í fræjunum. Jafnvel heimagerð ferli nægir til að losa olíuna.[23]

Eimingarútdráttur

Eimingarútdráttur þýðir að planta er sett í vatn eða gufu til að brjóta niður plöntuefnið og losa nauðsynlega olíu. Olíurnar eru kældar og þéttaðar til að safna þeim.[24] Eimingarútdráttur er notaður til að draga amygdalín úr bitrum möndlunum. Amygdalín er ekki til staðar í hráu olíunni, svo pressun myndi ekki virka. Amygdalínið myndast við að emulsín, hluti af bitri möndlu, virkjast þegar vatn er til staðar. Ef hitinn er of hár þegar þessi viðbrögð eiga sér stað, brotnar emulsínið niður og amygdalínið losnar ekki.

Þegar amygdalín myndast, losar bitra möndlan einnig nauðsynlega olíu benzaldehýð og lítið magn af vetnisblágrýti, einnig kallað prússískt sýra. Þessi prússíska sýra, eða blágrýti, er mjög eitrað en hægt er að fjarlægja það með viðbótar eimingunni, sem skilur eftir olíu úr bitri möndlu án prússísks sýru, einnig kölluð olía úr bitri möndlu, FFPA. Þetta er bragðefnið sem er vinsælt í matargerð.

Jafnvel þegar hún er laus við blágrýti, eru benzaldehýð og amygdalín eitrað, svo bitra olían er notuð í dropaskömmtum.[25][26] Útdráttur úr biturri möndluolíu hefur sterkan möndluilm og er notaður í matargerð. Rå bitrar möndlur eru ekki seldar í Bandaríkjunum. Viðskiptaútdráttur úr möndlu getur verið unninn úr amygdalínframleiðandi ávöxtum úr sömu fjölskyldu og möndlan, þar á meðal ferskjum eða apríkósum. Þessir ávextir framleiða þó minna amygdalín, svo bragðið er ekki eins sterkt og þegar amygdalínið er tekið úr bitrum möndlunum.[27]  

 

Lækninganotkun möndluolíu

Notkun í ayurvedískri og kínverskri læknisfræði
Möndluolía er tekin inn og borin á húð. Í fornum kínverskum læknisfræði og ayurvedískri læknisfræði (hefðbundnu lækniskerfi Indlands) er möndluolía notuð við þurrri húð, þar á meðal exemi og psoriasis.
Möndlan í ayurvedískri læknisfræði er talin best allra hnetutegunda; hún getur bætt kjarna líkamans sem styður við vitsmuni, andlega þætti og æxlunargetu. Bæði kínversk og ayurvedísk læknisfræði telja möndlur árangursríkar til að hreinsa lungnaveiki, svo sem berkjuþrengsli. Olían má taka inn eða nota í nudd til að örva hreinsun lungna.[28]  
Snyrtivörur
Mandeilolía er vinsæl grunnolía í snyrtivörum vegna þess að hún hefur þægilegar, mildar eiginleika. Hún frásogast vel í húðina og mýkir hana, sem gerir hana að fyrsta vali fyrir sápugerð, varasalva og baðolíur.[29]  
Nudd
Mandeilolía er burðarolía fyrir lyf og er mikið notuð sem burðarolía fyrir aðrar ilmolíur.[30] vegna þess að mildur ilmur hennar yfirgnæfir ekki aðra lykt. Hún er vinsæl meðal nuddara. Mandeilolía er aðeins olíukennd, sem hjálpar nuddaranum að renna vel yfir húðina, en hún frásogast vel.[31] Gagnlegar fitur og næringarefni í mandeilolíu geta frásogast í gegnum húðina. Notkun mandeilolíu til að nudda fyrirburum bætti tauganúmer þeirra og jók þyngdaraukningu þeirra.[32] samanborið við lyfleysu.  
Ör og teygjur
Mandeilolía er vel frásogast og rík af fituleysanlegum vítamínum E og A. Þessi næringarefni stuðla líklega að þeim ávinningi sem sést við notkun mandeilolíu til að draga úr örum eftir aðgerð og slétta og endurnýja húð.[33] Það eru einhverjar vísbendingar um virkni nudd með mandeilolíu til að draga úr teygjum á meðgöngu.[34]  
Hjarta- og æðasjúkdómar
Inntaka mandeilolíu er rík uppspretta omega-6 fitusýra og nokkurra annarra næringarefna. Margar rannsóknir hafa verið gerðar á heilli möndlu og sýnt ávinning fyrir hjarta- og æðasjúkdóma, þar á meðal hækkun HDL,[35] „góða kólesterólið,“ draga úr kviðfitu og lækka LDL, „vonda kólesterólið,“ með því að skipta út hákolvetna snakki,[36] að lækka blóðsykursgildi,[37] að fyrirbyggja lifrarskemmdir og bæta starfsemi blóðæða.[38]  
Þarmaheilsa
Vaxandi fjöldi rannsókna styður mikilvægi þarmaflórunnar fyrir heilsu. Ein rannsókn bar saman áhrif nýmulinna möndlu við möndlur sem höfðu verið fitusnauðar á þarmagerla. Rannsóknin leiddi í ljós að nýmulnar möndlur með fitunni óskertri studdu betri gerlasamsetningu en fitusnauðar möndlur.[39] Mandeilolía styður heilbrigðan þarmaflæði, sem gerir hana gagnlega við meðferð á pirruðum ristli (IBS).  
Hefðbundnar notkunar Mandeilolía er talin gagnleg fyrir fjölbreytt úrval aðstæðna byggt á hefðbundinni notkun, þó að ekki sé samræmd rannsóknarstaða fyrir eða á móti virkni þessara nota. Mandeilolía er talin bólgueyðandi, styrkja ónæmiskerfið, vernda lifur og gæti einnig dregið úr tíðni ristilkrabbameins.[40]  
Notkun beiskrar möndluolíu Beisk möndluolía er eitrað að innbyrða, en hefur sögulega verið notuð til að meðhöndla hita, mögulega vegna þess að hún getur drepið gerla, veirur og sveppi. Hún hefur verið notuð sem ormalyf til að drepa orma í meltingarvegi.[41] Beisk möndluolía örvar svitamyndun og þvaglosun. Þó engar rannsóknir séu til á mönnum, er notkun beiskrar möndluolíu við krömpum, verkjum, hósta og kláða viðurkennd.[42]  

Spurningar um möndluolíu

Hvað ætti ég að leita að í möndluolíu? Óunnið, kaltpressað möndluolía inniheldur besta næringarefnasniðið og fituna. Hún getur verið dekkri á lit og sterkari í lykt en unnin olía, en lyktin og bragðið ætti samt að vera frekar mild.  

Ef ég er með ofnæmi fyrir möndlum, get ég notað möndluolíu? Ef þú ert með hnetuofnæmi, eða ef þú ert ekki viss um hvort þú sért með hnetuofnæmi, ætti að forðast möndluolíu, jafnvel sem staðbundið meðferðarefni.  

Er öruggt að nota möndluolíu á börn? Ef barnið þitt er með hnetuofnæmi, eða ef þú ert ekki viss um hvort barnið þitt sé með hnetuofnæmi, ætti að forðast möndluolíu, jafnvel sem staðbundið meðferðarefni. Það hafa komið upp tilfelli þar sem börn hafa þróað með sér ofnæmi fyrir möndlum eingöngu vegna staðbundinnar snertingar.[43] Spurðu lækni um prófanir fyrir möndluofnæmi.  

Get ég eldað með möndluolíu? Þú getur eldað með möndluolíu; olían – eða möndluútdráttur – getur verið innihaldsefni í bakstursuppskriftum. Móndluolía er ekki stöðug við háan hita, svo hún er ekki besti kosturinn við eldun við mikinn hita.  

Hversu lengi geymist möndluolía? Ef hún er geymd við réttar aðstæður endist möndluolía í um það bil 2 ár. Hátt innihald af E-vítamíni í möndluolíu verndar hana gegn oxunarálagi sem myndast þegar olían fer að verða gölluð, sem lengir geymsluþol hennar. Móndluolía inniheldur lítið vatn, aðeins um 5% vatnsmagn, svo lengi sem rakastig er lokað úti brotnar hún ekki auðveldlega niður. Móndluolía ætti að geyma á köldum stað þar sem hún brotnar niður við hærri hita.[44]  

Stíflar möndluolía ekki svitaholur mínar? Móndlaolía er góð mýkjandi, sem þýðir að hún brýtur niður húð og mýkir hana. Þó geta svitaholur í andlitinu verið viðkvæmari fyrir stíflun af þykkum olíum. Ef þú átt til með að hafa olíumikla húð gæti verið betra að nota möndluolíu á aðra hluta líkamans.  

Mun ég þyngjast af kaloríum í möndluolíu? Flestar rannsóknir sýna að þyngdartap stafar af meiri möndlum í mataræðinu. Sem næringarríkt fæði getur það hjálpað þér að fyllast fyrr og komið í stað matvæla með hærri kolvetnainnihaldi sem eru almennt næringarsnauðari.  

Varúð og athuganir Möndluolía er unnin úr möndlunum. Ekki nota á húð eða innbyrða ef þú ert með ofnæmi fyrir möndlunum eða öllum trjánöðrum. Möndlur eru í hópi matvæla sem geta valdið munnofnæmisheilkenni.[45] Hin matvælin í þessum hópi birkifrumufrjókornamats eru epli, möndlur, gulrætur, sellerí, kirsuber, heslihnetur, kíví, ferskjur, perur og plómur. Ef þú færð viðbrögð við einhverju þessara matvæla skaltu ráðfæra þig við lækninn þinn áður en þú gerir möndluolíu að reglulegum hluta af mataræði eða snyrtivörurútinu þínu.
