Maidir le hOlaí Bitheolaíocha

Is féidir úsáid olaí bitheolaíocha a rianú siar na mílte bliain, le fréamhacha i gcultúir chomh éagsúil leis na Sumerians ársa, na Síneach agus Impireacht na Róimhe.[1] Déantar olaí bitheolaíocha a ullmhú ón bplanda iomlán, ag coimeád a bholadh, a phríomh-chomhábhair ghníomhacha, agus a h-essence. Tá olaí bitheolaíocha déanta as plandaí éagsúla á n-úsáid le linn stair chun déithe a onóir,[2] ag ullmhú coirp do aiséirí,[3] ag coimeád áilleacht, ag cabhrú le sláinteachas agus ag cóireáil réimse leathan coinníollacha leighis. Airíonna Almóin

Tá áit onórach ag crann almóin ársa i go leor cultúir. Tá roinnt tagairtí do chrainn almóin sa Bhíobla. Mar bhláth luath an earraigh, ciallaíonn a ainm Iúdaiceach “díograiseach” nó “faireachán” agus measadh é mar chomhartha ar phionós tobann agus tapa Dé in Iosrael ársa. Breathnaíonn na Síneach ar an almón mar shiombail de bhrón buan agus de áilleacht baineann.[5].  

Cineálacha Almóin

Tá ola flúirseach an almóin bholadh taitneamhach éadrom, dath éadrom agus níl blas láidir aici[6]. Tá dhá phríomhchineál almóin ann, milis (Prunus dulcis) agus searbh (Prunus amara nó amygdalus). Úsáidtear an cineál almóin milis níos forleithne mar go dtáirgeann sé níos mó de na hola luachmhara a bhfuil almóin clúiteach astu agus tá níos lú baol tocsaineachta ann. Tá amygdalin sa chineál almóin searbh, amhail atá sna síolta de bhaill eile den teaghlach Prunus, lena n-áirítear silíní, apricots agus plumaí. Nuair a dhéantar amygdalin a dhíleá, cruthaíonn an idirghníomhú le huisce agus le germs an díleá ard-mhéide aigéad prúsach,[7] nó cianíd. Tá benzaldehyde, a ola riachtanach, freisin sa almón searbh, atá tocsaineach[8]. Nithe Cothaitheacha

Is cumhachtán cothaitheach é an almón. Tá thart ar 21 faoin gcéad próitéin, 50 faoin gcéad saille, 22 faoin gcéad carbaihiodráití, os cionn leath acu snáithín, agus cúig faoin gcéad uisce i almóin, rud a fhágann go bhfuil plúr almóin ina rogha coitianta do dhiaibéiticigh.[9] Is saillte neamhsháithithe go príomha iad aigéid sailleacha an almóinn, le roinnt saillte sáithithe agus gan aon cholesterol. Chomh maith le saillte aigéid, tá na cothaithigh intuaslagtha sa saille vitimín E sna almóinní, go príomha mar an frithocsaídeoir cumhachtach alfa-tocopherol, agus vitimín A. Tá vitimíní B i láthair sna almóinní lena n-áirítear B1 (thiamin), B2 (riboflavin), B3 (niacin), B6 agus folate. Is foinse shaibhir potaisiam iad almóinní. Tá roinnt mianraí eile sna almóinní freisin, lena n-áirítear cailciam, iarann, maignéisiam, fosfar, sinc agus méid beag sóidiam.[14]
D’fhéadfadh airíonna aon phlanda amháin a bheith difriúil fiú ó phlanda eile den speiceas agus den ghéineolaíocht chéanna,[15] ag brath ar cathain a mheasann an planda go bhfuil sé aibí,[16] agus éagsúlachtaí i suíomhanna nó coinníollacha fáis.[17]
Cé go mbeidh na cothaithigh seo go léir i láthair in aon ola almóinn, d’fhéadfadh méid gach cothaithe a bheith éagsúil i méid áirithe ola. Déanann plandaí oiriúnú dá dtimpeallacht, mar sin planda a fhásann le níos mó nó níos lú gréine nó báisteach[18] d’fhéadfadh sé a bheith ag oiriúnú do na coinníollacha sin, ag táirgeadh próifílí cothaitheacha beagán difriúla.  

Ullmhúchán Ola Almóinn

Ní cnó ná torthaí teicniúil é an almóinn! Is drupe é, a bhaineann lena ilchiseanna. Is clúdach tiubh glas é hull seachtrach torthaí crann almóinn. Ta an endocarp taobh istigh den hull, atá crua agus adhmaid, cosúil le taobh amuigh an phéiste a fhaightear i gcousin, an peach. Ta an síol, nó almóinn, taobh istigh den endocarp.[19] Baintear ola almóinn as an síol aibí seo.  

Brúite Expeller agus Brúite Fuar

Tagraíonn brú expeller don phróiseas a bhriseann almóinní síos go mall faoi bhrú meicniúil, mar shampla dhá phláta miotail rothlach, chun na saillte a scaoileadh ón almóinn.[20] Ciallaíonn brú fuar go ndearnadh an ola a bhrú ag teocht íseal.[21] Cuireann an teocht íseal cosc ar an ola dul in olcas. Tá ola almóin a tháirgtear trí phróiseas brú fuar níos dorcha i dath ná próiseas scagtha, ach creidtear go bhfuil níos mó de na hairíonna a dhéanann an planda bunaidh luachmhar inti, lena n-áirítear a saillte mona-sháithithe agus a ghníomhaíocht frithmhiocróbach.[22] Ní bhíonn gá go minic le distilliú chun na hola riachtanacha d’almóin milis a bhaint toisc go bhfuil na hola chomh flúirseach sna síolta. Bíonn próiseas baile fiú go leor chun an ola a scaoileadh.[23]

Distilliú Eisíontas

Ciallaíonn distilliú uisce nó gaile a chur i dteagmháil le planda chun ábhar an phlanda a bhriseadh síos agus an ola riachtanach a scaoileadh. Fuarítear agus comhbhrúitear na hola le haghaidh bailiúcháin.[24] Úsáidtear distilliú chun amygdalin a bhaint as almóin searbh. Níl amygdalin i láthair san ola amh, mar sin ní oibreodh eisíontas expeller. Déantar an amygdalin trí ghníomh emulsin, comhdhéanamh den almón searbh a ghníomhachtar nuair atá uisce i láthair. Má tá an teocht ró-ard nuair a tharlaíonn an imoibriú seo, briseann an emulsin síos agus ní féidir an amygdalin a scaoileadh.

Nuair a tháirgtear amygdalin, scaoileann an almón searbh freisin an ola riachtanach benzaldehyde agus méid beag aigéad hidreacianach, ar a dtugtar aigéad prúsach freisin. Tá an aigéad prúsach seo, nó síaníd, an-tocsaineach ach is féidir é a bhaint trí dhistilliú breise, ag fágáil ola almóin searbh saor ó aigéad prúsach, ar a dtugtar freisin ola almóin searbh, FFPA. Tá níos lú amygdalin sna torthaí seo áfach, mar sin tá an blas níos lú láidir ná nuair a thógtar an amygdalin ó almóin searbh.[27]  

 

Úsáidí Leigheasacha don Ola Almóin

Úsáidí I Leigheas Ayurvedic Agus Síneach
Glactar le hola almóin go hinmheánach agus cuirtear i bhfeidhm go háitiúil é. I leigheas Síneach ársa agus leigheas Ayurvedic (córas leighis traidisiúnta na hIndia), úsáidtear ola almóin ar riochtaí craice tirime, lena n-áirítear eacmas agus psoriasis.
Meastar go bhfuil an almón i leigheas Ayurvedic mar an ceann is fearr de na cnónna go léir; in ann feabhas a chur ar bhunús an choirp a thacaíonn le hintleacht, spioradáltacht agus cumas atáirgthe. Meastar ag leigheas Síneach agus Ayurvedic araon go bhfuil almóin éifeachtach chun riochtaí na scamhóga a ghlanadh, amhail coinneáil scamhógach. Is féidir an ola a ghlacadh go hinmheánach nó a úsáid i massage chun spreagadh a thabhairt do ghlanadh na scamhóga.[28]
